Some years ago I had a lovely chana masala (“chickpea curry”) recipe which I’ve since lost. Attempting to recreate it led me to the recipe below, which seems to be quite popular! It’s based in part on a recipe from https://minimalistbaker.com/easy-chana-masala/ with some alterations. It’s my go-to meal for entertaining guests.
CAT’S SUPER EXCELLENT CHANA MASALA
INGREDIENTS For grinding your own Garam Masala:
2 small dried red chillies
1 tsp black peppercorns (or 1/2 tsp ground black pepper)
1 tsp cumin seeds (or 1/2 tsp ground cumin)
1 tsp cardamom seeds (or 1/2 tsp ground cardamom)
1/2 tsp whole cloves (or 1/4 tsp ground cloves)
1/8 tsp ground nutmeg
Grind together in a spice blender or mortar and pestle. This makes more than you will need for this recipe so you will have leftover Garam Masala! Theoretically you could use pre-blended Garam Masala but I haven’t tried that. If you don’t have all the spices already then getting pre-made Garam Masala will certainly be cheaper.
INGREDIENTS FOR THE MEAL
3 tbsp cooking oil
1 onion, diced
1 tbsp cumin, ground
1 tsp chilli powder
1 tsp ground turmeric
3/4 tsp salt
6 cloves garlic, minced
2 tbsp ginger, minced
2-3 fresh green chilies, finely diced (I used frozen red ones, so using frozen chillies is an option here)
1/2 cup cashew nuts, unsalted (I found mine in the baking supplies aisle, not the snack nuts aisle)
1 red capsicum, diced
1 can diced tomatoes
2 cans chickpeas, drained and rinsed
2 cups frozen peas
1/4 cup plain Greek yoghurt
1 tsp garam masala
INSTRUCTIONS
1. Mince together garlic, ginger, and green chillies in a mortar and pestle or blender.
2. Heat the oil in a large pan and add the spices (except the Garam Masala) and minced garlic-ginger-chillies mixture. Cook for around 30 to 60 seconds - the goal here is to lightly toast the spices, not burn them! If they get a bit dry you can add a little more oil.
3. Add the onions and saute until transparent.
4. Add the tomatoes, capsicum, cashews and chickpeas. Increase the heat to medium-high until it begins to simmer, then simmer for 20-30 minutes, uncovered, stirring occasionally, until the mixture is thickened.
5. Add the peas, yoghurt, and Garam Masala. Cook for a further 5 minutes until the peas are heated through.
Serve on long grain white rice. I like it with a bit of sour cream on top.
I’m told a friend has had success in substituting coconut milk for the yoghurt, if you want a dairy-free/vegan option!

MOTICHUR LADDU RECIPE (MOTICHUR KE LADDU), HOW TO MAKE PERFECT AND INSTANT MOTICHUR LADDU

INTRODUCTION
Motichur laddu is a well-known sweet form and is substantially served in every carnival, festivity, and occasion. These are attractive round shaped, soft, and delicious melt-in-mouth substantially made with gram flour, sugar, and spices. In this post, you can learn how to make this motichur laddu with step-by-step detailed recipes.
MOTICHUR LADDU

Mootichur Laddu is one of the most popular types among varieties of laddus in Rajasthan and some parts of Uttar Pradesh. People love motichur laddu during carnivals like Diwali, Raksha Bandhan, Ganesh Chathurthi, marriages, etc.
The word motichur is made from two words, Moti means Pearls, and Chur means Curshed form of it. So motichur is made up of tiny fried crispy round shape balls of besan (chickpea batter) latterly dipped in sugar syrup to make it sticky and shaped into round balls.
INGREDIENTS FOR MOTICHUR LADDU RECIPE
TO MAKE BOONDI
1 mug Besan flour/chickpea flour
Few drops of Food color, Orange
2 tablespoon ghee
Melon seeds
1/2 tsp Cardamom powder
Oil for frying
Nuts & Seeds
2 tbsp Cashew nuts diced
2 Pistachios diced
To make sugar syrup:
3/4 mug sugar
1/2  mug water
2 drops of rose essence
1/4 tablespoon of lemon juice
SELECTING INGREDIENTS
BESAN FLOUR
Use good quality besan flour that has been fresh and packed lately. Taste the flour before use, avoid using old flour that is too old because it turns its taste too bitter.
SUGAR
There are many substitutes and backups available in the market for regular sugar like jaggery powder, and bura but this recipe goes well with regular fine sugar powder.
GHEE
using the best quality pure ghee helps to make these laddus more aromatic. If available use homemade ghee for preparation.
RECIPE STEPS
MAKING BOONDI
Take besan flour in a mixing bowl, it should be coarse. Now add ghee to it.
Add 2 drops of orange food color, and mix it well.
Add a little water and use a whisk to blend it well.
Add a little more water to batter to form it thick lump free. Make batter veritably smooth and thinner. It should be like free flowing in thickness.
Now heat oil for deep frying in a kadai or pan. The oil has to be moderately hot.
Take a perforated ladle/spoon. With your hands position the ladle above the oil. You will need one more large ladle/jhara to remove the fried boondis.
Remember to fry the boondi in a medium-hot oil or a moderately hot oil. If the oil is warm, the boondi will soak more oil, getting loaded and soggy with it.
Take a large spoon of the besan batter and pour it on a perforated ladle/spoon. Press with the other spoon so that the batter falls from the perforations into the hot oil.
Do not cook for more time, when shh sound ceases take it out. 45 seconds to 1 minute is enough to get the correct texture in the boondi. This step is important because if boondi becomes crisp then motichoor laddu won’t be soft and they won’t be able to absorb the sugar syrup.
Repeat this process until the entire batter finishes.

MAKING SUGAR SYRUP/ SACCHARINITY

Take 1 mug of sugar in a large thick-bottomed kadai or saucepan.
Add ½ mug of water to it and heat it to dissolve sugar.
Add a few drops of orange/saffron food color, stirring frequently.
Cook the sugar syrup or saccharine till you get thread-like thickness in it, and turn off the flame. Now add cardamom powder and rose essence to the syrup.
Eventually, add some drops of lemon juice to prevent sugar syrup from crystallizing.

MAKING MOTICHUR LADDU

In hot sugar syrup, transfer the prepared boondi, and add melon seeds (magaz) to it. Mix it well and make sure to coat all the boondi with sugar syrup.
Add 2 tbsp diced cashew and 2 tbsp of diced pistachios in it and mix well.
Cover it and keep away for 10 minutes, at least for all the syrup to be absorbed.
When you see, that all the sugar syrup has been absorbed, mix it well, apply some oil or ghee on your palms, and shape the laddu
The mixture would be warm when preparing the laddu. On cooling they become firm.
Finally, motichoor laddu is ready to be served or refrigerated for 5-6 days.
SOME IMPORTANT TIPS FOR PERFECTION
The batter should be smooth, flowing in consistency, and without lumps.
Add a generous amount of food color to get a rich color to ladoo.
Still, if the boondi is not fine, blend boondi mixture to a coarse powder.
Make sure to thread consistency in the sugar solution and keep it hot.
Don’t make boondi crisp because it can’t absorb sugar syrup; add fried boondis immediately to the hot sugar syrup. It should be hot.

Ingredients
1 teaspoon turmeric
1/2 teaspoon cayenne
Kosher salt
3 tablespoons plus 1 1/2 tablespoons vegetable oil
16 ounces paneer, (Indian cheese, either store-bought or made from my recipe, recipe follows), cut into 0.5-inch cubes, see Cook's Note*
1 medium white onion, finely chopped
1 (1-inch thumb) ginger, peeled and minced (about 1 tablespoon)
4 cloves garlic, minced
Note: 2 tsp of garlic ginger paste may be used instead of ginger and garlic
1 large green serrano chile, finely chopped (seeds removed if you don't like it spicy!) or 1.5 green thai chilis, seeds removed
2 medium vine on tomatoes, in a 0.5 inch dic
1/2 teaspoon store-bought or homemade garam masala, full cardamom content
1 teaspoons ground coriander
1 teaspoon ground cumin
1/4 cup cashew nut
1 (16-ounce package) frozen chopped spinach or fresh spinach 300g
1/2 cup buttermilk, stirred until smooth
1 Tbsp Heavy Cream
Instructions
In a large bowl, whisk together the turmeric, cayenne, 1 teaspoon salt and 3 tablespoons oil. Gently, drop in the cubes of paneer and gently toss, taking care not to break the cubes if you're using the homemade kind. Let the cubes marinate while you get the rest of your ingredients together and prepped.
Place a large nonstick skillet over medium heat, and add the paneer as the pan warms. In a couple of minutes give the pan a toss; each piece of paneer should be browned on one side. Fry another minute or so, and then remove the paneer from the pan onto a plate. You may have to complete this step in two batches. Use the flavored oil for the next step.
Add 1 1/2 tablespoons oil to the pan. Add the onions, ginger, garlic and chili. Now here's the important part: saute the mixture until it's evenly toffee-coloured, which should take about 15 minutes. At 10 minutes, add tomatoes and press with spatula to make a paste. Don't skip this step - this is the foundation of the dish! If you feel like the mixture is drying out and burning, add a couple of tablespoons of water.
Add the garam masala, coriander and cumin. If you haven't already, sprinkle a little water to keep the spices from burning. Cook, stirring often, until the raw scent of the spices cook out, and it all smells a bit more melodious, 3 to 5 minutes. Transfer to blender and add cashews.
If using frozen spinach, thaw the spinach in the microwave in a microwave-safe dish, 5 minutes on high. If using fresh spinach, put fresh spinach into the blender and blend, adding water as needed to loosen mixture.
Add the spinach mixture back into pan and stir well. Add a little salt and 1/2 cup of water, stir, and cook about 5 minutes with the lid off. Add extra cayenne and garam masala at this step if necessary, but make sure to cook the mixture enough after to remove the raw spice smell.
Turn the heat off. Add the buttermilk and cream, a little at a time to keep it from curdling. Once the yogurt is well mixed into the spinach, add the paneer. Turn the heat back on, cover and cook until everything is warmed through, about 5 minutes. Malai Kofta is a rich Indian dish. It has fried dumplings made of potatoes and paneer (fresh Indian cheese) swimming in a creamy golden gravy. This vegan version is bursting with flavors and textures, perfect for special occasions! This recipe is best if prepared a day or two ahead. Make the gravy and koftas, then reheat and serve with a drizzle of cream and some fresh cilantro. Ingredients Malai kofta is a dish of dumplings (kofta) made from paneer and potatoes in a rich, creamy, cashew-tomato sauce. The name comes from the two ingredients - malai meaning milky or creamy and kofta being balls or dumplings. This is a classic Indian recipe and it is often served on special occasions like festivals or marriages. In this recipe, crumbled paneer is folded into mashed potatoes with raisins and cashews and then shaped into small, round koftas. Then the koftas are gently simmered in a fragrantly spiced cashew-tomato sauce. The result is a delicious dish that is fit for royalty! To make the gravy for this dish, you need butter, oil, whole spices (cloves, cinnamon stick, bay leaf and green cardamoms), onion, garlic paste, ginger paste, fresh mint leaves, cashew nuts, khoya (reduced milk solids) and Kasuri methi (dry fenugreek). You can also use homemade or store-bought paneer to prepare this curry. It is important to strain the pureed tomato and onion mixture before adding it to the pot, as this helps to create a smooth gravy. It is also a good idea to heat the gravy on a low flame so that it does not curdle. You can also add a few tablespoons of cream at the end of the cooking process, but it is better to do this after turning off the heat. Preparation The dish begins with preparing the koftas, which are balls of potato and paneer that are dunked in a rich tomato-based creamy gravy. Traditionally, the koftas are deep-fried but you can also bake or air fry them for a healthier option. The koftas are shaped from a mix of grated paneer and mashed potatoes, studded with raisins and nuts for that indulgent touch. The koftas are then lightly dredged in cornstarch which helps bind them together and absorbs moisture. It is important not to over-boil the potatoes or they will lose their shape and fall apart while frying. Similarly, the paneer must be very fresh to keep it’s shape and texture. To make the sauce, a mixture of cashews, tomatoes, onions and aromatic spices is sauteed in ghee. Once the ingredients have softened, they are blended to a smooth consistency and finished with a tad bit of sugar for sweetness. This creamy and delicious sauce is the soul of Malai Kofta Recipe. To finish the gravy, add salt, red chili powder, turmeric, coriander and garam masala, to taste. Finally, pour in a little cream and cook on low heat for 5-7 minutes. Once the koftas are ready, add them into the gravy and stir well. The curry is now ready to be served. It can be eaten with your choice of Indian flatbreads like garlic naan, kulcha or even jeera rice. Cooking A thick creamy gravy infused with cashews, onions and tomatoes is the base of this dish. It is mildly sweet and spiced with a generous amount of whole spices like cardamom, cinnamon and cloves. Butter and cream is also added to make the gravy silky smooth and rich. Boiled potatoes are used as a binding agent in the kofta, along with paneer. Corn flour is also added to help bind the paneer-potato mixture and prevent it from disintegrating during deep frying. To make the koftas crispy and golden brown on both sides, they are lightly fried in ghee/butter until it gets light brown. For a healthier version, the koftas can be baked in an oven at 400°F for 20 minutes instead of frying them in oil. This will give them a slightly crispier texture on the outside and still be deliciously soft inside. To make the gravy, heat 2 tablespoon of butter in a pan. Add the chopped cashews and saute them for a minute or so until they start to turn light golden. Add the onions and cook them till they become translucent. Now add the tomato puree and cook the mixture until all the water content evaporates. Once the mixture cools down, transfer it to a blender and blend until it becomes a smooth paste. Then strain the sauce through a fine sieve to get rid of any lumps. Serving A delicious North Indian vegetarian curry with kofta (puff balls of paneer) in a rich creamy mild gravy. Often served at restaurants or for special occasions like weddings, it is a treat for the senses. The word Malai literally means ‘a lot of cream’ while kofta refers to the fried paneer dumplings that are added in the gravy. There are many variations of the recipe but it always includes a generous amount of cream along with milk, spices and cashews for flavor. The kofta can be made ahead of time and stored in the fridge while the gravy is simmering on the stove. You can also bake the koftas instead of deep frying them for a healthy version. The koftas are traditionally made with paneer but you can also make them soy-free by using extra-firm tofu. To get that restaurant-quality smooth sauce, sieve the cooked ingredients after blending them. This step is very important as it ensures that there are no lumps in the sauce. The gravy can be made a day or two in advance and stored in an airtight container in the refrigerator. When you want to serve, just reheat the gravy and add a few koftas.
