Festive Vegan Vegetable Pie by Vegan Food and Living
Ingredients
For baking:
3 red peppers, seeded and quartered lengthways
3 medium potatoes, thinly sliced
oIive oil, as needed
salt and pepper, to taste
3 Tbsp rosemary
700 g shortcrust pastry (homemade or storebought)
flour, for dusting
For sautéing:
1 large brown onion, sliced
3 garlic cloves, crushed
60 g packed spinach or kale
150 g firm tofu
3 Tbsp nutritional yeast
0.50 tsp ground nutmeg
250 g mushrooms, thinly sliced
To assemble:
2 Tbsp olive oil or vegan butter, melted
Directions
Preheat the oven to 180°C/Gas Mark 4.
Place the red peppers on a lined baking tray. Drizzle with olive oil and season with salt and pepper.
Arrange the potato slices on another lined baking tray. Drizzle with olive oil and season with salt, pepper and rosemary.
Bake the peppers and potato in the oven for about 20 minutes or until they are both tender. Set aside.
On a floured surface, roll out 500g of the pastry to about 5mm (2/5in) thick. Transfer the pastry to a 20cm (8in) deep cake tin. Press the pastry against the bottom and sides to form a crust. Cut off any overhang. Use a fork to prick the bottom.
Bake the pie crust in the oven for 10 minutes and set aside.
Meanwhile, sauté the onion and garlic with a little olive oil until soft and fragrant. Set aside half the mixture.
Add the greens to the saucepan with half of the onion and garlic mixture and cook until wilted. Set aside in a food processor.
Add the mushrooms and remaining onion and garlic mixture to the saucepan. Cook until soft and fragrant. Season with salt and pepper and set aside.
Add the firm tofu, nutritional yeast and nutmeg to the spinach or kale mixture. Pulse until the mixture forms coarse crumbs. Season with salt and pepper and set aside.
To assemble the pie, press the spinach or kale and tofu mixture into the bottom of the pie. Layer with the peppers, then potatoes then the mushroom mixture.
Roll out the remaining pastry on a floured surface in a circular shape. Transfer the pastry to cover the pie and cut off the overhang. Press the edges together. Use any excess pastry to make shapes for decoration.
Brush the top of the pie with melted butter or olive oil and bake for 30 minutes or until the top is golden brown. Leave the pie to cool in the tin for 20 minutes, then take it out to cool.

sophia do u have any vegetarian/vegan holiday recipes 🤲🏼
I'm so glad you asked, of course I do!
Some of these things are from my cookbooks, so anything with a book emoji will be shown below the read more just to save space
Starting with desserts:
Vegan chocolate pie (Nora Cooks) - my favorite one to make for thanksgiving, my family (all meat eaters) loves it so much that I end up making two every year! It's really important to use the tofu that comes in aseptic packaging (the kind that's shelf stable) because the refrigerated kind WILL taste like tofu and you don't want that lol...works great in an Oreo crust or just as a mousse too!
Chocolate pecan pie (Isa Chandra Moskowitz)
Cranberry Spice Oatmeal Cookies (Isa Chandra Moskowitz) - these have great flavor but I recommend subbing butter for coconut oil so they don't spread super thin
Vegan Coffee Cake (Vegan Richa) - great for breakfasts! You could easily make them into coffee cake muffins too
📚 Pastry Crust (Isa Chandra Moskowitz's The Superfun Times Vegan Holiday Cookbook) - great staple pie crust that gets its flakiness from a mix of olive and coconut oils! I use this for savory stuff like quiches and pot pies too. Highly recommend the cookbook, it covers everything from Valentine's Day to Passover to Halloween!
📚 Chocolate Gingerbread Cookies (Isa Chandra Moskowitz's Isa Does It cookbook)
📚 Chai Spice Snickerdoodles (Isa Chandra Moskowitz's Isa Does It cookbook)
Savory Thanksgiving & Christmas things:
Easy Vegan Gravy (Nora Cooks) - really simple & much better than the store bought stuff
Easy Vegan Quiche (Jessica in the Kitchen) - more for lunch/brunch than anything, but I like to make a couple these around the holidays because they're so easy to customize & put together
Vegan Alfredo Sauce (Purely Kaylie) - you can put this on pasta of course but I like to use this to fold into mashed potatoes or make a gratin with during the holidays!
Green Bean Casserole (Isa Chandra Moskowitz) - made this one year at the request of a family member, it came out great!
📚 Maple-Mustard Brussels Sprouts with Radicchio and Pecans (Isa Chandra Moskowitz's I Can Cook Vegan cookbook)
Creamy Polenta and Mushroom Ragout (Good Food) - just comfort food tbh!
📚 Glazed Tofu Ham (Isa Chandra Moskowitz's The Superfuntimes Vegan Holiday Cookbook) - I swear by this and make several before thanksgiving because I inhale them - imo works better as a filling for sandwiches or on the side for breakfast, but could be used as a main dish as well!
📚 Winter Squash Cups with Wild Rice, Hazelnuts, and Cherries (Isa Chandra Moskowitz's The Superfuntimes Vegan Holiday Cookbook) - made this once and used cranberries instead of cherries!
Some Hanukkah stuff! which I highly recommend trying even if you don't celebrate Hanukkah, my family does a mixed holiday celebration so I keep these in my rotation for those occasions:
Latkes and Vegan Sour Cream (Isa Chandra Moskowitz) - can also dip in applesauce or top with caramelized onions if you prefer sweet!
📚 Raspberry Rugelach (Isa Chandra Moskowitz) - classic, chocolate, and raisin variations from her holiday cookbook
📚 Matzoh Ball Soup (Isa CHandra Moskowitz)
And I have to include a couple heavy hitters, these are for if you're serious about spending a lot of time in the kitchen and maybe want to show off a little lol - well worth the effort, but not for everyone!
Succulent Roast Turky (The Gentle Chef) - I haven't tried a seitan turkey that's come close to being as good as this one. Lots of time & ingredients, but well worth the effort
Anything from Miyoko's Artisan Vegan Cheese cookbook - the best vegan cheese you will ever eat. Requires a couple weeks prep because you have to allow time to ferment the base liquid and culture the cheese - I'm starting mine today! I made a detailed post about my experience trying this out here, and there's images with instructions for making the rejuvelac, cashew base, and a Boursin-style cheese in it as well! Of course if you don't want to do all that you can buy the Miyoko's cheese that's sold in stores, those are great too 😅
Peter Reinhart's Bagels (Smitten Kitchen) - if you suffer from lack of good bagels in your area, this is one way to fix that! Bagels are essential to any holiday celebration in my family so I figured I'd include this lol
Here's the stuff from the cookbooks!
Pastry Crust:
Chocolate Gingerbread Cookies:
Chai Spice Snickerdoodles:
Maple-Mustard Brussels Sprouts with Radicchio and Pecans:
Glazed Tofu Ham:
Winter Squash Cups With Wild Rice, Hazelnuts, and Cherries:
Vegan Sour Cream:
Rugelach (Classic, Chocolate, and Raisin variations highlighted):
Matzoh Ball Soup:
#this is so much information SORRY#i sorely needed to get organized for thanksgiving though so this has been helpful lmao#also i'm not sure why the read more isn't working on desktop sorry everyone 😭#recipes

Cheesy Spinach Quiche Recipe!
New recipe time! This time, I tried out a recipe for making spinach mushroom quiche!
The crust came apart easily, being graham, but it still came out delicious!
One thing I didn't realize while buying my ingredients was that the recipe actually calls for making your own pie crust, but I just went with a pre-made graham crust from a store. This worked out fine, let me skip the first four steps of the recipe and get right into making the quiche filling. when you DO pour it all in, the pie crust and tin may end up really full and almost overflowing, so I strongly suggest putting your quiche in a larger surrounding baking pan before putting it in the oven. I also did fine using pre-shredded cheese that comes in the little baggies, not wanting to deal with the awful mess that comes form cheese graters. And for the garlic, I didn't need to cut it super small, just make sure you remove as much of the flaky skin as possible and cut off the hard/pointy ends on every little garlic bit! With cooking they should come out nice and soft no matter the size.
Shot of the mushrooms and garlic post-cooking. Yummy!
It'll look like a big mess before it goes into the oven, but it comes out big, fluffy and tasty!
This recipe is not vegan friendly (contains eggs and milk), nor gluten free (contains a pie crust), but it is vegetarian safe.
You can get the recipe here!

top five foods you'd feed glen powell. (this is unhinged, i'm sorry, i've had an entire bottle of wine.)
[ask me my top five anythings!]
His fridge tour in that Men's Health video was a product placement travesty - where's the food??? you live off Cali Water??? - as were most of those vague non-answers where he never actually mentioned what he ate. (My favorite part of those MH himbo videos is the what's in your fridge/what do you eat segments!)
Cheese! This "I don't eat cheese, it is moldy queso" business does not fly with me unless you physically cannot eat cheese for fear of death or veganism. The only instance of "I could fix him" I would ever employ in another human being would be to inspire an appreciation of cheese. Eat a pizza, buddy! Have some lasagna! Gnaw on some aged cheddar. Bake up some Brie. Let Halloumi into your heart. (I also don't understand how a person can be that into college football and not eat nachos. 90% of why I watch the Super Bowl is so that I have an excuse to make nachos! Also is his dislike of cheese limited to savory applications? Is he going through life not eating cheesecake? That's sad.)
Carbs for breakfast! I was tempted to try that sweet potato base breakfast situation he had going on but it did not look appetizing. (Maybe he's a bad cook?) Put it on a croissant! Have a classic bagel & lox sandwich with some nice tomato, capers, red onions. I need more hot men to shill for Russ & Daughters like Jake Gyllenhaal.
The product placement Doritos so we can hang out with Danny Ramirez.
A proper slice of pie, not that garbage Netflix handed him for Hit Man promo that didn't even have an egg wash on it.
I do not know what foods are on a craft services table, but what I'm setting down is chocolate bread pudding (I make the best) or Claire Saffitz's giant ass chocolate chip cookie from Dessert Person. (Each scoop is a quarter cup! It is the size of your hand but so delicious.)

These savory baked goods add another layer of variety to a bakery’s offerings, ensuring there's something for every kind of customer.
7. Seasonal and Special Offerings
To keep things fresh and exciting, many bakeries also offer seasonal or limited-edition products, such as pumpkin pies in the fall, peppermint bark at Christmas, or heart-shaped cookies for Valentine’s Day.

Pizza-Making Classes with a Twist: Unique Flavors and Toppings
Traditional pizza will always have a special place in the hearts of food lovers, but for those who crave something more adventurous, pizza-making classes with unique flavors and toppings offer an exciting alternative. These classes focus on experimenting beyond the standard tomato, mozzarella, and pepperoni, inviting participants to explore an array of non-traditional ingredients and bold flavor combinations. Whether you’re a pizza enthusiast or someone seeking a creative culinary experience, these specialized classes add a refreshing twist to the art of pizza-making.
Why Take Pizza-Making Classes with a Twist?
Pizza-making classes that emphasize unique toppings and flavors are ideal for foodies who enjoy trying new things and breaking away from the norm. These classes not only cover the basics of crafting a delicious pizza but also push participants to step outside of their comfort zones. You’ll learn how to balance bold and unexpected flavors, experiment with global ingredients, and create pizzas that taste as extraordinary as they look.
These classes are particularly popular for groups, couples, and corporate events because they encourage creativity and fun. Rather than sticking to classic recipes, participants have the freedom to craft something one-of-a-kind, making these pizza-making sessions memorable experiences that spark both culinary curiosity and community.
Exploring Global Flavors
One of the highlights of these unique pizza-making classes is the chance to explore global flavors. Instructors introduce participants to ingredients and styles from around the world, allowing them to infuse a variety of cuisines into their pizzas. Imagine a Mediterranean-inspired pizza topped with feta, olives, sun-dried tomatoes, and a drizzle of olive oil, or a Japanese-inspired pizza featuring teriyaki sauce, seaweed, and thinly sliced mushrooms.
Another popular variation is Mexican-inspired pizzas, topped with spicy chorizo, black beans, jalapeños, and fresh avocado slices, offering a fun and flavorful departure from the traditional Italian style. These globally inspired creations not only satisfy cravings for something new but also offer an opportunity to learn about different cultural flavor profiles and cooking techniques.
Unique Toppings and Flavor Combinations
In these specialized pizza-making classes, the toppings go well beyond the usual ingredients. Think about experimenting with caramelized onions, figs, goat cheese, and a balsamic glaze for a sweet-and-savory combination, or adding truffle oil and wild mushrooms for a rich, earthy flavor. For meat lovers, classes often introduce options like prosciutto, spicy salami, and smoked sausage, which bring out bold flavors when paired with unique sauces.
Vegetarians can get creative with toppings like roasted bell peppers, artichokes, zucchini, and even fruits like pineapple or apple slices paired with cheddar or brie. These pizzas often incorporate various fresh herbs and spices, allowing each participant to tailor their pie to suit their personal taste. Some classes even offer vegan cheese and gluten-free crust options, ensuring everyone can join in the fun of creating unique and tasty pizzas.
Customizing Sauces and Crusts
One way these pizza-making classes create truly unique flavors is by allowing participants to experiment with different sauces and crusts. Instead of sticking to traditional tomato sauce, instructors might introduce alternatives like pesto, garlic cream, or even pumpkin puree as a base. These sauces add layers of flavor and complement a variety of toppings, transforming the pizza into something entirely unexpected.
Crust customization is another exciting aspect. For a healthier option, some classes offer whole wheat, cauliflower, or gluten-free dough. Others might introduce stuffed crusts filled with cheese, garlic butter, or herbs, giving the pizza a delicious twist from the very first bite. The options are endless, and the creativity involved in customizing each element is what makes these pizza-making classes so enjoyable and unique.
Perfecting Techniques for Creative Pizzas
Instructors in these classes teach essential pizza-making skills like kneading, dough shaping, and getting the perfect bake. However, there’s also a focus on techniques that specifically enhance unique flavor combinations. For instance, participants may learn how to caramelize toppings, work with fresh herbs, or create toppings that add a perfect touch of crunch. The cooking techniques covered in these classes ensure that each pizza isn’t just interesting in flavor but also well-crafted in texture and presentation.
An Interactive and Social Experience
These creative pizza-making classes are as much about having fun as they are about cooking. Since participants are encouraged to think outside the box, the environment is typically lively and interactive. Group members can compare creations, swap ideas, and even compete to make the most inventive pizza. For couples, it’s a perfect way to collaborate on something delicious, while families and friends can enjoy the experience of working together on unique culinary creations.
Pizza-making classes with a twist often end with a tasting session where everyone can sample the different creations. This brings a sense of satisfaction and community as participants get to enjoy their one-of-a-kind pizzas together.
Conclusion
For those looking to elevate their pizza-making skills and explore new flavors, pizza-making classes with unique toppings and global ingredients are a fantastic option. These classes combine culinary creativity with hands-on learning, inviting participants to break free from tradition and explore flavors that range from savory and spicy to sweet and fruity. From customized sauces to globally inspired toppings, these sessions make pizza-making an unforgettable experience that goes well beyond the ordinary.

Thanksgiving Grocery Essentials: What to Buy
Thanksgiving is all about gathering with loved ones, sharing gratitude, and enjoying a delicious meal. Planning the perfect feast requires organization, preparation, and, most importantly, a well-thought-out shopping list. Whether you’re hosting your first Thanksgiving or are a seasoned pro, this guide will help you shop efficiently and ensure you don’t miss a thing.
From appetizers to desserts, every dish plays a crucial role in creating a memorable Thanksgiving experience. Below is the ultimate shopping list broken down into categories to simplify your preparations.
1. The Star of the Show: The Turkey
No Thanksgiving table is complete without a turkey. Here’s what to consider:
Fresh or Frozen Turkey: Choose based on your preference and the number of guests. A fresh turkey is quicker to prepare, but a frozen one offers more flexibility.
Turkey Alternatives:
Ham
Vegan substitutes like Tofurky or Field Roast
Pro Tip: Don’t forget to order your turkey in advance, especially if you want a fresh one!
2. Stuffing and Gravy
Stuffing adds heartiness to the turkey, while gravy ties everything together. Here’s what you’ll need:
Stuffing Ingredients:
Pre-packaged stuffing mix or bread cubes
Onions, celery, herbs (like sage and thyme)
