Sometimes it’s hard to tale a picture. There is no staging. No fancy lighting. I post what I can as plates fly off the pass. Tonight’s fleeting focus was a grilled lobster tail with a vanilla miso sauce, roast brussel sprouts with caranwlized onion glaze and sugar snap peas for a little color and crunch. It’s a powerful dish of flavors and textures. I hope all of my intentions came through for each diner who experienced it. It can be complicated coming up with dishes that honor what is local, seasonal, balanced, symbiotic and beautiful. Do you have a favorite winter season meal? I rarely do this Post a pic of myself But here I am, in love with my job! Someone asked me recently “how’s my personal life” It was funny. Chefs don’t usually have personal lives. Traveling chefs never, ever have a personal life. But when you love your job,when what you get to do every day checks off all the boxes, what else do you need? This post is for all the chefs out there struggling to find balance. Chefs who are wondering if you should keep doing this. Remember there are days when everything goes right. Those days are so completely fulfilling and validating that off days fall completely from your head. You need really tough skin to be a chef. The 110% we give into each and every dish/eater/attention to ingredient- well all that effort can get rejected in the blink of an eye. You have to go forward anyway. It is hard for anyone in another business, especially anyone who works in an office, to understand this career. We work 12 hour days as if they were 8 and 16 hour days are more the norm. We work every weekend and holiday. Our bodies are fucked up. But when you create and execute an incredible meal and see the gratitude on your clients faces, you feel the win! We are the creators and nurturers and the lifestyle validating emotional safety nets for all people around the world for everything from burgers to A5 steaks! Here’s to all of us chefs. I almost cried when this cake actually came out clean. Gluten free vegan cakes are great, but not always Bundt pan friendly. Even gluten full cakes can sometimes tear with the unmolding. But not here! Not today! This is an orange almond Bundt cake that was served with a vegan salted caramel and vegan whipping cream. It would make a great brunch cake too! I used #markbittman gluten free vegan vegan vanilla cake recipe. I used ground flax as the binder, and stirred in almond paste and orange marmalade. It was a huge hit! Want to see what I see? Galley windows are critical for chef sanity! I start well before sunrise and end long after dark. Sometimes on a busy charter I don’t step outside for a solid week. Those times it’s the creative freedom that keep me going. The freedom to play around with classics such as: Turning a crunchy tuna roll into a crunchy sesame rice pizza topped with sweet chili, Sambal aioli, fresh yellowtail and micro shiso Turning a classic pad Thai into a Smokey version with Alderwood smoked yellow bell peppers & carrots, tossed with crunchy smoked salt soaked cabbage, miso caramelized leeks, yellow chili paste, toasted sesame oil and micro opal basil And let’s not forget about dessert. I haven’t posted in a long time. I have various excuses, but to those of you who have stuck it out I want to say Thank you! Sometimes I feel some guilt posting about indulgence during a pandemic. I know I have been very lucky to continue to work non stop during the last two years. I’m grateful. Immensely grateful. I’m grateful for fellow Instagram chefs and Yachties and my own ever shifting fellow crew who keep is moving forward in both practical and creative ways. I am also very grateful to other creators who are willing to collaborate despite distance and shipping! @ronisuechocolates and I did a fun dessert collaboration this summer. I sent them my dessert menus and they hand crafted a truffle for each! They are the most inventive and dedicated chocolatiers anywhere! The best things come in threes. For example an appetizer like my heirloom tomato tart with flowers, unfiltered olive oil aioli and local marjoram; followed by an entree of my take on a lobster Cobb salad with @nueskes applewood bacon, sweet corn, local greens from @glfbahamas; this follows of course with dessert of a tart and lightly sweet green Apple and raw honey sorbet with a hibiscus and raspberry macaron Three little moments in time that help your happiness linger on and on!
