Coconut Panko Crusted Tofu with Mango Avocado Salad and Coconut Lime Rice By @keto_diet_recipe_ Recipe: Tofu: 1 block extra firm tofu, lightly pressed 1/4 cup coconut or other plant milk 2 tbsp cornstarch Salt 1/2 cup unsweetened coconut flakes 1/2 cup panko bread crumbs 1-2 tbsp coconut oil Mango Avocado Salad: 1 mango 1 avocado 1 small red onion 1 jalapeño (seeded for less heat) Juice of 1 large lime Salt to taste A handful of chopped cilantro Instructions: Finely dice red onion and jalapeño, add both to a bowl, and sprinkle with salt and lime juice. In a shallow bowl, whisk together cornstarch and coconut milk, and to a second bowl add breadcrumbs and coconut flakes. If the coconut flakes are very large, I recommend pulsing them in a food processor until smaller in size. Cut tofu in half, each half into slices, and pat slices dry with a clean kitchen or paper towel. Season from both sides with salt. Add each slice to the cornstarch mix, then press them into the coconut breadcrumbs until coated from all sides. Heat up coconut oil in a large (cast iron) skillet, and fry tofu from both sides for about 3 minutes or until golden. Peel mango and avocado, cut them into medium sized pieces, and add to the red onion jalapeño mix together with the chopped cilantro. Serve tofu and mango avocado salad over some rice, and enjoy! Tip: Toss any leftover coconut panko mix in the hot pan until golden, and serve it as a crunchy topping! A diet focused on predominantly fruit or refined carbohydrates or fats is probably the only way you should fall short and that's why we recommend a balanced approach, getting a mix of whole foods each day. Vegans eating varied diets containing vegetables, legumes, grains, nuts, and seeds shouldn't have any difficulty getting enough protein as long as their diet contains enough energy (calories) to maintain weight. And there’s no comparison between animal foods and plant foods when it comes to providing immune-boosting and cancer-fighting nutrients. Animal foods are either exceedingly low or devoid of antioxidants and tend to offer concentrated amounts of individual nutrients, like protein or calcium, while being deficient in many others. By contrast, plant foods are rich in antioxidants and provide a wide spectrum of vitamins, minerals, and other health-promoting nutrients. People are unnecessarily obsessed with protein - but it's very, very difficult to actually be deficient in protein. Athletes such as bodybuilders, of course, have a greater daily requirement for protein, and we've covered many vegan athletes building huge amounts of strength and muscle without any issues. There is normally no advantage in consuming more than 0.82g/lb (1.8g/kg) of protein per day to preserve or build muscle. Leave aside. 2 very ripe bananas. You need them to be very soft. 1 cup of coconut sugar. 1/2 cup of coconut oil, melted. 1 tsp of baking soda. 2 tsp of baking powder. Method: 1. Preheat the oven to 350F. 2. Grease a loaf pan 3. Mix dry ingredients together really well 4. Mix wet ingredients together 5. Add wet to dry and mix well 6. Fold in your blueberries 7. ❇️ Vegan Burritos ▫️ Credit: ➡ @plantsforfit ▫️ 📖 Ingredients: ▫️ 🔵 3 Potatoes 🔵 Rosemary spice 🔵 1 avocado sliced 🔵 1 can of kidney beans (rinse them well or cook your own) 🔵 1 of each bell pepper you like chopped 🔵 1 onion chopped 🔵 2 cloves of garlic 🔵 Red cabbage (chopped) 🔵 Pepper and other spices you like! ▫️ 📖 Cashew Sauce Ingredients: ▫️ 🔵 2 Tbsp. Makes 12 pies For the Dough ¾ cup + 1 tbsp warm water 2 cups all-purpose flour, plus more or dusting 1 tsp canola oil or other neutral oil ½ tsp salt For the Filling 100g dry vermicelli noodles, makes 2 cups rehydrated noodles 2 cups (100g) chopped chives 1 medium shredded carrot (makes 1 cup) 1 cup (150g) sliced shiitake mushrooms 1 tbsp canola oil or other neutral oil 1 ½ tsp salt, or more to taste 1-2 tbsp soy sauce, or more to taste 1 tbsp sesame seeds ½ tbsp sesame oil For Cooking 12 tbsp water, divided into 4 batches of 3 tbsp each 4 tbsp oil, divided into 4 batches of 1 tbsp each For the Dough Add in 2 cups of flour into a mixing bowl. Create a well in the center of the bowl and pour in the warm water. Use a wooden spoon or spatula to mix the flour and water. Once the dough starts to come together, add in 1 tsp of oil. Use your hands to mix the bits of dough. Knead together for several minutes. If the dough is a bit dry, add a splash of water. Shape the dough into a ball, then place it in a bowl. Cover it with a damp towel and let it rest for 30 minutes. For the Filling Chop the noodles into small ½ inch pieces. Drain excess water and set aside. Heat a pan. Add in 1 tbsp canola or other neutral oil. When the oil is hot, add in the chives, carrots, and mushrooms. Cook over medium high heat for 4-5 minutes until the carrots are tender. Add in noodles. Pour in the soy sauce, salt, sesame seeds and oil. Mix well with a wooden spoon or spatula and cook for another 2-3 minutes over medium heat. Transfer to a strainer to drain excess liquid from the vegetables then set aside to cool while you prepare the wrappers.
