The LAZY COOK presents: Tracy Mod's Belgian pancakes!
RETURN TO THE LAZY COOK
This recipe was submitted to me by TRACY MOD, the wonderful pony behind the PROMOTE A PONY and ASK TRACY FLASH blogs. I needed to tinker with it to reduce it in size to fit my needs.
These can be eaten plain, with sweetener, syrup, or rolled around fillings! A very versatile goodie!
You need : a bowl to mix batter in (a breakfast cereal bowl is fine) : fork or other mixing implement : frying pan or griddle : spatula ; a spoon or ladle for the batter is optional.
Ingredients : Heaping 1/4 cup measure (50-60 grams) of flour (a white flour works best. Self rising is a no-no) : 1 egg : water or milk : OPTIONAL, teaspoon sweetener like sugar or Splenda, vanilla, almond extract
The ingredients (except for the water or milk). If this looks simple, IT IS!
Stir together the flour and sweetener, add the egg, 1/2 teaspoon (3-4 ml) of vanilla extract and five to six drops of almond extract. The sweetener and extracts are optional but really improve the flavor!
This was the hardest part for me. Add water or milk and mix the batter to smooth and THIN. I am so used to regular pancakes that getting the batter thin enough was hard to wrap my head around. Nearly watery is right.
Ladle or pour batter into preheated pan. Medium heat is about right. Since there is no leavening, there are no bubbles to gage doneness. Check the underside as soon as the pancake batter stops being liquid. Just lift an edge with the spatula. Nice brown is ready to flip.

This is what the underside looks like when the cake is done. If you roll them around a filling, this side faces the filling.
I sprinkle them with a sweetener/cinnamon mix as I stack them on the plate.
This is the easy serving. Add a pat of butter, cheese and sausage on the side, with my infamous 1/2 liter of coffee and food for thought.
OR, you can get EASY FANCY by making up any sort of fruit (or other favorite) filling and rolling them up! I used mushed up banana sweetened with Splenda clone and a bit of cinnamon. Yummy!!
