This is a pretty typical monthly grocery shop for us. To get the most out of our Instacart subscription, I have to buy at least $35 at a time, or there's an extra fee.
Currently already in our pantry:
Peanut butter
Jam
Pancake/waffle mix
Tuna
Potatoes
Butter
Swiss cheese slices
Fajita size tortillas
A few canned soups
Canned tomatoes
Dry beans
Dry rice
A decent variety of sauces, spices, condiments
(mostly purchased from DollarTree, which is more like an every-other-month shop)
I'm hoping the mild weather will let some of our collards start growing early, so I can use those instead of buying cabbage. Fingers crossed for some early chives too, because they make potatoes or ramen so much better! I didn't put in cucumbers or tomatoes last year, but I'm hoping to do that this year, but that's awhile off still.
So what do we do with this?
Basically it's a lot of mixing and matching.
We don't have a stove or oven, but we do have:
Microwave
Toaster oven
Small electric grill
Mini electric skillet
Mini waffle maker
Small slow cooker
Sometimes we can borrow a pressure cooker, air fryer, or larger slow cooker
We use ramen noodles without the flavor pack as the base for a lot of things. Especially because we don't have a stove, ramen noodles are far more microwave-friendly than other types of noodles or pasta, especially for the 11yo who will not monitor for boil-over 😒.
So we do tuna ramen, ramen with egg, I cook the cabbage and mushrooms in our mini electric skillet, just a few servings at a time, or do a larger batch in the slow cooker. Add that cabbage and mushrooms and the frozen peas to anything for flavor and texture.
We do "ramen spaghetti" and use canned tomatoes with seasoning. Sometimes I fry bologna in the little skillet to add to it like pancetta. Or I use an egg, cheese, and balogna to make a poor man's carbonara.
The tortillas become pizzas by adding canned tomatoes, cheese, and bacon bits. Pop it in the toaster oven and it's a perfect one-serving thin crust.
Rice or potatoes can also be the base for lots of good meals. Cabbage plus potatoes plus bologna or bacon bits can go in the slow cooker for a few hours to become something adjacent to colcannon.
I often use rice to bulk up leftovers or add to canned soup to stretch it into multiple meals.
Using some ham boullion, I can make a bean & cabbage soup. Use chicken boullion to make rice & mushroom soup.
Beans & cheese on a tortilla is easy to grab and go. We add seasonings to the canned tomatoes to make salsa.
As a treat we sometimes get tortilla chips for soccer days so we can make nachos with the beans, cheese, canned tomatoes. Sometimes I get canned chili for an easy bump in protein. Kiddo thinks watching soccer should always involve nachos for some reason 😂
We also do a variety of sandwiches, wraps, quesadillas with the bread or tortillas. Egg sandwiches, tuna sandwiches, grilled cheese, pb&j, bologna & cheese. During the summer sometimes we swap hot dogs for the bologna so we can cook them over our outdoor fire pit. We use bread or tortillas instead of buns.
We got the most adorable little waffle maker which makes mini waffles. And we've been all over Pinterest for waffle ideas. You can make an incredibly crispy egg in the waffle maker, with cheese & bacon if you want. Or dessert waffles with a bit of cinnamon and sugar. Or spread pb&j on for extra protein. You can also do lovely crispy hashbrown potatoes in the waffle maker, with or without cheese.

I skipped lunch cause I was gutting pumpkins to roast the seeds, so here’s my accidental one meal for the day lol White people taco night!
Recipes below!
Pork tacos/fajitas:
About 50 g of bell pepper: 10 cal
About 50 g of red onion: 20 cal
105 g of pork tenderloin: 113 cal
57g avocado: 92 cal
Olive Oil Spray: 50 cal
14g Colby Jack Cheese: 55 cal
La Banderita carb counter small shells: 30 cal per shell (3 for 90 cal)
1. Slice your bell pepper and onion into thin pieces and chop in half to have long strips. Cook in pan with olive oil spray to preferred doneness. I tend to cook the bell pepper first for it to be softer before adding the onion so they’re both about the same texture when done.
2. Slice avocado up and set aside.
3. Slice pork into thin slices and season to your liking. I used chili powder, paprika, oregano, garlic powder, onion powder, cumin, salt, and pepper! Cook in pan with a little more olive oil spray.
4. Place pork and vegetables on taco shells. Top with cheese and avocado!
Total: 430
Chicken Quesadilla:
Canned Chicken: 110 cal for can, but I used less than a can so I called it 90 cal
14 g Colby Jack Cheese: 55 cal
La Banderita carb counter small shells: 30 cal per shell (2 for 60 cal)
1. Drain water from canned chicken. Break up and place on one tortilla shell. Top with cheese.
2. Place second tortilla on top. Optionally, you can put chicken on both shells and top with cheese and simply fold over.
3. You can either heat this in the oven for a few minutes to give the shells a bit more crisp. If you’re short on time or just want something quick, you can also microwave it for 45 seconds to a minute.
Total Calories: 205 to 225 depending on how much chicken you use!

MACK. im being dead serious and i must know. Since you’re the manager at Chipotle have you ever had a Karen demand for you. Is there a story?? Please this is plaguing me.
have i ever??? you dont even have to be a manager to deal with cunts every day when you work in food service/retail. i was 17 working my first job at tj maxx and i had to deal with them all the time even then. but i guess i can tell you a story. two days ago one of the crew members came up to me and told me that there was a woman on the phone who wanted to speak to a manager and she said 'she sounds livid' so i was like oh great. i answered the phone and she basically told me she was 20 minutes away and that her quesadilla had no cheese on it and the chicken was extremely dry. and first of all i highly doubt there was no cheese on it because thats like. unless you have the brain fart of all time its just how you make a quesadilla. its muscle memory. its the main component of a quesadilla its what MAKES it what it is. and everyone who was there at the time has been working there for years so im just like not really convinced that there was no cheese. but whatever, its possible that it happened. she said she was also already 20 minutes away so she couldnt come back. and i just said like im really sorry to hear that, because its a mobile order i can give you the phone number to call to get a refund. bc thats just the policy. and she was like 'i dont have time to call for a refund i just want you to know that it was horrible' and i was like. ok im sorry. and also like i hate talking on the phone but i especially hate talking on the phone when there is not POINT to the conversation. because in that case i dont know how to END the conversation. she didnt want anything from me. i offered what i could and she didnt want it so. where do you go from there. when she said 'i just wanted you to know it was horrible' i was like 'again im really sorry about that and just making sure you dont want the refund?' and she hung up on me. LOLLLL. like whatever. i have a million other stories tbh. i get new ones every day because the general public are fucking insane and rude and entitled. and bitching about them with my coworkers is a highlight of every day.
btw psa if you want the fucking idiotic tiktok viral quesadilla dont tell them youre there because of tiktok or show them a video of someone on tiktok eating it just ask for a steak quesadilla with fajitas. and be prepared for them to be annoyed with you.

A homemade soup with some crusty bread.
My usual from my favorite Mexican place (fajita quesadilla and a large order of chips and salsa). Give me a bucket of their fucking salsa! It’s so good.
A big turkey sandwich on some good bread (the bread is key!) with cheese, lettuce, mustard, mayo. Chips or sliced apples/strawberries on the side.
A huge salad with diced chicken, red onions, cheese, croutons and caesar dressing.

I have a few !
More a tip than a recipe but you can just fold up a ham and cheese tortilla and stick it fold-side-up in the toaster. Just dont overfill it. Boom quesadilla
(Make ahead) Refried beans! Easy to make ahead and you basically have a ready-to-go source of protein for the rest of the week. Spread it on a warmed tortilla with cheese, and if you couple that with a fried egg and jarred salsa you have huevos rancheros
(Make ahead) A big batch of bone broth. You dont need anything fancy, just throw some scraps and bones (butcheries often just give them to you free of charge or dirt cheap), a bundle of vegetables (no chopping required, just remove onion skin if you use it), with salt and vinegar and a LOT of water in a huge pot and let it go for like half a day, add water here and there. Strain it (this takes some effort), divide into containers and stick in the freezer. Boom, delicious nutritious soup base ready for whenever you have a cold.
Tortilla pizza! Jarred tomato sauce, cheese and ham and whatever else you have on hand
Big batch of rice. As a side, as a main, leftover rice is a godsend when you wanna make something but dont wanna wait for a long time for it to cook. Doesnt keep for a super long time, but youll probably eat it fast.
Tuna salad, especially good for summer. Boil some pasta, make a mayo and sour cream based sauce and combine them with some tomato and drainee canned tuna (or shredded chicken). Best served cold but also delicious warm
My favorite instant soup. Especially good for an upset stomach. All you need is dashi powder, soy sauce, mirin, salt and sugar, and noodle. I also like to put in scallions and sriracha :)
Mac and cheese is super easy to make even with roux, but my favoritest has to be the only good mug mac cheese ive ever had:
(NOTE!! the "careful" means that during the 2nd microwaving the liquid will start to bubble up, so keep an eye on it. When that happens just stop the microwave and let it settle back down, then continue.)
And in general, cannot overstate the convenience of using a high energy day to make a big thing of soup, or sauce, or muffins, or stuff like lasagna and fajitas and then freezing it. I'm in charge of cooking in my household during the summer and those are lifesavers when im short on time
meal ideas!
low energy ("do not ask me to do any prep work at all, so help me god")
mozzerella cheese wrapped in pepperoni ("pizza tacos"!)
hummus and pretzels or naan (putting the naan in the microwave for like 10 seconds...heavenly)
canned chili (with shredded cheese and sour cream if you have it! boom done!)
instant miso soup (warm and lovely!)
cheese and cured meat, olives, canned fish, crackers, dried fruit, or whatever easy "charcuterie" type items you like
alternate bites of apple and spoonfulls of peanut butter (mixing honey or chocolate chips to the peanut butter is my favorite)
a "deconstructed sandwich": bites of lunch meat, pickles, cheese, cherry tomato, etc (I love roast beef and white cheddar for this)
yogurt and granola or fruit
medium energy ("I'll boil water but don't ask me to chop shit")
boiled eggs and fresh veggies (put a little salt on top of the eggs for pizzaz!)
buttered noodles (take it up to level 10 and add roasted garlic; takes 30 mins in an oven, only one swoop of the knife required)
baked potato with toppings (I like cheese, bacon, broccoli, green onion, and sour cream)
quesadilla (add some canned beans, cilantro, or avocado!)
pot roast (requires a lot of time but not a lot of actual work. I love it with peas!)
cuban sandwich (bread, swiss, pickle, mustard, ham... my favorite thing to panini-ify by far)
pan-fried tofu with scallion sauce (this sauce goes well with everything and tofu is no exception)
pancakes or waffles! (I love mine with jam)
ham, pickle, and cream cheese roll-ups
fried eggs (with toast and lots of butter...so comforting)
fruit smoothie (bananas, frozen strawberries, yogurt...or whatever!)
I hate salad but could write essays on this copycat olive garden salad (throw it in a bowl! chopping required if you use onion)
spaghetti (controversial maybe but angel hair > spaghetti noodles)
pasta salad (olives broccoli fresh mozerella... those little mini pepperonis... yeah)
high energy ("I don't mind chopping some things up!")
stuffed shells with spinach
chicken and roasted garlic (oh my god.....one of my all time favorites)
beef tacos (I like mine with cilantro and onion, and when I'm feeling especially high energy I love a tomatillo salsa)
chicken alfredo
tom kha gai (a thai soup and my absolute favorite! you just need access to galangal)
lasagna! (freezes well and then boom! low energy meal for later)
pad thai! (not as hard as you'd think, as long as you have access to tamarind paste!)
potstickers! (this is a lovely group activity if you want to cook with housemates!)
rice and beans
bang bang shrimp (ogughfhgfuh I love it. you can also do bang bang tofu!)
minestrone soup (so many nice veggies!)
fried rice (put whatever you have on hand in there! broccoli, peas, carrot, and beef is my favorite combo)
broccoli cheddar soup
spring rolls and peanut sauce
skewers (such as beef, onion, zucchini, bell pepper... you don't need a grill, oven works!)
roasted turkey with garlic parmesean asparagus
pork chop with mashed potatoes
other tips:
whenever you think of a meal you'd like to make, take 3 seconds to google search it, take a screenshot of the image results, and put it in a "food ideas" folder. instant visual menu!
