haven't been able to cook something rlly good or eat my favorite foods in the way that I like them recently and it's doing horrors for my mental health. I would honestly settle for Kraft mac n cheese and dino nuggies rn (I don't like Kraft brand mac n cheese and much prefer homemade but that's ridiculously expensive and dino nuggies are fine I guess but I prefer something crisper like popcorn chicken or McDonald's nuggets)

As an omnivore who likes vegan and vegetarian cooking I think the mistake a lot of people make when trying to convince meat eaters to go plant based is trying to convince them that something you’ve got will replace meat for them.
I like vegan nuggets and real chicken nuggets for different reasons. They taste different. They only taste identical to you because you haven’t eaten meat for five years.
When cooking for myself I only eat meat maybe like three times a week because vegetarian cooking is often cheaper and it tastes good.
Like just give people the actual recipes you use that aren’t pasta. Every time you ask what to eat on a meatless day people are like. Pasta. I don’t want pasta every day.
Point out the foods people already eat that are vegetarian. Like sweet potato fries, veggie chow mein, grilled mushrooms, mashed potatoes, black bean enchiladas, peanut butter sandwiches. Tell people what you microwave when you’re drunk at 3am. Show people that vegetables are so good they’ll want them in their diet.
Also some people are just never gonna go vegan. They’re just not. I’m certainly not, and I love vegan food. But since I’ve fallen in love with vegetarian cooking I eat meat much less and I’m much more careful about picking the meat I do eat. Doesn’t that align with a lot of your goals?
Impossible burger doesn’t taste like meat. But you know what tastes really good? A mushroom fajita taco. Falafel. Potato pancakes with applesauce. Smoky vegan collared greens. Hot potato salad with herbs. Palak paneer with rice. Tofu Pad Thai with extra peanuts. Some of my favorite foods of all time, and I’m a dirty rotten meat eater. Use THAT to get your foot in the door. And be more accepting of some half-assed victories. I’m on your side for the most part, believe it or not. But stop trying to claim certain things are just like meat. You and I both know you don’t plan most of your weeknight dinners around meat substitutes.

No spoons for cooking or dishes? That's okay, find yourself a ricecooker. it will love you more than your own mother.
Put rice in pot. Put water in pot. Rinse rice. Put as much water as rice in pot. Add sauce. What kind of sauce? What are you a cop? Add a good sauce, soy sauce, BBQ sauce, worschester sauce, enchilada sauce, whatever you please. Add veggies, diced veggies, frozen veggies, fresh veggies, whatever veggies you got on hand. Yes, you need to add veggies, or die of scurvy. Add protein, fish, chicken, red meat, tofu, whatever, beans maybe. Just stick it in there on top of the rice and veggies. Didn't take the meat out of the freezer? It works with frozen meat. You're welcome. Toss some spices in there maybe? Idk, you know what you like.
Put pot in rice cooker. Set to cook. Do whatever it is you do with a spare 20 minutes. Chores. Sex. Floor time. Homework. Post about one pot meals on Tumblr. I'm not your mom. Oh hey. The rice cooker beeped.
Eat it out of the pot. You have a fork and a nonstick pot to rinse. But also, sustenance and nutrition. That you could feasibly feed to other people without feeling like you're feeding them depression meals. AND most importantly, frozen veggies and frozen meat and rice are all things that you can stash and stock in your house for relatively cheap.
Of all the appliances you could possibly have in a modern kitchen a rice cooker/ pressure cooker is the one you can get the most mileage out of. Congratulations on your infinitely customizable balanced and nutritional meal.

I’ve been snapping a lot of food pics lately and doing nothing with them, so.. I guess this is some of what I’ve been eating lately? Every weekend we’ve been doing some serious grilling/smoking — ask my husband how serious his all-day smoke sessions are. He has a one track mind when he’s got a piece of meat smoking on the grill. 😅
I will say though.. it’s delicious. Some of what’s pictured:
Tuna sandwiches with fruit/veg/hummus/tzatziki
Egg sandwich with the best green sauce on the planet — green sauce is becoming a staple in our house
Prep for a chuck roast smoke
Peruvian spatchcock chicken with aforementioned green sauce, rice, cucumber and avocado salad
Meatballs, because of course
Egg sandwich — again.. I eat many an egg sandwich
Slow cooker chicken enchiladas
Charcuterie
I tried figs for the first time this past weekend! I love my dad for being extra when it comes to a charcuterie board. He was willing to put in some effort to find figs and it was worth it.

I need to start getting more whole chickens. Roast one up, strip the meat, use it for enchiladas or pesto or something, and collect the carcasses for broth.
Probably 6 months from now I'll have a camping trip where they do stone soup. They use like 3 gallons of water. I can probably condense it down under a gallon to save freezer space but it needs to have enough stuff in it to be rich and flavorful even after it's watered down.
Herbs are a must, probably some salt, I also want to add some roasted garlic. I probably won't worry about onions since someone will definitely provide onions for the final soup.

A waitress asks me, "¿Le gustaría papas fritas o papas al horno?" Shouldn't it be "gustarían"? Or is "le gustaría" enough of an idiom to stand as-is? Or, wait, shouldn't it be "papa al horno"? I'm not getting multiple baked potatoes. And if it IS papas/papa, should it be "a" or "an"? Who does it match with?
This is a bit weird to explain, and honestly I'm not sure if I do a great job explaining it because it's situational
I think it's singular because it's kind of like "(to eat/have)" is implied so it's almost like there's an invisible verb there. And, sometimes people talk about dishes of food almost like collective nouns [singular, but talking about a group of things]
You can say me gusta carnitas and it doesn't sound off to me, almost like the dish itself is plural but treated as singular
But this reads differently from me gusta el postre "I like dessert"... or no me gusta el chocolate "I don't like chocolate (the ingredient)" and no me gustan los chocolates "I don't like chocolates [like a box of chocolates]"

And in addition to being treated as singular, many dishes show up without an article [el, los, la, las] unless you're talking about a specific ingredient or component of it
As in, sometimes people will say something like ¿te gusta gambas al ajillo? "do you like garlic shrimp?", or something like ¿te gusta albóndigas de pollo? which is "do you like chicken meatballs?"
...... as opposed to te gustan las gambas "you like shrimp" or te gustan las albóndigas "you like meatballs"; I think this can sound a bit different almost like "what are your feelings about it?" not "do you want it?"
It's sort of like "do you like/how do you feel about" vs. "would you like (to eat)"
Or it's possible it's a kind of informal Spanish. It's something I've heard and not really paid much attention to until you said something lol

Also (la/una) papa / patata al horno is possibly correct as "baked potato"; and papas/patatas al horno can be "baked potatoes" or "oven-roasted potatoes", which implies it could be either
I feel like in a restaurant I'm used to seeing the option as like: puré de papas/patatas, papas/patatas fritas, o papas/patatas al horno - "mashed potatoes, French fries, or a baked potato"
...And "mashed potatoes" is only singular because el puré "puree / mashed" is a singular thing
It's hard to say, sometimes dishes are in plural even if it's not multiple
You'll see that with tacos like tacos al pastor or enchiladas or zanahorias asadas "roast carrots" or gambas al ajillo etc. It's weird some dishes are written in plural but almost treated like singular
And others - pollo "chicken", bistec "steak", carne "meat", milanesa "breaded cutlet" etc are treated as singular
...And anything that's like sopa "soup" or caldo "broth/soup", ensalada "salad", or things like pastel/tarta "cake/pie" are also treated as singular, as well as anything "mashed" comes out like puré
........
In other words I think it would be possible to say no me gusta gambas al ajillo porque no me gustan las gambas and it's like "I don't like gambas al ajillo because I don't like shrimp/prawns"
