いつもはアーモンドミルクでカプチーノにしてもらうけど、今日はオーツミルクにしてみたら、めっちゃ美味しかったー!😊 そしてペストリーはハラペーニョとチェダーのビスケット。フライングで一口食べた後で写真とっちゃいましたが。。。😅

I usually get almond cappuccino but I ordered oat cappuccino today…was very tasty and creamy!
Also my weekend treat was jalapeño cheddar biscuit!!

Hazelnut Amaretti Biscuits

Jules is coming home for the Holidays today, and as my sister as a sweet tooth, I always welcome her with a plate of treats. This year, it will be these beautifully crisp and nutty Hazelnut Amaretti Biscuits! Happy Christmas Eve's Eve, my friends!
Ingredients (makes 28 biscuits):
2 cups Icing Sugar + more for dusting
1 1/4 ground halmonds
1 cup ground hazelnuts
2 large egg whites
1 tablespoon raw runny honey
28 whole hazelnuts
In a large bowl, combine Icing Sugar, ground almonds and ground hazelnuts. Give a good stir until well-combined.
Dig a well in the middle of the dry ingredients, and add egg whites and honey.
Stir well until mixture comes together into a soft, pasty dough.
Chill in the refrigerator, for half an hour.
Line a baking tray with baking paper.
Spoon 2 heaped tablespoons Icing Sugar into a shallow dish or plate.
Scoop a heaped tablespoonful (about the size of a walnut) of the chilled dough and roll between your hands (you can wet your hands, to prevent sticking) until you have a smooth ball.
Place ball in prepared plate. When you have about six balls, shake the plate to evenly coat them in Icing Sugar.
Then, place coated balls onto prepared baking tray, and push a hazelnut in the centre of each, flattening it slightly.
Repeat, adding more Icing Sugar when necessary, until no biscuit dough or hazelnut remain.
Leave baking tray in a draught-free place for one hour; it will crackle the dough in this characteristic amaretti manner.
Preheat oven to 160°C/320°F.
Once hot, place baking tray in the middle of the hot oven, and bake, at 160°C/320°F, for 8 to 10 minutes, rotating the tray halfway through, until just golden brown.
Remove from the heat, and let cool completely.
These lovely Hazelnut Amaretti Biscuits will pair beautifully with a small glass or Limoncello, and shall keep 3 to 4 days in a metal tin.

Vegan recipe for garlic non dairy cheddar biscuits. You will need two cups of swans down cake flour, and preheat your oven on 400. 4 table spoons of crisco vegetable shortening, 1 table spoon of country crock plant butter non dairy with olive oil and another tablespoon set aside to brush your biscuits with as they come out of the oven. 3 teaspoons of clabber girl double acting baking powder, and 1/8 teaspoon of salt. You also need 1/2 of an 8 ounce cup of vio life cheddar shreds or follow your heart as both are non dairy and vegan, and you will need 1/2 tea spoon of badia garlic powder. Combine your flour, baking powder, cheddar shreds non dairy, badia garlic powder, and salt and cut in with pastry knives, or by hand your crisco 4 table spoons and the 1 table spoon of country crock plant butter. Once all are cut in measure out one 8 ounce cup of Blue diamond unsweetened almond milk and 1/8 of a cup and you may need a splash more to incorporate but an 1/8 with whole cup should be enough. Mix the unsweetened almond milk with the other ingredients to form your dough. Once your dough is formed use a soup spoon to shape 5 to six biscuits to put on a lightly greased with country crock plant butter baking sheet about 2 teaspoons should be enough to coat the baking sheet you just rub the plant butter all over the baking sheet where you will be placing the biscuits or you roll the biscuits and cut 1.25 inches thick and place on the baking sheet remembering to flour your rolling pin and putting flour lightly on your parchment paper. Once you have to biscuits formed or cut place them onto lightly greased baking sheet and bake for 18-20 minutes on 400. Make sure centers are done using tooth pick. Brush once or twice with the plant butter you melt onto the baked biscuits right as they come out of the oven and you can add 1/10 a tsp of badia garlic powder to melted plant butter to give extra flavor. Enjoy!

I had watched a biscotti tutorial video and it made me realized it was surprisingly doable! This was my first time baking biscottis AND the first time in a looong time eating them. My family was amazed 🤎
They’re chocolate almond biscottis, btw. I ate them with some milk for several mornings. Maybe I should try making more soon.
