It was 9:03pm, I was sat in my car in an Aldi parking lot. I hit record “hello darling…” I trailed off a bit, partly because I didn’t know what to say despite rehearsing so much but mostly because I could hear that I was about to cry. “I don’t know why I’m leaving a voice note” I did know, of course I knew, I knew that it was cowardly to text this but I wasn’t brave enough to call her “I hate voice notes but I just wanted to say I love you and…….. and I bought you some bagels” I sniffed and tried not to crack up “so um, yeah.” I ended the recording and walked into the shop to go buy the bagels and whatever other random crap qualified this as a grocery trip so late.
By the time I got back to my car I had promised myself I would just leave whatever she replied until tomorrow, too much of a coward to face it, then she revealed that she knew me far too well. She called me. I don’t know if she knew what she was doing or even if she knows now but I couldn’t stop myself from laughing. She knows me too well, she chased me and I had to face my feelings. We cried, we said sorry and she called me silly for buying her bagels.

Cream Cheese
Cream Cheese is a fatty dairy spread most commonly associated with bagels. It has a very mild cheese flavor, with a creamy profile distinct from butter. Cream Cheese usually comes 'plain', without additional flavoring, but it is easy to find flavored versions of it like Strawberry or Honey Nut or Vegetable Garden. Plain Cream Cheese easily goes with both sweet and savory items. Flavored Cream Cheese usually only works with one or the other. Cream Cheese is sometimes served with fish, such as in some varieties of American-style Sushi, or the traditional 'Bagels and Lox' breakfast item.
Cream Cheese is soft, and must be refrigerated. It can easily be spread with a knife. Unlike butter, it does not melt so quickly or harden so much with temperature range, but it does have some variance.
Cream Cheese (usually plain) can be used as an ingredient in desserts and baked goods, adding a sweet fat to the substance. Cream Cheese is a major component in Cream Cheese Frosting, which is commonly used in homemade cakes.
Cream Cheese used as a spread is also known as Schmear. Cream Cheese used as an ingredient in a dish is NOT Schmear. If you smear it on, it is Schmear. If you mix it in, it is not.
Your characters will be familiar with Cream Cheese, by all accounts. If they often have bagels for breakfast, they likely have cream cheese available in their fridge to make for a lazy, toasted breakfast. If they bake desserts, they may go through a lot of it. However, it is a relatively niche spread outside of those use cases. Butter is far more common a spread.

You can make these Sea Salt and Poppy Seed Bagels at home and eat them for breakfast or as a snack. The sea salt and poppy seeds together give these chewy bagels a great taste and texture.
Ingredients: 4 cups bread flour. 2 1/4 teaspoons active dry yeast. 1 1/2 teaspoons sea salt. 1 tablespoon granulated sugar. 1 1/4 cups warm water. 1 egg, beaten for egg wash. 2 tablespoons poppy seeds. Sea salt flakes for topping.
Instructions: Put the active dry yeast, sea salt, granulated sugar, and bread flour in a large bowl. Mix the dry ingredients with the warm water until a dough forms. For about 10 minutes, knead the dough on a floured surface until it gets smooth and springy. Put the dough in a bowl that has been greased. Cover it with a damp cloth and let it rise for an hour, or until it has doubled in size. Before you start, heat your oven to 425F 220C and boil a large pot of water. The dough has risen, so punch it down and cut it into 8 equal pieces. Roll each piece into a ball and use your finger to make a hole in the middle. This will make a bagel shape. To get the hole the size you want, stretch and shape it. Set the pot of water on high heat and boil the bagels for one to two minutes on each side. When it's time to flip, they should float to the top. Take the bagels out of the water after they're done cooking and put them on a baking sheet that has been lined with parchment paper. Mix the egg wash and sprinkle it on top of the bagels. Then, add poppy seeds and sea salt flakes. Take the bagels out of the oven and heat it up. Bake them for 20 to 25 minutes, or until they are golden brown and the crust is firm. Set the bagels on a wire rack to cool down before cutting them up and serving them.
