Darrel and his brother Marv work out in the family cornfields beyond Oasis Springs. It's hard work and the days are long, but the brothers look forward to every Sunday, when Papa uses the freshly ground cornmeal to bake a mouth-watering batch of golden brown Cornbread, served with Collard Greens.

Here's a step-by-step guide to help you cultivate the best-tasting greens:
1. Choose the Right Greens
Did you know there are more options for growing healthy greens than spinach or lettuce?
Consider your climate: Select greens that thrive in your local conditions. For example, arugula, spinach, and kale are hardy options for colder climates, while lettuce and basil prefer warmer temperatures.
Think about your tastes: Choose greens that you enjoy eating. Experiment with different varieties to discover your favorites.
2. Prepare Your Garden Bed
Variables in soil, ph, and seasonal consequences will impact your gardening results.
Sunlight: Ensure your garden bed receives at least six hours of direct sunlight per day.
Soil: Amend your soil with compost or well-rotted manure to improve its fertility and drainage.
pH: Test your soil pH and adjust it to between 6.0 and 7.0, as most greens prefer slightly acidic conditions.
3. Start Your Seeds or Seedlings
Growing from seed requires an earlier spring start whereas starting from seedlings allows a later planting and potentially an earlier harvest. If you start from seed, you can plant indoors in seedling pots and then transplant outdoors later on when conditions improve.
Timing: Plant seeds or seedlings directly in the garden bed after the last frost has passed.
Spacing: Follow the recommended spacing guidelines for each variety to allow for proper growth and air circulation.
Depth: Plant seeds at the appropriate depth according to the seed packet instructions.
4. Water Regularly
Vegetables react differently with inconsistent watering. Too much water promotes disease and rot while too little water results in low yields and weak plants.
Consistency: Water your greens consistently, especially during dry periods.
Avoid overwatering: Ensure your soil is well-draining to prevent root rot. A clay soil that retains moisture requires less water than a sandy-type soil that drains better.
5. Fertilize Regularly
Fertilizer and organic nutrients are important, but starting with a soil test is a great choice because it provides direction for what the garden needs more of (or less of).
6. Protect from Pests and Diseases
Unfortunately, despite our best efforts, pests are almost a certainty. You need to be vigilant with daily inspections and precautions to reduce damage to your crops.
Row covers: Use row covers to protect your greens from pests and harsh weather.
Beneficial insects: Attract beneficial insects like ladybugs and lacewings to help control pests.

7. Harvest at Peak Flavor
Greens like lettuce and collards are better as young leaves. With experience you will learn the perfect time to pick your items.
Timing: Harvest greens when they are young and tender for the best flavor.
Method: Use clean, sharp scissors or a knife to harvest the leaves.
Wash your vegetables before eating with cool water. This helps remove any dirt, bugs, or residue that may be present.
8. Successional Planting
Stagger planting by a week or two so all your greens don't ripen at the same time (week). With careful planning you can achieve three or four rounds of harvest during the growing season.

For a decade Soulfood from a Alabama family restaurant. Started over a decade selling out they house and three years ago opened this location. Just passed the border of Lincoln Park in Detroit on Fort Street. This place be crazy busy non stop take out orders. We ate inside, no table service just order at take out window on your right once you enter. Really great Soulfood hard to find, Detroit has plenty of places. I was totally blown away by the Southern Cornmeal Catfish OMG with Yams and Loaded Mashed Taters, Real Cornmeal Cornbread for the Win. She had the Baked Chicken so juicy tender with Collard Greens and Mac absolutely Wonderful. A great big menu and daily specials posted on the Facebook page. This spot named in Detroit top ten of Black Owned restaurant's by The Hungry Blackman.
