And the great big house in the country, which Digory had heard of all his life and never seen would now be their home; the big house with the suits of armor, stables, the kennels, the river, the park, the hot-houses, the vineries, the woods, and the mountains behind it.

It is mead bottling day but someone (me) forgot to get enough wine bottles for this 3 gallon batch, so while I scramble around town to home brew stores, here it is. What started out as a lower gravity strawberry hibiscus vanilla mead, now also has blueberries bc after an early taste, the strawberries weren’t very flavorful. And after the initial fermentation, it didn’t have enough oomph, so I added more honey. So it’s a Frankenstein mead, which is honestly kind of how I do everything over here. But besides the mead, can you see my grape leaf/Greek key planters in the background? They’re huge and I think I want to try to grow some grapes in them. Can you grow grapes in planters? And is Texas too hot for grapes? Tell me your grape growing experiences, oenophile witches.

This is what culture is. You are nurturing a culture, a living reality when you farm and reuse your seeds, or create living cheeses or sourdough.
“No writing is wasted. Did you know that sourdough from San Francisco is leavened partly by a bacteria called lactobacillus sanfrancisensis? It is native to the soil there, and does not do well elsewhere. But any kitchen can become an ecosystem. If you bake a lot, your kitchen will become a happy home to wild yeasts, and all your bread will taste better. Even a failed loaf is not wasted. Likewise, cheese makers wash the dairy floor with whey. Tomato gardeners compost with rotten tomatoes. No writing is wasted: the words you can’t put in your book can wash the floor, live in the soil, lurk around in the air. They will make the next words better.”

Delicium !

Trash Bag Technique, Modales Wines, Making Nouveau
I’ve enjoyed the last eight weeks since starting the GM position at Modales Wines in Fennville. I’m thankful to have begun just before harvest. Now that harvest is in full swing, the winemaking team is in full throttle. I like being at a place where I’m not only contributing to my purview, but learning so much, particularly from Andrew Backlin, our winemaker. Above is his “trash bag technique” for intercellular fermentation [aka carbonic maceration]. The above 550 gallon fermenter with Zweigelt and Pinot Noir co-fermenting. Andrew kicked off an initial fermentation with inoculating a base layer of whole cluster berries with PB2033 yeast, which makes this process semi-carbonic maceration. So what’s with the black trash bags taped to the outside of the fermenter? His intention is to assist in heating the vessel to the desired 30-degrees Celsius as the black absorbs the sunlight. As carbonic maceration occurs and berries explode, Andrew is draining off the free run juice from the tank immediately to avoid stemmy flavors. No sulfites are used here, and none will be added at bottling. The free run juice of our Zweiglet/PN blend is outstanding, and it looks like the 2024 vintage will be stellar. Andrew is predicting a little more power overall from the final wines based on what Mother Nature is providing this year. Our Nouveau celebration will be at Modales on November 21st.

as a wine/viticulture major and also a guy with Big Fish Special Interest there’s so much to process here LMFAOO
-crushed gravel and other earth tones is actually a pretty common taste note! it’s not that it tastes directly like licking rocks- it’s more of like ,,. the scent of wet slate, or river stones! it can come from the aging process and typically isn’t very prominent unless you’re really looking for it lol. you don’t usually sip a white wine and go that’s conk creat babey!! unless you’re gay and studying wine sensory evaluation. which i am. but that’s probably an outlier
-if you ordered a white wine on the rocks the bartender would probably give u a weird look, but any winemaker, sommelier, or most enology professionals would probably go fish up an Atlantic sturgeon specifically to whack you with
-sturgeons are so fucking cool can i have an atlantic sturgeon too
doing research on white wine for a thing and can we back up for a second on that last one???
