Shirred Eggs are a type of baked eggs, and are a super-simple way to turn the humble egg into an enticing meal for breakfast, lunch or dinner. Eggs are cracked over a bed of garlicky mushroom and spinach in small dishes, topped with a dash cream and parmesan then baked until just-set. Bread for dunking is definitely not optional!

Mushroom Spinach Baked Eggs are a tasty and healthy way to start the day. They combine the earthy flavors of mushrooms with the freshness of spinach. With eggs and cheese baked just right, this dish is filling and tastes great.

Ingredients: 2 eggs. 1 cup fresh spinach leaves. 1/2 cup sliced mushrooms. 1/4 cup shredded cheese your choice. 1/4 cup heavy cream. Salt and pepper to taste. Chopped fresh herbs for garnish optional.

Instructions: Turn on your oven and heat it up to 375F 190C. Put the sliced mushrooms in a skillet with a little oil or butter. Cook for three to four minutes, until the mushrooms get soft. Add pepper and salt to taste. Put the fresh spinach leaves in the pan and cook for one to two minutes, until they wilt. Use a little oil or butter to grease a small ramekin or baking dish that can go in the oven. Put the spinach and mushrooms that have been sauted at the bottom of the ramekin. Break two eggs into the mushroom and spinach mix. Pour the heavy cream over the vegetables and eggs. Add the shreds of cheese on top. If you want, you can add more salt and pepper to taste. Put the pan in a hot oven and bake for 12 to 15 minutes, or until the egg whites are set but the yolks are still a little runny. Add fresh herbs that have been chopped on top if you want. Enjoy while hot!
