chicken fajitas!! with homemade guacamole, sour cream, green onion, lettuce, cheese, and sautéed veggies

chicken: (dried off, thin-sliced, and then tossed in cayenne, chili flakes, paprika, black pepper, salt, lemon +lime juice, and 2tbs bbq sauce)

guacamole: (2 avacados, 1 half roma tomato, 1 quarter red onion, with lime juice, garlic powder or cloves, salt, and cayenne powder to taste)

sautéed veggies: (1 bell pepper, 1 quarter onion, 1 half roma tomato, salt to taste)

cheese: (1 pinch cheddar + 1 pinch mozzarella per serving)

sour cream: (thin layer spread on tortilla)

boneless chicken thighs marinated in fresh squeezed lime juice + paprika + pepper + onion powder, cooked in olive oil with cilantro and onions. these fajitas were banging! just wish i had bell peppers too. can't wait to make empanadas soon!!

This week’s meal prep: chicken fajitas and arroz con gandules! the rice kinda turned out undercooked, but I think that can be remedied upon reheat by adding a little water when microwaving, and then allowing it to sit to absorb the moisture. Sometimes we make mistakes, but there’s always a way to correct it! We move forward every day!
