The poor mother, and Jonathan are just pawns for Dracula's entertaiment. One was killed as if she meant nothing, and the other is trapped in a cycle of suffering with the sole purpose of breaking his mind.
Even if Jonathan didn't have any kind of papers that proved his identity, human kindness knows no bounds. I speculate that the locals would have taken in Jonathan despite his haggard visage if he had managed to escape the castle, more since they wouldn't have turned their hands away from a surviving victim of the Count.
However, there was only one way that Dracula could have perfectly deterred the Transylvania locals (and even enrage them) from helping Jonathan.
It was a new shock to me to find that he had on the suit of clothes which I had worn whilst travelling here, and slung over his shoulder the terrible bag which I had seen the women take away.
Who would help the creature that blantantly stole a child in front of everyone? Who would even believe the story of this "man" if he somehow returned to the village claiming to be the Count's prisoner? What if is it another trick? What if the Count now wants to throw this new turned vampire at them? We know as humans how people could react in such situation.
After Dracula's stunt with his clothing, if Jonathan somehow managed to escape he will have nowhere to go. The Count perfectly planned to cut away Jonathan's last hope for escaping, and he was very successful. It doesn't matter if he manages to escape the Weird Sisters, the maze of the castle, the wolves, the hills, and the cold of the forest, Jonathan would be killed by the first humans he would have seen in months.
Yet, today is different. Today a person, a mother, decided to go to the castle in order to rescue her baby.
"Monster, give me my child!"
Her fear for the Count, and the monsters that lurk around the castle was conquered by her sheer determination of getting her child back.
For such a minor character, she showed strenght in her conviction to at least face that feared lord who managed to catch another victim before her baby. However, Dracula doesn't care about conviction, nor human strenght, all of this must be normal to him, almost routine. So, he sends the wolves to do a horrible deed he deems beneath him.
All in front of Jonathan's eyes.

I have a really specific vision of taylor in my mind and it's that she has REALLY messy big curly hair, big thick rimmed square glasses, and always has AT LEAST one or two bugs on her that she doesn't realize are there
