British Bangers And Mash Made With Our Bison Sausage
Bangers and mash is a delicious and satisfying meal that has long been popular in England and Ireland. The sausages were called bangers because of WWII rations that sometimes included water in the meat causing them to explode when cooked. Traditionally cooked with pork sausages, I used our delicious bison hickory smoked sausages with excellent results. They’re served with creamy mashed potatoes and flavorful onion gravy made with red wine and bone broth. If you’ve never tried this dish before, you’re in for a real treat. It’s popular fare in pubs and homes alike – true comfort food at its best.
Ingredients:

Hoppin’ John For New Years Day With Bison & Wild Boar
Hoppin’ John is a traditional Southern dish that has become well known for its popularity on New Years Day. It can be found in cookbooks dating back to the 1800s and is said by some to bring good luck for the new year ahead. It’s unclear where the name originated, but what we do know for sure is that this Southern recipe is absolutely delicious. Black eyed peas, wild rice, sausage and bacon combine with cajun seasoning for authentic Southern flavor. Traditionally made with pork bacon and sausage, used wild boar bacon and hickory smoked bison sausage.

Feijoada (Brazilian Black Bean Stew) With Wild Boar & Bison
Feijoada is the national dish of Brazil, and it’s just as delicious as you would think. Traditionally made with pork, I’ve created a version with wild boar shoulder, bacon and bison sausage. It’s an easy way to feed a crowd and chock full of flavor. If you can find it or want to make your own, traditionally this stew is topped with farofa, a fried mixture of cassava flour and bacon. I’ve left it out for simplicity’s sake, but it makes a really tasty addition.
Ingredients:

Cornbread Stuffing With Bison Hickory Smoked Sausage
Stuffing has always been one of my favorite parts of Thanksgiving. It’s fluffy, comforting and full of savory goodness. This recipe features our bison hickory smoked sausage which makes this some of the best stuffing ever. These instructions are for preparing a pan of dressing separately from your turkey, but you could also fill the cavity of the turkey and cook it that way. If you prefer a spicy kick, add a little cayenne pepper – I love the addition of spice with cornbread. You could also substitute a different type of breadcrumbs if desired. And if you’re a huge fan of Thanksgiving leftovers sandwiches like I am, this stuffing will make the sandwiches of your dreams.
