📸bartourist • Egg white`s been annoying for me lately. These days people still look weird at You it with a hint of disgust when You tell them that this is a real egg white what You`re just pouring in a shaker. Then You have to explain that it`s pasteurized and nobody`s going to die. Again You have vegans, who roll their eyes on and ask for THIS cocktail but without the egg white. Storage of it is a pain. It goes off, pretty fast. When your drink gets warmer, it leaves a bad aftertaste and pretty much this, and many other reasons made me look for another solution. Yes, I know, I know… aquafaba has been around for a while now, egg white powders and many other things (some of them You can find here) but what turned out to work best for me is a mix of Cellulose, Maltodextrin and Xanthan. This combination not only gives You a nice, stable foam but also perfectly pretends a texture You`re used to in cocktails that call for egg white (thanks to gluey Xanthan). Try it out yourself! I use: 8-10g Celluzoon (Methylcellulose) – (this one already has Maltodextrin in it in an amount that I need) 1.5g Xanthan 250ml water I mix it all with a hand blender and pour into a storage bottle. Then it`s ready to use straight away! Just add 15-20ml of the solution to your cocktail and treat like egg white (hard shake it or whatever else You do to break the structure of it) You can always try to adjust the amount to your personal needs and thickness of the foam. Now let`s do some math (even though I have never been good at it)… *calculations are based on Swiss prices and currency. 1L of pasteurised egg white costs around 14-6CHF, which would give You the amount of 50 cocktails if your recipe calls for 20ml of egg white. Now 100g of Xanthan costs around 9.95 CHF on top of that 250g of Celluzoon is 24.5 CHF (34,45 CHF) To make 1L of my solution (the equivalent of 1L egg white) I use 50g of Ceullzoon and 5g Xanthan… meaning I get the same amount of foaming agent at a price of 5,5CHF (roughly). #egghite #nomoreggwhite #bartending #bartourist #sourcocktail #cocktailtechniques #cocktailblogger #cocktails #cocktail #article #cocktailingredient #bartenderslife #summercocktails #drinks (at Felix) https://www.instagram.com/p/ByfvW3Pojwe/?igshid=1fhuz7l3aj9vd
