Sometimes it’s hard to tale a picture. There is no staging. No fancy lighting. I post what I can as plates fly off the pass. Tonight’s fleeting focus was a grilled lobster tail with a vanilla miso sauce, roast brussel sprouts with caranwlized onion glaze and sugar snap peas for a little color and crunch. It’s a powerful dish of flavors and textures. I hope all of my intentions came through for each diner who experienced it. It can be complicated coming up with dishes that honor what is local, seasonal, balanced, symbiotic and beautiful. Do you have a favorite winter season meal?
