Japanese Food Cravings
More people are becoming familiar with the unique culinary culture of Japan as the cuisine spreads throughout the country. People are lining up to get their hands on tempura, ramen, sushi rolls and other Japanese dishes. I'm taking a break and ordering takeout in the interim, but home cooks like myself are busily preparing their way through replicating some of their favorite Japanese dishes at home.
I ordered the following:

I’ve been running some mid-level anxiety in the background since Tuesday ✨
#which means I’m just mildly nauseous all the time#my foods have consisted of Taco Bell burritos#agedashi tofu and miso soup#and now a muffin and chai tea#I appreciate my grandma texting me a lot but it makes me want to rip my hair out#last time I was this anxious I lost like. 5 pounds over the course of a week or two#which isn’t a lot inherently but I don’t gain or lose weight easily!!! and I’m very small!!!!#I don’t have a scale now but I know I am teeeeeetering on that edge#I have to remember this is inherently a fine thing#god I need like a three hour session with a therapist

i didn’t used to like Japanese food that much bc i don’t like seaweed or strongly fish-flavored things but now i crave it so bad i see those images of sashimi & i get so hungry my mom thinks this is indicative of a vitamin deficiency

Obviously this is about vegan cuisine but one of the other important things (especially for people who want to reduce their meat consumption) is that it's not just a replacement for other proteins (or other proteins for it) but a supplement to them. Fry some soft tofu in bacon grease and you need that much less pork. Same with ma po tofu. Or hot pot. Or bbq skewers.
#i was recently fantasizing about the agedashi-style tofu teriyaki they had at a long-gone Japanese restaurant i used to go to#with my dad when I was in high school#anyway I've never been to mainland China but I loooove the vegetarian buffets in Taiwan#and I'm an omnivore!#oh and that lacto-fermented vegetable broth? there's a chain from northern china that specializes in it that's been aggressively expanding#here where I live and it's sooooooo good. maybe I'll get some tomorrow#the flavor is really distinctive vs other kinds of souring agents

The past couple of days have been a big game of 'do I feel so tired and sad because of my period, because my depression is being a bitch, or because it's been cloudy and pouring for days now?' It might actually be all three. I ain't gotten shit from my to-do list for the week done at all 😩 On the brighter side, I finally tried making agedashi tofu at home because I've only had it in restaurants and for some reason thought it would be tricky, but it is not and it's so damn good, why doesn't everyone like tofu?
