A day off with NO plans but a long To Do list means I’m home to cook every meal. Morning açai bowl with cantaloupe and homemade cold brew for breakfast. Spinach salad with micro greens, radish, avocado, hemp seeds, teriyaki tofu, pomegranate seeds, and homemade raspberry, sesame, rice vinegar, and coconut aminos dressing and a fig shrub-spritzer for lunch. The mini-chopper blew up 4 years ago and I haven’t been cooking since. But The Kitchen God took pity as I was browsing the instant noodle section at Countdown when we had an early filming wrap. As I had pocket money to spend after months of not “working”, I had no hesitation in buying it, even before I saw the price*. So today I’m going to christen the MC by making my most favourite Chinese dip/sauce of spring onions & ginger in brown rice oil and (some) salt. This spring onion ginger mix is generously spread on roast duck/duck noodle soup but I won’t be too ambitious for now. I’m going to have it on soft boiled egg which has been drizzled with a light soy sauce. So another completely made up recipe! Could be fun. Missing some sweet stuff but am more anti sweetener than sugar so let’s see how this goes! I melted 1/3rd cup coconut oil and added same amount of keto friendly peanut butter, 2 cups dedicated coconut, 1/2tsp vanilla essence and 4 pieces of 70% melted dark chocolate (perhaps the caramel but was a cheat as on reflection fat and sugar content of chocolate is the same!) Mixed it all. Put in trays and have now put in freezer. I feel grateful that being so many kilometers away from our home country, we still get to feel surrounded by amazing people.
