Growing up I always enjoyed eating cauliflower and broccoli with cheese sauce. My brother and I pretended to be giraffes eating the broccoli "trees" and we loved the cauliflower just as much. Our mother always cooked the whole vegetable, including the stem and leaves. When I was older I noticed that a lot of people throw everything out but the actual florets. It literally hurt when I saw the beautiful stems and leaves disappear in the bin. So much waste! From the stems you could make soup or you could julienne the stems and use them in a salad or stir-fry. The nutritional value of the stems is just as high as in the florets. In fact, cauliflower leaves have an even higher calcium content than the other parts I love the c.leaves steamed or boiled with whstever I'm having that dau, but you could also separate them and drizzle them with oil and salt and bake them in the oven- voila! Delicious crispy chips. The possibilities, quite frankly are endless. There is a Bengali recipe that is very popular and it only uses the leaves of cauliflower. It's called FULKOPI PATA BATA- cauliflower leave paste. I have not made this yet, but there are some leaves waiting for me in the fridge. I simply have to try this. No need to waste any nutritious, valuable vegetables. Btw, there are other vegetables that have very tasty and nutritious leaves. There are Beet leaves Celery leaves Broccoli leaves Carrot greens Fennel fonds etc..... As you can see, there are endless new recipes and flavours to try. What about you?
