This Bacon, Asparagus, and Cheddar Quiche Tart combines the rich flavors of bacon and cheddar with the freshness of asparagus, all nestled in a flaky pie crust. It's perfect for brunch, lunch, or a light dinner!
Ingredients: 1 store-bought pie crust. 6 slices bacon, cooked and crumbled. 1 cup asparagus, chopped and blanched. 1 cup shredded cheddar cheese. 4 large eggs. 1 cup heavy cream. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Warm the oven up to 190C 375F. Spread the pie crust out on a work surface and press it into a tart pan. Cut off any extra dough. Put olive oil in a pan and heat it over medium-low heat. Add the asparagus and cook for about 5 minutes, until it's just starting to get soft. Take it off the heat. Add eggs, heavy cream, salt, and pepper to a bowl and mix them together using a whisk. Put bacon, asparagus, and cheddar cheese on top of the pie crust in a layer. Put the egg mix on top of the tart crust's fillings. It should be baked for 35 to 40 minutes, or until the crust is golden brown and the filling is set. Let the tart cool down for a few minutes before cutting it up and serving it.
Prep Time: 20 minutes
Cook Time: 40 minutes

Asparagus & Cheese Tart
Roll out a 320g puff pastry roll onto a baking tray and prick the entire surface with a fork. Baste the entire surface of the pastry with a thin layer of Dijon mustard.
Distribute thin slices of goat's cheese (200g) across the tart and sprinkle with 160g Gruyere cheese (grated).
Distribute around 400g thin asparagus spears* (snapping off the woody ends) across the tart (around 16-24 depending on their size). Season with salt and pepper.
Bake at 200c for 15-20 minutes till bubbly.
* If the asparagus spears are thick, blanch in boiling water for a minute or two before placing on the tart.
Serves 4.
You can also make these into individual tarts.
