The day of Chhath Puja begins exactly like any other pooja day when we bring home puja thali items. While we know the general rituals of Chhath Pooja, this article mainly focuses on detail. So, if you are an enthusiast, we recommend you read till the end. 
Chhath Puja Festivity Rituals Of Each Day
Day 1
The first day is popularly known as Nahay Khay which is the day of body purification. Parvaitin begins the devotion by taking a bath in holy water. After purifying the body and soul, they cook bottled gourd as well as rice along with split chickpeas. One can only use ghee and rock salt here. Furthermore, they can break their fast after eating this food. 
Day 2 
Being the second day of the joyous celebration, Kharna is the day of fasting the whole day. However, Parvatin can consume food only after sunset. Cooking prasad and taking immense care of it, is important. Moreover, for the preparation of prasad, one must only choose organic ingredients. People helping the worshipper for preparing prasad have to bathe and clean themselves. After sunset, the Parvaitin offers prasad to Chhath Maiyya. 
Day 3 
On Arghya day, the parvatin prepares special cookies called Thekua. This amazing Prasad has wheat flour, jaggery, ghee, and sugar in it. Additionally, rice laddoos, or “Kasaar” is made up of jaggery, ghee, and rice flour. In the evening, the Parvatin goes to the riverbank and offers Arghya to the evening sun. On this day, Parvatin performs parikrama by taking soop and other premium puja samagri in their hand. All rituals should be done facing the Sun.
Day 4 
Finally, this day marks the end of the Chhath festival. On this day, Parvatin offers Arghya to the rising Sun. On this day, worshippers seek blessings for more richness as well as prosperity. Further, they distribute thekua and other prasad to poor people. 
The main prasad of Chhath Puja includes two rice puddings along with ghee and pure milk. One rice pudding has jaggery while the other does not. Consuming Prasad and distributing it among all family members is highly auspicious. During the fast, the Parvatin has to take care of a lot of things. For instance, they can only sleep on the floor and their mind must be free from all distractions.

Chhath Puja 2021: Soon after Diwali, the market gets ready for Chhath Puja The festival of Chhath is celebrated every year six days after Diwali. During the four-day festival, special worship of Lord Surya is done. This time Chhath Mahaparv is starting from 8th November and will continue till 11th November. Chhath Mahaparv is especially celebrated in Bihar, Uttar Pradesh and Jharkhand. Know everything related to the four-day long Chhath festival, dates of Chhath Puja, auspicious time, timing of sunrise and sunset, significance and day-wise schedule:
Chhath Puja 2021 Day 1: Nahay KhayThe first day of Chhath Puja begins with Nahay Khay. On this day, the devotees take bath in holy water, wear new clothes and eat delicious vegetarian food. Other members of the family consume food only after the women who have been fasting eat their meal.  This time Nahay Khay is falling on 8th November. On this day, the sunrise will be at 6.42 am in the morning and the sunset will be at 5:27 pm in the evening.
Chhath Puja 2021 Day 2: KharnaThe second day of Chhath Puja is called Kharna. Devotees who observe Chhath on this day fast for the whole day and make Kheer and roti in the evening. This time Kharna will be celebrated on 9th November. On the evening of Kharna, offerings of roti and jaggery kheer are made. Along with this, rice, milk dishes, thekua are also made in the prasad and worshiped with fruits and vegetables. On this day, the sunrise will be at 6.40 am in the morning and the sunset will be at 5:40 pm in the evening.
Chhath Puja 2021 Day 3: Surya ShashthArghya is offered to the setting sun in the evening on the third day of Chhath Mahaparva. This time the evening arghya will be given on November 10. On this day Chhath Vratis observe a Nirjala fast for the whole day and offer Arghya to the setting sun in the evening. There is a tradition of offering Arghya to the Sun in a river or pond on this day. Many times people also follow the tradition of offering Arghya to the sun by filling water in the pit in the park located in front of their house.
Chhath Puja 2021 Day 4: Usha ArghyaArghya is offered to the rising sun on the fourth day of Chhath festival. After offering Arghya, people sit on the ghat and say their prayers, then Prasad is given to the people around. This time Arghya will be offered to the rising sun on November 11.

Then Maharishi Kashyap performed the Putreshti Yagya and gave prasad to his wife, due to which the queen did concieve, but a dead son was born.King Priyavand took that dead son to the crematorium. Priyavand also tried to give up his life in the separation of his son. At the same time, Shashti Devi arrived there. Seeing her, the king placed his dead son in the ground and with folded hands to the mother asking for her blessings for him and his dead son. Goddess Shashti picked up the child and brought and brought him to life. After this, the Goddess asked Priyanvand to worship her and if pleased, she will increase the age of his son. The king then went home and performed rituals to please Shashthi Devi with great enthusiasm. The day on which this incident happened and the worship performed by the king was the Shashthi Tithi of Shukla Paksha of Kartik month. Due to which the fast of Shashti Devi i.e. Chhath Devi started since then.

To call the delicious dry sweet dish Thekua as the cookie from Bihar is quite appropriate, but the Thekua is so much more than that. Also known as Thekariis, Thokwa, Thikari and Kajuria, this sweet Thekua recipe has been popular for centuries across the regions of eastern UP, Jharkhand, and the Madhesh community from Nepal and is also a prasad in the Chhath puja. This tasty, deep-fried Bihari thekua is enjoyed by adults and kids alike.

Thekua | Baked Thekua Recipe
Thekua | Baked Thekua Recipe, is a popular festive recipe from the states of Bihar and Jharkhand. 
Indian Cuisine is a treasure of recipes and the more we dig into a particular cuisine, the more we come across traditional recipes. I am part of a Facebook Group called ‘Recipe Swap Challenge’. Each participating member is paired with another member and we have to cook from our pair’s blog. This month, I am paired with Poonam Bachhav, who blogs at ‘Annapurna‘. I chose to make this Thekua | Baked Thekua Recipe, which is a popular snack as well as a festival recipe from the states of Bihar and Jharkhand.
Poonam has a wide variety of traditional recipes from the Northern and Central part of India and her blog was a treasure for me to explore some very new dishes. I chose to make this Thekua | Baked Thekua Recipe from her blog as this was an entirely new recipe for me and also the ingredients are something that I love. It is a great snack recipe and very quick and easy to make.
I learned that the Thekua is made as a prasad / offering for the Chhath Puja, Saraswathi Puja and also on other festive occasions. Traditionally, these Thekuas are deep fried, but Poonam had baked them instead. That caught my eye right away and I was even more tempted to make them. What could be a more apt time for making these Thekua other than this Navartri time and hence I started on the recipe right away.
I followed Poonam’s recipe as is except increased the sweetness a little bit as we like slightly sweeter cookies. The Thekua is flavored with cardamom, fennel and ghee and it is just so aromatic. Do not substitute the ghee with butter or any other fat as it will not be as flavorful as this one.
Preparation time – 10 minutes Baking time – 12 to 15 minutes Difficulty level – Easy Recipe adapted from – Annapurna
Ingredients to make Thekua | Baked Thekua Recipe – Makes 12
Whole wheat flour – 1 cup
Fine semolina / Rava / Sooji – 2 TBSP
Baking powder – 1/2 tsp (optional)
Jaggery / Brown sugar – 1/3 cup
Ghee / clarified butter – 3 TBSP
Cardamom powder – 1/2 tsp
Fennel seeds – 1 tsp (crushed)
Procedure to make Thekua | Baked Thekua Recipe –
I used brown sugar to make the Thekua. Measure the brown sugar in a small pan and add 3 TBSP of water to it. Heat it on low flame to melt the sugar and then turn off the flame and keep it aside to cool.
In a medium bowl, add the flour, semolina, crushed fennel seeds, cardamom powder and baking powder.
Add the ghee to the flour and ix it well until it resembles the texture of bread crumbs.
Now slowly add the brown sugar syrup to the flour mixture and knead to from a stiff dough.
Preheat the oven to 350 F and line a baking pan with parchment.
Divide the dough into 12 equal pieces and roll each piece into a ball and then flatten it with your palm. Place the shaped dough on the prepared baking pan.
If you like, using a toothpick, you can decorate the Thekua with some patterns. I just drew some lines and dots to make it pretty.
Bake for 12 to 15 minutes, or until the Thekua turn light brown. They will be still a little soft when you take them out of the oven but will harden as it cools down.
Cool the Thekua entirely before storing them in an air tight container.
Enjoy as a snack or with evening tea.

The ‘Mahaparav’ of Bihar ‘Chhath Puja’ is also celebrated in our state of Odisha.  Embracing the culture and celebrations of northern India with warmth and love like that of a family, the temple city is decked up in the hues of Bihar this week. The Bihari community in Bhubaneswar celebrated Chhath Puja today at the Kuakhai river bank and at other water bodies too. Chhath puja; the biggest festival of Bihar, celebrates and worships the Sun God and his wife, Usha often referred to as Chhathi Maiya or Rana Mai, for bestowing blessings in the lives of everyone and requesting them to grant their wishes. The eldest woman of the family usually is the Bartin, i.e., the one who keeps a fast and performs all rituals. It is a four-day festival; day one is Nahai khai which falls four days after Deepawali where the women take holy bath in the river/pond nearby and have pure vegetarian food without salt, onion, and garlic. Day 2 is Kharna, where these women are on fasting the entire day and have Kheer and Roti in the evening after offering it to the Moon and Goddess Ganga. Day 3 is the main festival day, also called Sandhya Arghya which is performed on Karthik Shukla Shashthi. Women wake up early morning and prepare all the prasad that is to be offered and in the evening, women head to the river/pond dressed in the traditional attire of Bihar. The family members follow her, holding the bamboo basket, often called soop, with fruits and other offerings. The river/pond bank is decorated with flowers and banana stems and leaves; women stand in the water with the basket in their hands facing the sun and the male members of the family offer water, one of by one, on those baskets. Similar rituals are followed the next day, on Usha Arghya, which is the last day, where the offering is done at dawn. Women break their fast this day and distribute the prasad to all family members and neighbors. Main offerings, or Prasad, in this festival, is thekua, kheer, laddoo made of rice grit, and fruits like sugarcane, coconut, apple, bananas, among other things. The Odisha Sun Times Bureau : 26th.
