The PEACE SOUR Cocktail
Ingredients:
2 ounces (4 tablespoons) Midori Melon Liquor
½ ounce (1 tablespoon) Freshly squeezed lime juice
½ ounce (1 tablespoon) Homemade Sour Mix
2 ounces (4 tablespoons) Sprite or 7up
Ice, for serving (try clear ice)
For the garnish: Maraschino cherry and lime slice

Wine Cocktail of the Week:THE NEW YORK SOUR COCKTAILIngredients• 2 oz good quality whiskey, bourbon, or rye• 1 oz freshly squeezed lemon juice• 1 oz simple syrup*• 1/2 oz dry red wineInstructions 1. Combine the whiskey, lemon juice, and simple syrup into a cocktail shaker. 2. Fill your cocktail shaker with ice. Fill a cocktail glass with ice. 3. Shake your cocktail shaker until very cold, about 30 seconds. Pour over ice into your cocktail glass. 4. Slowly drizzle the red wine over the back of a small spoon, creating a red wine float. 5. Serve without a straw and enjoy!Recipe Notes*To make simple syrup, combine equal parts sugar and water and heat until the sugar is dissolved. Let cool completely.

Lava Flow Cocktail
Ingredients
4 oz coconut rum
4 oz light (white) rum
10 oz frozen strawberries
8 oz pineapple juice
8 oz cream of coconut
2 cups crushed ice
fresh pineapple wedges, for garnish
Instructions
In a blender, combine coconut rum, light rum, and strawberries. Blend to a puree. Transfer to a clean pitcher.
Clean and wash out blender. Add pineapple juice, cream of coconut, and crushed ice. Blend until smooth.
Divide strawberry rum puree among 4 serving classes. Slowly pour pineapple coconut mixture into the glass. The red mixture will evenly swirl with the white mixture.
Garnish with a pineapple wedge and serve immediately.
Serving Size
Serves four.

Valentine's Day Pink Lady Cocktail
This is a cocktail that I created for my Galentine’s Party. I wanted to create something that is both delicious and pretty to look at.
I served mine in an antique coupe glass for both presentation and to be sipped slowly.
The heart-shaped ice cubes are made of raspberry simple sugar. As you sip the drink, the ice melts and your drinks intensify with the flavor of raspberry….and it looks so pretty!
It pairs so nicely with mostly everything, but I served finger sandwiches and chocolate dipped cookies for a nice late afternoon get together.

Valentine’s Lady’s Cocktail
INGREDIENTS
Recipe with Egg Whites
1 1/2 ounces of gin
1/2-ounce applejack
1/2-ounce fresh lemon juice
1 egg white
2 teaspoons of grenadine
Put all ingredients in a shaker, and shake without ice and shake vigorously for 1 minute. This will activate the egg whites and help them froth while creating the cocktail. Add ice to your drink only when it is in your cocktail glass.
Recipe with Aquafaba
1 1/2 ounces of gin
1/2-ounce applejack
1/2-ounce fresh lemon juice
2 tablespoons aquafaba (drained chickpea juice)
2 teaspoons of grenadine
Place the aquafaba in a cocktail shaker , shake vigorously 20 or 30 seconds to aerate.
Add the rest of the ingredients along with ice. Shake vigorously for 1 minute.
Recipe for the heart shaped raspberry simple sugar ice cubes
3/4 cup of raspberries (6oz)
3/4 cup water
1 1/2 cups cleaned raspberries
In a small saucepan, add together the sugar, water, and raspberries. Over medium heat, bring to a simmer for about 3 minutes.
Reduce the temperature to low and simmer for another 5 minutes. Take the pan off the burner.
Let cool
Strain the mixture so that you only get the juice of the raspberries.
Once all the liquid is strained, place the liquid in an ice mold and freeze overnight.
You can keep the rest of the simple sugar for 1 week.
That’s it!
This is the mold that I used for my heart shaped ice cubes. They can be found on Amazon for $6.98. They are called “Chocolate Cookie Mold for Mother's Day, 10-Cavity Love Heart Shaped Silicone Baking Molds for Candy Mini Soap, Cake Bread Cupcake Cheesecake Muffin and Jello”.
I love to garnish all of my serveboards with a flower of some type. Here I added a few roses to keep with the theme of the day.
I made some dark chocolate heart shaped cookies and orange shortbread rounds and dipped them in chocolate.
I added heart shaped chocolate and marshmallows to add color to my plates.
I served egg, tuna, chicken salad, and cucumber finger sandwiches. Here is a just a few examples plated. I added English bisques and fruit to garnish the plate.

Spiced Pear Bourbon Cocktail
Makes one cocktail
Ingredients: 1 1/2 ounces bourbon 1 1/2 ounces pear purée (recipe below) 1/4 ounce ginger liqueur 1/4 ounce agave nectar 1/2 ounce freshly squeezed lemon juice 1/4 teaspoon allspice dram Soda water to taste 2-3 dashes Hella Bitters Aromatic Bitters (from the Craft Your Own Bitters Kit) Freshly cut thyme or sage sprigs for garnish
Directions: In a mixing tin or cocktail shaker, add the bourbon, pear purée, ginger liqueur, agave nectar, lemon juice, and allspice dram. 
Fill with ice, shake well, and strain into a cocktail glass, filled with fresh ice.
Add soda to taste and give 2-3 shakes of Hella Bitters Aromatic Bitters.
Gently smack the fresh herbs to release their aromatics and place them in the finished cocktail.
For the pear purée: Peel, core, and coarsely chop 3 pears. Purée the chopped pears and 2 ounces of lemon juice in a blender until smooth. Strain and press the pear mixture through a fine-mesh strainer or chinois, discarding the remaining solids. This mixture yields enough to make 4-5 cocktails.

📸bartourist • Egg white`s been annoying for me lately. These days people still look weird at You it with a hint of disgust when You tell them that this is a real egg white what You`re just pouring in a shaker. Then You have to explain that it`s pasteurized and nobody`s going to die. Again You have vegans, who roll their eyes on and ask for THIS cocktail but without the egg white. Storage of it is a pain. It goes off, pretty fast. When your drink gets warmer, it leaves a bad aftertaste and pretty much this, and many other reasons made me look for another solution. Yes, I know, I know… aquafaba has been around for a while now, egg white powders and many other things (some of them You can find here) but what turned out to work best for me is a mix of Cellulose, Maltodextrin and Xanthan. This combination not only gives You a nice, stable foam but also perfectly pretends a texture You`re used to in cocktails that call for egg white (thanks to gluey Xanthan). Try it out yourself! I use: 8-10g Celluzoon (Methylcellulose) – (this one already has Maltodextrin in it in an amount that I need) 1.5g Xanthan 250ml water I mix it all with a hand blender and pour into a storage bottle. Then it`s ready to use straight away! Just add 15-20ml of the solution to your cocktail and treat like egg white (hard shake it or whatever else You do to break the structure of it) You can always try to adjust the amount to your personal needs and thickness of the foam. Now let`s do some math (even though I have never been good at it)… *calculations are based on Swiss prices and currency. 1L of pasteurised egg white costs around 14-6CHF, which would give You the amount of 50 cocktails if your recipe calls for 20ml of egg white. Now 100g of Xanthan costs around 9.95 CHF on top of that 250g of Celluzoon is 24.5 CHF (34,45 CHF) To make 1L of my solution (the equivalent of 1L egg white) I use 50g of Ceullzoon and 5g Xanthan… meaning I get the same amount of foaming agent at a price of 5,5CHF (roughly). #egghite #nomoreggwhite #bartending #bartourist #sourcocktail #cocktailtechniques #cocktailblogger #cocktails #cocktail #article #cocktailingredient #bartenderslife #summercocktails #drinks (at Felix) https://www.instagram.com/p/ByfvW3Pojwe/?igshid=1fhuz7l3aj9vd
