Summer Jams
Cantaloupe Jam
This isn’t as much a recipe as a suggestion for a jam that most people wouldn’t think to make. Keep it simple and bright.
Peel and seed one cantaloupe, then cube it so it fits nicely into a food processor—in two batches, likely—and pulse until it’s roughly chopped, not puréed. It should yield about 4 cups of mash.
Put the cantaloupe mash into a medium-sized, heavy-bottomed pot with 1 teaspoon salt and bring to a simmer over medium-high heat. Add sugar, lemon juice, and pectin per the instructions for your pectin of choice, using the least amount of sugar necessary. Pour into sterilized glass jars and seal.
Dulce de Tomate
Trim and quarter 4 pounds tomatoes. Don’t seed, don’t peel. Put the tomatoes into a large, heavy-bottomed pan with:
1 teaspoon salt;
1 1/2 cups cane sugar;
the juice and zest of 1 lemon;
1 cinnamon stick; and
1/2 vanilla bean, split and seeded.
Bring the tomatoes to a simmer over medium heat and cook until most of the liquid has evaporated, the skins are candied, and the consistency is jammy, about 2 1/2 hours. Discard the cinnamon stick and vanilla bean. Pour into sterilized glass jars and seal.

Super Tomato
A long time ago, my flatmate used to bring these jars of tomato sauce that were so delicious. They came from her Sicilian grand-mother and my flatmate used to say: “I don’t understand why people buy it; it is so easy to make. You just cook the tomatoes in a big pan. You put the hot sauce in a jar and turn it upside down, that’s it.” It took me time to follow the instructions but when I finally did, I was convinced.
You can use any variety of tomatoes but the higher the quality of the ingredients, the better the dish will be for your taste and health. So choose your products well. (from your personal garden or the market, preferably organic).
You can add whatever you like: rosemary, thyme, pepper, stalk celery, half a carrot, etc.
You can use it on pasta or rice or even use it for another recipe. Enjoy!

Pan con Tomate (Spice & Tulips style) SUPER SIMPLE only 6 ingredients! Tomato 🍅 Bread 🥖 Garlic clove EVOO (olive oil) Tuscan Sun ☀️ blend Fleur de Sel (salt) * Cut the tomato in half and slide the cut surface over a box grater, separating the pulp from the skin. Set the pulp aside in small bowl. * Cut bread into 1/2 inch slices and put into the toaster oven. Toast until crispy. Shout out to @creampantustin - their ciabatta is pictured and it was delicious! * Peel the garlic, slice in half and apply cut side directly onto the crispy bread (helloooo... fresh garlicky bread... but don’t start biting into it just yet; wait for the finished product!) *Drizzle with olive oil to further bring out that yummy garlicky-ness! * And now... the tomatoes! Add a spoonful of purée onto the bread. Spread around each slice. * Season with Tuscan Sun blend over the tomato purée. * Finish with a sprinkling of Fleur de Sel to taste. Bon Apetit! PS.
