Roasted Cauliflower and Leek Quiche (Vegetarian)
Leftover Roasted Cauliflower and Garden Leeks make a hearty, fragrant and vibrant Roasted Cauliflower and Leek Quiche, a tasty picnic if you're on your way home from a long weekend! Happy Monday!
Ingredients (serves 4 to 8)
2 large Garden Leeks
1 tablespoon unsalted butter
½ tablespoon olive oil
450 grams/1 pound chilled Pâte BrisÊe
6 large eggs
ž cup crème fraÎche or sour cream
Âź cup semi-skimmed milk
Âź teaspoon salt
½ teaspoon freshly cracked black pepper
1/4 teaspoon Garam Masala
1/4 teaspoon ground turmeric
3/4 cup to a cup leftover Turmeric and Cumin Roasted Cauliflower
Thoroughly rinse Garden Leeks under cold water, removing any dirt.
Melt butter with olive oil in a nonstick skillet over medium heat. Cut Leeks into thick slices and add them to the skillet. Cover with the lid, and cook, 5 minutes. Flip leek slices on the other side, cover with the lid, reduce heat to medium-low, and cook, a further 5 minutes. Remove from heat, and let cool completely.
Preheat oven to 200°C/395°F.
Roll Pâte BrisÊe out thinly onto a lightly floured surface. Fit into a buttered 26cm/10.25Ⳡtart pan, letting the pastry overhang on the edges. Prick the base with a fork. Place a sheet of baking paper onto the Pâte BrisÊe and fill with dried beans or rice. Blind bake the Pâte BrisÊe crust  at 200°C/395°F, 10 minutes. Carefully remove the beans and baking paper, and bake another 5 minutes, at the same temperature. Remove from the oven. Let cool slightly before trimming the edges.
In a medium bowl, whisk eggs together with crème fraÎche. Whisk in milk, salt and black pepper. Stir in Garam Masala and turmeric.
Arrange cooled Leeks onto the tart crust. Cut Roasted Cauliflower into chunks, and scatter them liberally on top. Pour egg and cream mixture evenly all over.
Place in the warm oven, and bake, at 200°C/395°F, 25 to 30 minutes, until cooked through and crust is beautifully golden brown.
Serve Roasted Cauliflower and Leek Quiche warm or cold, with dressed lettuce.

Iâm always looking for easy ways to improve my familyâs health and seasonal eating is one of the best. We donât drive ourselves crazy over it but try to enjoy dreaming up recipes based on whatâs at the farmerâs market or in the garden. And itâs not as hard as it seems! Seasonal eating comes naturally when you simply change your mindset and get in touch with where your food comes from.
Why Eat Seasonally?
Eating seasonally has many benefits:
Taste â In-season produce is often much tastier than out of season produce because it doesnât have to be shipped as far (or at all) and can ripen for longer on the plant.
Health â For the same reason that in-season produce tastes better, itâs also generally higher in nutrients.
Support Local Economy â Eating in-season means you can support the local economy and your local food growers by buying from local farmers instead of the grocery store.
Cost â Eating seasonally also means youâre buying food when itâs least expensive, saving on your grocery bill.
Because I keep a garden, seasonal eating is a necessity. But itâs also a lot of fun to find whatâs coming into season in the grocery store or farmerâs market and figure out how to use those items.
How to Eat Seasonally (& Have Fun Doing It)
Moms are often already stretched thin, so adding one more thing to the to-do list can be very overwhelming. Luckily seasonal eating doesnât have to be another to-do list item. It can be a fun addition to a healthy lifestyle.
Hereâs how:
Have a Plan
Having a plan for using seasonal produce is important. If you donât normally meal plan, now might be a good time to start. I use Real Plans to plan out my familyâs weekly meals. Itâs much simpler than doing it myself and Real Plans automatically serves up seasonal recipes!
Think Differently
To start eating seasonally youâll have to change your mindset a bit. Instead of eating blueberries every other week throughout the year youâll have to find interesting ways to use them in the summer when theyâre in season (or frozen ones at other times).
Donât Overcomplicate
When it comes to finding seasonal recipes for the produce youâre growing or buying locally, keep it simple. Donât try to cook complicated dishes before youâre comfortable with using certain ingredients together. Stick with simple recipes and build your skills and knowledge base slowly.
What to Do With Seasonal Produce
Once you start to buy produce seasonally, youâll realize that you end up with a lot of one thing at a time.
Here are some ideas for dealing with large amounts of seasonal produce:
Learn to preserve â If you can buy or grow lots of tomatoes in the summer, learn to can or freeze them for the winter. Do the same for other produce you find in-season. If canning isnât your jam (pun intended), try pickling, freezing, drying, or fermenting to extend the life of in-season foods.
Adjust to eating more when itâs fresh â We tend to eat the foods we like at regular intervals all year. But seasonal eating asks us to eat a lot of one item when itâs fresh (and little or none at other times of the year). That means we might eat lots of berries in the summer, but stick with citrus fruits in the winter.
Bake with the extra â Another option is to make sweet breads, muffins, casseroles, and quiches with whatever you have a lot of and freeze those for later.
When I get a large harvest from my garden or the farmerâs market I do all three of these things! It gives the kids something to look forward to (all the strawberries you can eat in June!) and adds routine to the year.
Whatâs in Season Now?
What produce is in season depends on where you live in the world. The easiest way to know whatâs in season is to go to your local farm or farmerâs market and see what they are producing. You can also check a state-by-state seasonal food guide.
But local foods are not the only in-season foods. Foods that travel from other climates also have a season.
For example, most Americans canât buy local citrus fruits, but the winter is the best time to get them at their freshest and lowest price. Hereâs what to look for at the grocery store or farmerâs market for the freshest produce year-round:

For most people, January is a time of rest and reflection. The garden has long been put to bed and the season calls for warm soups and stews as well as lots of starchy vegetables. Hereâs whatâs in season in January:

CARBOHYDRATES AND ITS EFFECT ON HEALTH
Carbohydrate foods
Carbohydrate-rich foods facilitate, after eating, the rapid rise in blood sugar levels (blood glucose). This and many more of its disadvantages are the reason it is advised to be taken in lesser quantities when on a ketogenic diet, it is important to study the workings and some key symptoms when on a ketogenic diet.
Consequently, although carbohydrates can be a quick source of energy for the body, the health benefits are low, so it is advised not to include them frequently on the menu.
List of foods high in carbohydrates
Below, you will see a list of foods with carbohydrates (carbohydrates) and their ratio per 100 grams of the edible product, classified as:
 rich in carbohydrates (those in which they account for more than 50% of their content),
media (around 15-20%),
with few carbohydrates (less than 15%)
without carbohydrates (0 to 1%).
Foods that have 50 grams, or more, of carbohydrates per 100 grams of food are considered high in carbohydrates:
White sugar, brown sugar.
Tapioca, cornmeal, wheat, oats or rye, barley, gofio.
White or brown rice.
Cornflakes, Weetabix or muesli cereals.
Pasta (eg macaroni) and dough (puff pastry, etc.).
White bread, cookies, biscuits, pastries, pastries, pastries.
Honey, fresh and dried dates.
Chocolate with or without milk, chocolates, nougat.
Raisins, quince, dried figs.
Lentils, dried beans, dried beans.
Skimmed milk powder, sweetened condensed milk
Medium carbohydrate foods
They are those that have between 16 and 49 grams of carbohydrates per 100 grams of product:
Marzipan, apple pie, fruit ice cream, creamy ice cream.

 They are those that have between 2 and 15 grams of carbohydrates per 100 grams of product:
 Flavored yogurt, or liquid, or skimmed, or natural, or with cream (Greek), cream, goat's milk, whole or semi-skimmed cow milk, chantilly, curd.
Burgos cheese, skimmed white cheese, Petit-Suisse cheese, fresh cheese mg. 20%, Speisequark cheese, goat cheese.
Rice with milk without added sugar.
Acedias fries, cooked beets.
Cocoa powder, instant coffee, coffee extract powder.
Tomato, fried tomato, avocado, carrot, cucumber, pepper, leek, cooked periwinkle, onion, fresh or canned peas, broccoli, broccoli, zucchini, thistle, cabbage, red cabbage, cauliflower, artichokes, eggplants, squash, Brussels sprouts, canned palms , radish.
Kiwi, tangerines, orange, grapefruit, lemon, pears, watermelon, melon, peach, apricot, persimmon, rosewood, cherries, apple, pineapple, banana, raspberries, strawberries, acerola, green figs.
Hazelnuts, walnuts, almonds, Brazil nut, roasted peanuts, pistachios.
Beef burgers, Frankfurt sausages, pork liver, pork liver, veal liver, salami, sausage, pork sausages, fried chicken, meat extract.
Gatorade, tonic water, packaged lemonade, cider, Porto wine, dried vermouth, white wine, Lager beer, black beer, champagne, anisete.

Turbot, breca, cicada, pout, horse mackerel.
Chicken liver, cooked ham, pork rinds.
Eggs, hard boiled egg.
Brie cheese, portioned cheese, cured Manchego cheese.
Wine vinegar.
Foods without carbohydrates
Foods without carbohydrates are those that have a gram or less per 100 grams of product weight:
 Oils (olive, soy, sunflower, corn, peanut, coconut), olives.
Clams, chirlas, cockles, crab, shrimp, lobster, shrimp, mussels, barnacles, scallops.
Canned anchovies, eel, eels, herring, canned tuna, fresh tuna, fresh or salted or dried cod, sea bream, mackerel, caviar, spider crab, crayfish, conger, gilthead, emperor, rooster, sole, whiting, monkfish, fresh salmon, or smoked, fresh sardines, or canned tomatoes, or in oil, sepia, trout, frog legs.
Bacon, sausage, foie gras, pork loin stuffed.
Horse meat, goat, kid, fat or lean pig, rabbit, lamb, sheep, veal, cow, land snail, lamb, or beef heart, pheasant, oxtail, chicken, canned sausages, beef blood, pork brains, or lamb, or veal, bacon.
Pigeon, duck, turkey, partridge, pigeon.
Coffee infusion, tea infusion, Diet-Coke, ligth soda.
Mushroom, mushrooms boletus edulis, mushrooms cantharellus, mushrooms colmenilla, truffles.
Parsley, turnip greens.
Red wine, cognac, rum, gin.
Egg liquid yolk, dry beer yeast.
Lard, butter, industrial margarine, or vegetable, mayonnaise.
Blue cheese, or Babibel, Camembert, chĂŠdar, emmental, gouda, gruyere, mozzarella, parmesan, Pyrenees, Roquefort, fresh manchego, or semi-cured.
Water, salt
Foods with few carbohydrates are what you can eat in the ketogenic diet, high in fat, and often used to lose weight.
 Notwithstanding these values, if you suffer from diabetes mellitus you should take into account when preparing your meal, in addition to the grams of carbohydrates that each of the foods have, also the glycemic index (GI).
 Glycemic food index (GI). Good and bad carbohydrates
The glycemic index measures the intensity and speed with which foods containing carbohydrates raise the level of glucose in the blood (glycemia) after ingestion.
Consequently, foods with a high glycemic index raise blood glucose faster than others with a low glycemic index.
 For example, whole wheat bread will have a lower GI than white bread, or pastries, which have it higher.
Diabetics should eat foods with a low glycemic index and only occasionally, better not daily, can ingest those of medium GI for what these lists will be useful, accompanied by the corresponding suggestions of their specialist (doctor or nutritionist).

Some Healthyish Ideas for the New Year
âŚAnd weâre back! Happy 2020!! Sorry for the long hiatusâwhew, itâs been busyâwhat with catching up with family, getting our house ready for the Big Sell, dealing with a lovely little bout of strep throat on New Yearâs Eve (ugh!), and returning a certain someone to college, but itâs back to business now. Missed you guys!!
How do you feel about resolutions? Iâm all for self improvement (lord knows I need some) but in terms of foodie ones, I just canât get behind any really restrictive diets, like the very popular intermittent fasting fad or something like Whole 30, where I canât have any sugarđđ. Donât mean to knock them if they work for you, but for me, dealing with the post-holiday decadence, is more about returning to good, clean, low-carbish foods.
So thatâs what Iâve got for you today-a list of some of my tried and true favorites over the years for breakfast, lunch, dinner and snacks that keep me happy, healthy and hopefully lighter too!
Hereâs hoping they help you achieve whatever goals youâve set!

Itâs all about the balance or at least thatâs what I keep telling myself!!

cabbage and mushroom âlasagnaâ
In July, because I make no sense at all, I decided to knock an item off my To Cook list thatâs been there since 2010, a golden, bubbling, layered dish of mushrooms, cabbage, thinly sliced potatoes bound with a bechamel sauce and topped with cheese. Talk about beach eats!
But a craving is a craving and I made it with the thought that we could try it, then freeze the rest until that whole December â January zone when the sun sets at approximately 3:32pm and the only way to endure it is to channel some Scandinavian coziness and make it, like, fashion. Candles! Thick sweaters! Tea, a good book, and soft music. Long-cooked winter vegetables snug in a rich casserole.
Instead, over a few days we finished the whole thing because itâs completely amazing. The recipe comes from the Marcus Jernmark, the Swedish chef who, at the time, helmed Aquavit, a high-end Scandinavian restaurant in midtown. The recipe made its way into a column by Elaine Louie that briefly ran in the New York Times called âThe Temporary Vegetarianâ that I followed with devotion. Itâs not like a decade ago was dark times for vegetarians, but this column had a freshness to it, focusing on vegetable-forward and varied dishes with home cooks in mind, a few years before its time. (It later became a book).
Jernmark explained that in the fall in Sweden, they eat cabbage, kale, and mushrooms, and he wanted to turn them into a seasonal, homey take on lasagna. Because Iâm a pedant, Iâm not entirely sold on the name. It seems as much a potato and vegetable gratin as anything else but Iâm leaving it because itâs layered, and I have a thing for lasagnas outside the red sauce and ricotta cheese box, anyway.
Itâs a bit of work, as can happen when three vegetables and a sauce are involved, but itâs honestly the perfect dish for laying low on a cold weekend: lush but not as nap-inducing as pasta-ed versions. And itâs excellent. The photos donât do it justice, but itâs cooked cabbage, guys. Itâs doing its best.

There are three key things to know going into this dish:
Seasoning is really key here. Itâs winter vegetables, butter, milk, and cheese; it will not naturally boom with flavor. Make sure every element is gets the necessary salt and pepper and it will add up to something wonderful.
I found mine got a little watery as it baked, because cabbage is watery. You can baste a little out, if you wish, or you can just let it go. As it cools, most will settle back around the vegetables and it shouldnât seem too wet.
I almost didnât share this recipe because itâs got a bunch of steps, and a lot of vegetables to chop (the dish is all vegetables, after all), and thought nobody would want to make it, but itâs too delicious not to. So do as I do, put on your headphones, queue up The Miseducation of Lauryn Hill, try to get your head around the fact that itâs now 20 years old, and youâll be done before Mary J. Blige shows up.
9 tablespoons unsalted butter, divided
3 tablespoons plus 1 teaspoon all-purpose flour
2 2/3 cups whole or lowfat milk
1/4 teaspoon freshly ground nutmeg
Salt and ground black pepper
1 medium onion, chopped
1 garlic clove, minced
1 pound assorted (shiitake, oyster, porcini, chanterelles, etc.) or just cremini mushrooms, thinly sliced
1 tablespoon finely chopped fresh sage (I used less)
2 pounds Napa cabbage, 12 large leaves removed from the head, and reserved, the remainder sliced thin
1/2 cup dry white wine
1 1/2 pounds (about 4) yukon gold potatoes, sliced 1/8-inch thick
1 cup grated Parmesan cheese, or Västerbotten (the chefâs preference).
Heat oven to 350 degrees.
In a large sautĂŠ pan over medium heat, melt 6 tablespoons of the butter. Add flour, stir for 3 minutes (do not allow to brown), then gradually whisk in milk, stirring until thickened, 5 to 8 minutes. Stir in nutmeg and season with salt and pepper to taste. Scrape sauce into a bowl, and reserve.
Wipe out sautĂŠ pan (rinse if needed) and melt 2 tablespoons of the remaining butter over medium heat. Add onion and garlic, and sautĂŠ until onions are translucent. Add mushrooms, sage and sliced cabbage, and sautĂŠ until fragrant and the cabbage is tender, 10 to 12 minutes. Add wine and sautĂŠ until it has evaporated. Add reserved sauce and simmer for 10 minutes. The mixture should be very thick. Season with salt and pepper to taste.
While the mushroom and cabbage mixture is simmering, pour 6 cups of water into a stock pot, and bring to a boil. Add whole cabbage leaves, and blanch for 2 minutes. Drain under cold water, and pat dry on towels.
Grease a 9-by-9-inch baking dish or a lasagna pan of your choice (I used this) with remaining 1 tablespoon of butter.
To assemble the lasagna, line the bottom of the dish with half the cabbage leaves, and top with half the potatoes, half the creamed mushrooms. Repeat the layering of cabbage, potatoes and mushrooms, and top with grated cheese. Cover snugly with foil, and bake for 30 minutes. Uncover, and bake until the top is golden brown and potatoes are tender, about 20 minutes but up to 10 minutes longer if needed. Allow to cool for 10 minutes, and serve.
Do ahead: I prepared the sauce and all of the vegetables and then ran out of time when I made this, stashing them in the fridge separately and baking it the next day, which works totally fine. You can also make the dish, chill it, and bake it when needed, and leftovers reheat well too. Finally, you could freeze the whole dish for a later date.
