Mom's Tuna Casserole Recipe
What you need:
•3 cans of tuna (Tuna in water works better)
•Package of pasta any kind, but we use vegetable colored pasta
•1 large can cream of chicken soup or 2 small cans
•Shredded cheese of your choosing.
How to make:
Start boiling that Pasta baby, follow the instructions on the pasta box. While your past is making start warming up Cream Of Chicken Soup. Open and DRAIN the Tuna cans then add them into a large bowl, then once the cream of chicken soup is warm add most of it in, if you like it really creamy add all of it. Once your Pasta is done add that into the bowl with the Tuna and Soup. I usually add peper and salt also but thats up to you and I never use all of pasta but we eat the rest by itself. Then put in a 9x9 pan. AND SPRAY YOUR PAN. Layer half pasta, soup and tuna mix into your pan then add a layer of cheese on top. Then repeat the process and use the rest of pasta, soup and tuna mixture. Add cheese on top of that baby, we like lots of cheese. Put in 350°F oven for like 30 minutes. It just needs to heat up and melt cheese. And BAM Tuna Casserole for a week!

Bacon, Tomato and Courgette Casserole

When one intends to bake a Flan de Courgettes for dinner and that the first egg you break is bad, and that the three others after that "feel wrong", one has to think on one's feet and come up with another recipe, which is exactly how this Bacon, Tomato and Courgette Casserole came about! And with its bright colour and smoky flavour, it was just as tasty as the intended meal! Happy Wednesday!
Ingredients (serves 3 to 4):
1/2 tablespoon Chilli and Herb Oil + more, for drizzling
2 large courgettes, rinsed
1/2 teaspoon fleur de sel
1/2 teaspoon freshly cracked black pepper
1 teaspoon dried thyme
4 Whole Peeled Tomatoes + 1/3 cup of their juice
1/2 tablespoon caster sugar
1/2 teaspoon smoked paprika
1/4 teaspoon Red Chilli Flakes 
2 rashers smoked streaky bacon
Preheat oven to 200°C/395°F.
Drizzle Chilli and Herb Oil at the bottom of a large roasting tin.
Using the coarse side of a box grater, grate courgettes into the tin. Season with fleur de sel, black pepper and dried thyme, tossing gently to combine. Set aside.
Roughly chop Whole Peeled Tomatoes, and spoon into a bowl, along with all their juice. Add caster sugar, smoked paprika and Red Chilli Flakes.
Spoon mixture onto the courgettes, levelling with a spatula.
Tear bacon rashers into bits and scatter liberally on top.
Drizzle all over with a little more Chilli and Herb Oil.
Place tin in the middle of the hot oven, and bake, at 200°C/395°F, for 30 minutes.
Serve Bacon, Tomato and Courgette Casserole hot, with.

PASTA'S BURRITO CASSEROLE, ADAPTED FROM A RECIPE I FOUND LIKE 10 YEARS AGO.
You need:
(Optional) One pound fake ground meat or real ground meat if you are an omnivore
2 cans worth refried beans - I use black beans that I turn into refried beans cause it's cheaper, easy to do, and healthier. If you aren't using meat, add 2 more cans (and if you're MAKING refried, invest in some Better Than Bouillon garlic jars, you're welcome) or maybe rice, did that once, not bad
1/2 cup DICED FUCKING WHITE ONIONS OF DELICIOUSNESS, OR USE HOWEVER MUCH MORE YOU LIKE
1/2 cup CORN, I use frozen cause I am LAZY but also like having the exact amount I need
Little 2 oz can of either green chilis or jalapenos depending on what spice level you like
TOOOOOOORTILLAS
1/2 cup SOUR CREAM
1 can of Cream of Whatever. I use cream of mushroom or cream or cheddar, but meat eaters might choose cream of bird
Packet of taco seasoning or equivalent amount in spoonfuls, once again you can measure by taste until your heart sings
SHREDDEEEED CHEEEEEEEESE, TACO CHEEEEEESE
Optional: BELL PEPPERS, SALSA
Instructions:
HEAT YOUR OVEN - I use 400-425*f but temps have varied based on my oven
Throw your meat, onions, corn, and optional bell peppers into a big pan. Cook on medium high till meat is done, OR if meat is absent, add a little oil and cook until onions are see through. I gave you an amount of onions but I measure that shit by heart, the heart knows when you have enough onions
Add your CHOSEN PEPPER OF SPICINESS to the mix and turn down heat to idk low or med low, let the flavors mingle a little
MEANWHILE, mix your sour cream and Cream Of Whatever in a bowl, it will look disgusting but its soul is good
Turn off your heat, mix your REFRIED BEANS into your onion mixture, along with your TACO SEASONING and if you do not ADD SEASONING I will SENSE IT AND COME STARE SILENTLY THROUGH YOUR WINDOW, MY PALE SIBLINGS IN CHRIST SEASON YOUR FOOD, ALSO YOU CAN JUST ADD SEASONING UNTIL IT TASTES NICE
Get a 9×13 pan. Slop half that sour cream mixture in and spread it all pretty
TEAR UP TORTILLAS INTO BITE SIZED PIECES, TASTE TEST THEM GOD I LOVE TORTILLAS and then LAYER your little tortilla bits to cover the slop
Throw in half your ONION MIXTURE, spread all nice
Much like onions, CHEESE IS MEASURED BY HEART, LISTEN TO THE VOICE INSIDE AS YOU SPREAD THE SHREDDED CHEESE, FOR IT WILL TELL YOU WHEN YOU ARE DONE
If you want, throw the salsa in here
REPEAT until the CHEESE LAYER
Lick spoon cause you're done with spoon then eat another tortilla Put in the oven UNCOVERED and cook 20-30 mins until cheese is golden brown
Sit 5 mins
Done, I get like 8 servings of this and it freezes nicely for leftovers
Make whatever changes you want, you can try RICE or add TOMATOES or maybe ENCHILADA SAUCE ON TOP, the possibilities are ENDLESS*
*as long as you season, that is non-negotiable

Complete Cornbread Casserole Crumble
ACTIVE TIME: 50 MINUTES
TOTAL TIME: 1 HOUR + 30 MINUTES
Ingredients
2 boxes Jiffy corn muffin mix
2 cans mixed veggies (drained)
2 eggs
⅔ cup milk
1 large ham steak
1 (16-ounce) block Colby Jack cheese
1 (16-ounce) block Sharp Cheddar cheese
Butter (to taste)
Steps
Preheat the oven to 400°F and gather ingredients.
Combine corn muffin mix, eggs, and milk in a casserole dish until only a little lumpy.
Drain the two cans of mixed veggies and add them to the mix. Fold them into the mix until well-coated.
Bake at 400°F for approximately 40 minutes or until golden.
Pan fry the ham steak until browned on both sides. Use butter to grease the pan (optional).
When the ham steak is done, chop it up and place off to the side.
When the casserole is done baking, remove it from the oven and shred the cheese onto the top while still hot. Add the ham steak cubes.
Crumble and mix around in the baking dish. Serve with heaping butter.

Kiwi Shepherd's Pie

It has been cold --sometimes very cold-- for a while now, and it even snowed! But Winter officially begins today, and it is properly nippy! A day to come home for your Christmas shopping to a heart-warming and comforting Kiwi Shepherd's Pie! Happy Saturday!
Ingredients (serves 4):
2 large kūmara or sweet potatoes
1 teaspoon coarse sea salt
1 tablespoon olive oil
510 grams/1.10 pound lamb mince
1 small onion
1 large garlic clove, minced
half a dozen large leaves Garden Sage 
1 large red Bell Pepper, rinsed
1/3 red Garden Chilli 
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
2 tablespoons plain flour
½ cup good red wine (such as Pinot Noir or Côtes-du-Rhône)
1/4 to 1/3 cup water
½ tablespoon demerara sugar
1 heaped tablespoon pure raw Manuka Honey
2 tablespoons unsalted butter
1 tablespoon pure, raw Manuka Honey
¼ cup double cream
Peel and cube kūmara, and add to a large pot. Add coarse sea salt. Cover with water, and bring to the boil over medium-high heat. Once boiling, cook, about 20 minutes until tender.
In a large, deep skillet, heat olive oil over a high flame.
Stir in lamb mince and brown well. Scoop browned lamb mince to a plate, leaving the fat in the skillet; set aside.
Peel and finely chop onion, and stir into the skillet. Reduce heat to medium-high. Stir in garlic; cook, 1 minute more.
Finely chop Sage Leaves, and stir into the skillet. 
Finely chop red Bell Pepper and Garden Chilli, and add to the skillet, too. Cook, a couple of minutes.
Return reserved lamb mince to the skillet.
Season with fleur de sel and black pepper.
Sprinkle in the flour, and cook out, 1 minute.
Deglaze with Pinot Noir, stirring well to loosen brown bits. Then, gradually stir in water (you may not need all of it). Bring to the boil.
Once boiling, reduce heat to medium, cover with a lid, and simmer, at least 15 minutes until the sauce has thickened. Stir in demerara sugar and Manuka Honey. Remove from the heat and let cool completely.
Lightly oil a baking tin with olive oil, and spoon lamb mixture in, levelling well with a spatula. Set aside.
Preheat oven to 200°C/395°F.
Drain kūmara, and return them to the pot. First, mash them thoroughly with a potato masher and stir in half of the butter, until melted. Then, process using a hand-held blender, so the mixture is very smooth. Energetically stir in remaining butter, Manuka Honey and double cream with a wooden spoon, until perfectly blended and Honey and butter are melted.
Spoon kūmara mash on top of the beef mixture, levelling into an even layer with a spatula.
Place tin in the middle of the hot oven, and bake, at 200°C/395°F, for 30 to 35 minutes.
Serve Kiwi Shepherd’s Pie, with a glass of Waiheke Island Pinot Noir.
