life pro tip: buy miniature cookware. it saves space and a lot of mini appliances come with little recipe books as well. if it's too small to cook a filling meal in one go, simply prep your ingredients so you can make more servings more quickly. i.e. mini waffle maker makes too-tiny waffles?? you will have excess batter just make more. tiny skillet makes too-small portions?? set your chicken and spices or whatever you have aside and make more servings. plus your next serving is freshly cooked oooo. mini baking stuff?? make another batch babyyyy that's half of baking anyway

as someone who only rarely has enough energy to scrape themselves together enough to cook a decent meal, a shit load of ground beef thrown in a pan with whatever vegetable-ish item happens to be available at the time feels v underrated

Rosemary garlic cheddar bread. This week has been stressful so I took my AuADHD self to the kitchen and learned a new skill. Let's me feel in control for a while.
I used this recipe:

And added a cup of shredded cheddar cheese. Threw it all in the bread machine on the dough cycle and once it was proofed I floured and shaped it and threw it in the dutch oven. 30 min at 450 with the lid on. Once the lid came off I brushed the top with olive oil, dusted it with pink salt and Parm and baked for another 10 and then when it was done I brushed the whole loaf with butter to soften the crust. It was a beautiful experiment and experience. I've never baked anything so pretty.

Macaroni and Cheese Bread Bowl
So! While I was sick and not really cooking, I ended up talking to my mother about having a nice, baked mac n cheese, like we used to make when I was a kid. We both missed it (it had been based on her mother’s recipe that she enjoyed as a child and had wanted to pass on to me) and decided “Well, why not mac some cheese?”
During the time we were planning our special macked cheese, she ended up finding this cool round bread in our Walmart’s bakery and as soon as I saw it I had the most brilliant idea.
“What if we make that baked mac n cheese, and serve it in a bread bowl?”
She loved the idea, and the plan was finalized.
Ingredients: -1 box wheat elbow macaroni (this was an accident, but we rolled with it since she’s diabetic and I was sick, we figured using the healthier noodles might be a good idea) -1 block colby cheese -A generous amount of lactose-free milk (I am, rather ironically, lactose intolerant) -Salt and Pepper to taste -(Optional) Grated Parmesan and Romano (can be mixed in, used on top to aid the crust, or both!)
Instructions: -Preheat oven at 350F -Boil the pasta, drain the water -Stir in the ingredience -Cook a bit, but don’t fully finish it on the stovetop -At some point, hollow out your round bread loaf (probably best done while the noodles are boiling) -Pour your cheesed mac into the hollow bread -On a preferably cast iron pan, bake until a nice golden brown crust has formed -Enjoy!
Opinions? Overall, it was pretty decent. I thought we could have used a few more cheeses, maybe some mozzarella and/or feta. She liked it alright the way it was, but couldn’t eat too much because her blood sugar. It actually took a few weeks to finish it off, during which time I saw the movie “Killer Klowns From Outer Space” for the first time. Weird movie, but better than I expected. We’ll probably be making this again in the future, with an updated recipe. I’ll post an update if/when that happens!

I made a super delicious roasted vegetable sandwich and oh my gOD so yummy! today is a nice day.
#how to make:#cut up like 2/3 of a red pepper into thick strips#cut one full zucchini up into like half a centimeter thick slices length wise#and half a medium white onion#then put a whole bulb of garlic with the top chopped off into some aluminum foil#cover all of this with olive oil and a crack of salt#NO PEPPER#DO NOT ROAST PEPPER#IT IS AN AROMATIC#AND IT WILL JUST BURN#AND GET BITTER#NEVER ROAST PEPPER#into the over at like 375#roast the veggies for 10-15 minutes#take out the veggies#place aside#let the garlic keep roasting another 10-15#take some bread#i have some mini whole wheat sourdough bun things#i didn't toast the bread instead i put olive oil in my cast iron and let it toast like that for a couple minutes#on the bread#you're gonna wanna spread#hummus and harissa on one side#on the other#pop out a few pieces of garlic#spread it#and i added some olive tapenade cause i had some on top of that#AND HOLY SHIT#its perfect#a perfect vegetarian/vegan sandwich

Just made the sexiest grilled cheese of my life, now that I have a laser thermometer it's all over for you hoes
#i did this in cast iron#old cheddar on Belgian bread#Kewpie mayo instead of butter#i guess for that matter now that I can eat lactose-free cheese again it's over etc etc#if you are good at judging the heat of cast iron good for you but I struggle hard#but no longer!
