Southern Food Heritage Day
Every year, Southern Food Heritage Day is celebrated on October 11. The Southern Food & Beverage Museum celebrates the culturally rich and delicious food of the Southern States in America. The cuisine deserves to be recognized and celebrated officially because it is a testament to American history and legacy. Southern food also represents the essence of America — the coming together of a variety of people from all over the world, each bringing with themselves their own ingredients and recipes to create a unique cuisine. Iced tea, pickled shrimps, and fried chicken are some of the most loved Southern foods throughout history. Along with the cuisine, the day also celebrates the racial and ethnic diversity in America.
History of Southern Food Heritage Day
Southern Food Heritage Day celebrates the best that Southern food and beverages have to offer. The South’s cuisine in America can be found in the historical regional culinary form of states generally south of the Mason-Dixon line dividing Pennsylvania and Delaware from Maryland, along the Ohio River, and extending west to southern Missouri, Oklahoma, and Texas. The most notable influences on Southern cuisine are African, English, Scottish, Irish, German, French and Native American.
The food of the American South displays a unique blend of cultures and culinary traditions. The Native Americans, Spanish, French, and British have contributed to the development of Southern food, with recipes and dishes from their own cultures. Food items such as squash, tomatoes, corn, as well as certain cooking practices such as deep pit barbecuing, were introduced by south-eastern Native American tribes such as the Caddo, Choctaw, and Seminole. Many foods derived from sugar, flour, milk, and eggs have European roots. Black-eyed peas, okra, rice, eggplant, sesame seed, sorghum, and melons, along with spices, are of African origin.
Southern food can be further divided into categories: ‘Soul food’ is heavily influenced by African cooking traditions that are full of greens and vegetables, rice, and nuts such as peanuts. Okra and collard greens are also considered Soul Food, along with thick stews. ‘Creole food’ has a French flair, while ‘Cajun cuisine’ reflects the culinary traditions of immigrants from Canada. ‘Lowcountry’ cuisine features a lot of seafood and rice, while the food of the Appalachians is mostly preserved meats and vegetables. Southern food is partial to corn, thanks to the Native American influence.

Darrel and his brother Marv work out in the family cornfields beyond Oasis Springs. It's hard work and the days are long, but the brothers look forward to every Sunday, when Papa uses the freshly ground cornmeal to bake a mouth-watering batch of golden brown Cornbread, served with Collard Greens.

There are a number of reasons why we all love National Fried Chicken Day. Of course, the main reason is that we have the perfect excuse to eat as much fried chicken as we want and we don’t have to feel guilty about it! It is also a dish whereby your manners can go out of the window.
There is no need to use a knife and fork when you are tucking into fried chicken! You can also get many different varieties of fried chicken to select from today. This includes everything from extra crispy to spicy fried chicken. Friend chicken can also be cooked in many different varieties of oil. This includes peanut oil, lard, vegetable shortening, and much more!
There are a lot of different variants of fried chicken that have been released. This includes hot chicken, which is common in the Tennessee area of Nashville. This is a variant that is pan-fried and is coated with a cayenne pepper and lard paste. Popcorn chicken has also become very popular. This can also be referred to as chicken bits. These are small, ball-shaped pieces of boneless chicken. They are battered and fried, resulting in a dish that looks like popcorn, hence the name! Or, what about Barberton chicken? This was created by immigrants from Serbia in Barberton, Ohio. the dish is now very popular throughout the state and it is sometimes called Serbian Fried Chicken.
Another reason why it is important to pay tribute on National Fried Chicken Day is that this dish had very humble beginnings. In fact, it acted as a way of empowering slaves. They were able to make their own independent flow of money by selling it. As chickens were the only animals that slaves were allowed to own and raise, this dish became very popular before the Civil War broke out.
History of National Fried Chicken Day
In order to really understand the history of this day, we need to understand the history of fried chicken. A lot of people are surprised to learn that this is a type of food that can be dated as far back as Roman Times. This is because there was a recipe for deep-fried chicken in Apicius, which was a Roman cookbook from the 4th century. The dish was called Pullum Frontonianum.
In terms of the expression “fried chicken” itself, this has been traced back to the 1830s. You will see this term used regularly throughout the cookbooks that were released in America during the 1860as and the 1870s. In the southern states of the United States, this dish can be traced back to precedents in West African and Scottish cuisine.
The fried chicken from West Africa involved the chicken being seasoned, battered, and then cooked in palm oil. The Scottish version involved the chicken being cooked in fat, however, it was not seasoned. As mentioned earlier, it was also a way for segregated and enslaved people to make money independently.
National Fried Chicken Day has been observed yearly for quite some time now. On this day, fried chicken is prepared and cooked in a number of different ways. Some fried chicken restaurants will have promotions running on this date. This includes the likes of KFC and Church’s Chicken. We have also seen that this date is celebrated across the world now as well.
For example, in Australia, in 2018, KFC gave people the chance to win free fried chicken for an entire year. In order to enter the contest, you were required to make a post on social media that stated the different reasons why you deserved to be the winner of this tasty prize! The person who won the prize was a 19-year-old who got the KFC logo tattooed on her foot. Her friend did the same as well, so let’s hope they shared the fried chicken!
How to celebrate National Fried Chicken Day
There are a lot of different ways that you can celebrate National Fried Chicken Day. Of course, heading to your favorite fried chicken restaurant is the perfect way to ensure that this day is a success. You can grab some of your friends and loved ones and tuck into your favorite bucket of chicken.
If you are feeling a little bit adventurous and you want to make sure that you enjoy the best of the best, you need to be the chef of the kitchen! Why not have a go at creating your own friend chicken creation? There are lots of great recipes on the Internet today, so you can easily find one to follow!
To add more pizzazz to the day, coat the legendary southern food in spices and yell “Yeehaw!” Cover the chicken with a mixture of cayenne pepper, garlic powder and paprika to put the spring back in the step. ጎመን / Gomen (Ethiopian collard greens)
This wot, or stew, consists of leafy greens that are cooked until tender with onion, garlic, ginger, tomato, and spices including korerima (Ethiopian false cardamom) and tikur azmud (nigella seeds). The result is a robust, flavorful side dish with an intensely aromatic finish.

Ingredients:
12oz (340g) collard greens, kale, or other bitter greens, washed
1/4 cup avocado or sunflower oil, or other neutral oil
1 red onion, chopped or grated
2 cloves garlic, chopped
1 1/2 tsp minced ginger
1 tomato, minced
1 tsp cumin seeds, toasted and ground
1 tsp coriander seeds, toasted and ground
1/2 tsp Ethiopian false cardamom (korerima / ኮረሪማ; Aframomum melegueta), toasted and ground
1 tsp nigella seeds (tikur azmud / ጥቁር አዝሙድ; Nigella sativa), toasted and ground
1 jalapeño, sliced
Salt to taste (about 3/4 tsp table salt)
Mitmita (ሚጥሚጣ), to taste (see notes at end)
For more information on Ethiopian herbs and spices, including suggested substitutions, see the notes at the end of my berbere recipe.
Some recipes include niter kibbeh (ንጥር ቅቤ) in Ethiopian vegetable dishes such as gomen; this isn't typical, but you may add a teaspoon or so at the end of the cooking time if you have some lying around!
Instructions:
1. If using collard greens, discard any yellow leaves. Bend the end of each stem backwards and peel away the string that emerges. If the stems are stiff, remove them; if they are tender, they may be minced and included in the dish. Dice greens (finer than I did in the picture!).

2. Heat onion, tomato, about a third of the garlic, and a pinch of salt in a dry pot on medium heat. Continue to cook, stirring and scraping the bottom of the pot often, until tomato is softened and onion is translucent.
Beginning the cooking process without oil is traditional in Ethiopia, but if you’re worried that they may stick, you may heat a little oil in the pot before adding the onion, tomato, and garlic.
3. Add oil and sauté, stirring occasionally, for about 10 minutes, until mixture is very soft and homogenous. Lower heat it ncessary.
4. Add ginger and another third of the garlic and sauté for about 30 seconds, until no longer raw-smelling.
5. Add ground spices and a couple tablespoons of water. Heat until simmering and add chopped greens.
6. Cover and cook, stirring occasionally, until tender (about 20-30 minutes).
7. Add salt to taste, jalepeño, and the remainder of the garlic and cook for another couple minutes.
Serve warm as a side with injera, misir wat, doro wat, etc.
For the mitmita:
Mitmita is a spicy seasoning mix that may be included in Ethiopian dishes, or served at the table as a condiment. Preparations differ, but recipes usually include chili, korerima, and cloves, and may also include cumin, green cardamom, allspice, black pepper, cinnamon, or garlic powder.
Ingredients:
20 dried bird's-eye chili peppers (piri piri)
2 Tbsp cumin seeds (optional)
1 Tbsp korerima seeds
1 Tbsp green cardamom pods (optional)
2 tsp whole cloves
1-inch piece Ceylon cinnamon (optional)
Bags of bird's-eye chili peppers can be purchased at a halal grocery store, where they will likely be a product of India or Thailand; they may not be labelled "bird's-eye," but look for the small size and curved shape.
Instructions:
Toast spices one at a time in a small dry skillet on medium heat until fragrant. Allow to cool completely and then grind in a spice mill or using a mortar and pestle. Store in an airtight jar in a cool, dry place.
