baba made bamia today :D
one of my favourite dishes and the food of all time. bamia btw is okra stew made with red tomato sauce and meat (lamb). also i was starving so it tasted more glorious lol.
anyway i randomly remembered stumbling across staggering quantities of bamia hate a few years back?? i was shook to say the least. behold a poll:
for statistical accuracy; if u love okra in general but as a dish other than the aformentioned stew pls choose the third option thank u :)
also! if this dish is also one in your cuisine please share! my 2 minute google research gave me answers only from MENA but afaik cultures all over the globe more often than not share dishes, albeit more local.

mlochia is another somewhat controversial dish lol. aka jews mallow, and ewedu. its essentially green leaf soup. uncle iroh would love it

this one was too fucking funny not to include. the makhratta btw is a mezzaluna knife. in jordan its typically prepared as soup, but in my family we also eat it the lebanese way; leaf stew no blending.

Lebanese-Inspired Quiche & Okra Stew

Quiche
1 prepared pie crust
2 cups chopped eggplant
1 tbsp olive oil 1 onion, peeled and chopped
1 tsp garlic paste
1 green pepper, cored and diced 1 tsp cumin 1/2 tsp sea salt
1 block firm tofu, drained 1/4 cup nutritional yeast  1/2 tsp black salt 1/4 tsp black pepper 1/4 tsp turmeric
2 tbsp zaatar
Place chopped eggplant in a colander. Sprinkle generously with sea salt. Let sit for about 20 minutes. Rinse thoroughly. 
Preheat oven to 350 degrees F.
Heat olive oil in saucepan over low heat. Sauté onion for several minutes. Add garlic paste and sauté for another minute or two.
Stir in the; eggplant, green pepper, cumin, and sea salt. Cook for 8-10 minutes on low heat, stirring frequently, until eggplant has softened. Turn heat off. 
Place; tofu, nutritional yeast, black salt, black pepper, and turmeric in a food processor. Process until smooth and creamy. Transfer to saucepan with veggies and add the zaatar. Stir thoroughly until everything is well-combined. 
Pour filling into prepared pie crust and spread out evenly. Bake in preheated oven for 40 minutes.
Allow to cool for a few minutes before slicing and serving.
Yields; 6 servings
Bamia B'Zeit (Lebanese Okra Stew)
2 tbsp olive oil 2 white onions, peeled and chopped
1 tsp garlic paste
1 kg okra, chopped (fresh or frozen) 4 cups chopped tomatoes
1 tbsp tomate paste 1 tsp vegetable bouillon powder 1 tsp coriander 1 tsp Lebanese 7-Spice blend 1 tsp sea salt 1/4 tsp black pepper
1 can (540 ml) lentils, drained and rinsed 1 tbsp pomegranate concentrate 1 tbsp cilantro paste
Heat olive oil in a large saucepan over low heat. Sauté onions for several minutes, stirring frequently. Add garlic paste and sauté for another minute or two.
Stir in the okra and tomatoes. Stir in the; tomato paste, vegetable bouillon powder, coriander, 7-Spice blend, sea salt, and black pepper. Cook over medium heat, stirring frequently, for about ten minutes. 
Stir in the lentils, pomegranate concentrate and cilantro paste. Cook for about another 2 minutes. 
Serve as is or over rice.

ok anyway in completely unrelated news i made a sourdough starter and got teff flour so hopefully in a couple of days (I'll probably rush it my first time making it) I'm gonna make injera. idk what to have it with but I'm gonna make bamia at some point so those two might line up.
i love cooking and learning about food from around the world it's great, sometimes I'll tell my gf what I'm having for dinner and she'll tell me she's never heard of it and i want to sit her parents down and lecture them on the monotony of the anglo australian diet and the value of spices and vegetables.

angel share’s patrons had forsaken the warmth of the tavern for the eventide chill of cobblestone and moonlight, the festivities had reached their crescendo and tempered to a soft hum of stragglers as they decided it was time to also head home.  home , it had always been a raw sentiment when it came to times like these. diluc ascertained to keep himself busied, lest he be towed into rumination of a past that could not be changed. instinctively his eyes dart to the door as the bell chimes and in strolls the cavalry captain. there should have been that customary sliver of annoyance that simmered within him when their eyes met and yet, on this night, it’s absent.  perhaps, he has grown weary with the sentimentality of others or perhaps - he is as lonely as adeline had surmised he was.   there would always be a vacuous aperture where family had once resided, a wound that could not entirely heal ; the sort that ached when his brother would laugh or smile things that invoked memories of a past lost to them. “  it’s late kaeya.”  he said,  his voice a soft reprimand.  then he allows himself a moment of silence to truly witness his brother. to stand in that door, a solitary plastic bag hanging limp upon his wrist and a smile -  that felt so unlike the confidence he mantled himself with - it made diluc hesitate.                                                      he had made them dinner.

a long time ago they had shared evenings like this often, banter of youth sonorous through the halls as their father would chide them, reminding them that the more they spoke the less they would eat. family,  how much it had meant to the both of them.  
“  shall we eat together.”   It’s an olive branch that both had always wanted to extend yet neither could muster.  from behind the bar he secures a bottle of mondstadt’s finest wine, brewed at the very place their father had called home.   “  for the sake of the festivities.  this will be the only one.”
to return home once more with kaeya in tow felt familiar. to get to speak finally over what seethed in the dark water between them, to begin to heal that which had festered for far too long - if only in the capacity of a single evening.
