Tollhouse chocolate chips if you grew up in the US, no idea what recipe is on the back of the Australian chocolate chip packages because I didn’t make those. I made Toll House Chocolate Chip Cookies (minus the nuts of course!) and they were lovely.…

I'm saddling up because Cowboy Cookies are on the baking menu today. The work crowd are big fans and passing them out on Fridays seems to spread some joy that carries through the day. The number one favorite seems to be chocolate chip, followed by snickerdoodles, the cowboy cookies, and shortbread. What cookie types do you like to bake?

I personally wasn't a huge fan of how these cookies turned out. I found that Bee's host grandma's recipe for cowboy recipes has more flavor, perhaps because it has relatively less flour. I also wasn't too happy with the texture I got, because when the bottom was ready the centers were still wet and gooey. I also needed to press them down into pucks to get them to spread nicely. Also felt like they needed more salt. Next time it would probably be good to make bee's recipe. Image in the food folder on desktop.

1c brown sugar, packed (220g)
1c granulated sugar (200g)
1c oil ((I always sub 1c/225g thick yogurt))
1c softened butter (227g)
2tsp vanilla extract
1 large egg
3¾c flour (450g)
1tsp salt
1tsp baking soda
1tsp cream of tartar
1c coconut flakes
1c rolled oats
1c rice krispies
1c chocolate chips
2c nuts (optional)
preheat oven to 350F
cream together sugars with butter
add in yogurt & cream
mix in egg & vanilla
in a separate bowl soft together flour, salt, baking powder, & cream of tartar
fold in drys & mix-ins into wet ingredients
take 1tb amounts of dough and space evenly apart on a greased baking sheet --- press dough a bit flat with a fork as they won't spread
bake for 12-15min
