Rhubarb Breakfast Parfait
Ingredients (serves 1):
half a large fresh rhubarb stalk, rinsed
half a lemon
1 tablespoon caster sugar
1/4 cup Nut and Seed Granola
1/2 cup Greek Yoghurt
Cut rhubarb stalk into chunks, and add them to small saucepan. Thoroughly squeeze in the juice of the lemon halve.
Heat over a medium flame, about 3 minutes until softened. Sprinkle sugar over the rhubarb, and cook, 3 to 4 minutes more, until rhubarb is soft, and juice has just become syrup-y. Remove from the heat.
Spoon most of the Nut and Seed Granola at the bottom of serving glass. Top with half of the Greek Yoghurt and half of the stewed rhubarb. Repeat with remaining Yoghurt and rhubarb. Sprinkle with reserved Nut and Seed Granola.

Delightful delicious tasty sounding recipes beautifully illustrated with gorgeous photographs to showcase this vegan cookbook filled with recipes I wouldn’t mind trying.
What I liked:

* The way the recipes are set up and that they seem easy to follow
* That most ingredients are easy to find in most countries – though not currently here in Lebanon
* That there are basics like how to make plant milks and other stapes
* The breakdown of the chapters
* The variety and creativity of the recipes
* That the recipes appear to be ones that children and adults would like
* That there were several recipes I would like to try making

HEY HEY HEY! Very important question. If the sanders sides in your fics were meals/drinks on a menu what would they be? I kept reading wyliwf and picturing like. The loganberry parfait. Patton cakes. Etc💖:)
oooooooooooooohhhh that's a great question! idk if i have punny names, but after considering it for a minute, i do have food associations, and as such:
lavender for luck (which has skewed dessert-themed, for some reason?)
virgil as sour cherry pie: sour at first taste, tempering out to sweetness, protected by a good crust and a cautiously-woven lattice; this feels very virgil to me, for whatever reason.
patton as homemade cosmic brownies: perhaps a touch childish, but a definite comfort and familiar to all, with colorful bits of fun and, perhaps, made with a bitterer dark chocolate rather than a milk; this feels very lfl!patton, to me.
logan as bergamot lemon earl gray tart: as lemony snicket once said, "tea should be bitter, and as sharp as a two-edged sword." traditional flavors that nonetheless make something intriguing and, well, sharp—logan's intelligence and his (somewhat rigid) ways get a bit looser when combined with other ingredients. (it's a metaphor, it's a work in progress, it's a work-in-progress metaphor)
roman as fritters with lemon mousse and strawberries: listen. a bit over-the-top, a bit ridiculous to order at a regular diner, but no one can deny that they're good—flashy and full of substance, that's our roman.
dee as anise rhubarb compote: unusual flavors, a part of a recipe that's recommended to be paired with something else; poor dee in this au feels a bit incomplete after the death his brother, but he certainly knows how to make a statement on his own.
cora as hummingbird cake: a classic! old ladies love it! i can't really give you metaphors here this one is Exclusively Vibes!
wyliwf (which is based off food flavors i tended to mention with their character in the wyliwf canon):
patton as, obviously, hot cocoa/coffee: starts off sweet, ends out bitter. one would typically think of patton as a happy-go-lucky good guy, but he's had his share of hardships and struggles that don't stop him from being, well, sweet. however, he does sometimes use that sweetness to overshadow his more complex emotions.
logan as caramel-crumb coffee cake: a birthday breakfast, but caramel fits logan to me: you have to follow precise, scientific measures to burn sugar to get caramel to the exact right consistency. caramel, paired with the bitter taste of coffee—idk, there's just something that fits here.
roman as cherry-flavored anything, but particularly cherry pie/cherry ice cream: honestly, at first, my thought was roman red, cherry red, but really—sweet fruit around a hard pit. roman's made of tough stuff, but that doesn't stop him from being a crowd-pleaser.
virgil as lasagna: made with a lot of layers, sometimes difficult to make from scratch but often with another person's recipe, lasagna has a lot of substance and is comforting to those who invest the time.
janus as mille-feuilles: literally, thousand layers. unlike virgil's lasagna, mille-feuilles are notoriously fussy to get exactly right, and it will refuse to turn out right unless you approach it in a very specific way. however, when it does turn out right, people agree it is incredibly delicious and well worth the effort. there is absolutely a metaphor in there for janus.

Some Ideas for Mother's Day 2020
Let’s talk Mother’s Day. For most of us, it’s going to look a lot different from years past. And while I don’t really care about the holiday per se (it’s actually always kind of seemed kind of fake and cheesy to me) I will miss getting to see ⅔ of my kids (the ⅓ daughter is at home, seemingly stuck with us forever, poor thing!) as well as the rest of my extended family, celebrating as we always have, with a brunch or barbecue and sometimes both!
This year it’ll have to be over Zoom or Facetime or maybe with a driveway chat, as we all stand 6 feet apart, but I still have a feeling that good food will play a major role, even if we can’t all consume it in the same space. So with that thought in mind, I put together a list of sweet treats, that practically any mom I know would love and a few thoughts for how to spoil the moms in your life, even with the social distancing.
While this new reality has brought about many, many negatives, there are some bright spots. In years past, I’ve emphatically told you not to attempt last minute foods on holidays, because they just don’t work well for large crowds. But this year, since we’re largely just cooking for our nearest and dearest shut-ins, they actually make sense! So bring on the pancakes, waffles and popovers, even if it’s just for yourself!
Another reason I’ve focused mainly on baked goodies here are because they are actually something you could stick in the mail and send to your mom or other loved ones (or hop into the car and deliver). You’ll see in the list below that I’ve noted the treats that I’ve already had good success with mailing as well as ones I think would travel well too.
**One note on shipping, it’s best to ship the day you bake, and you want whatever you made to be entirely cooled before you pack it, so plan accordingly!
So stock up on the butter, sugar and flour (but responsibly—no need to hoard) and let’s get into that baking-for-mom spirit!
BREAKFAST/BRUNCH
Who doesn’t like waking up to something special and decadent, made just for them?!! You could do a breakfast in bed or deliver a little treat to someone’s front door. Only your imagination’s the limit!

These are a natural and several of these would mail well. I probably wouldn’t mail scones though—they’re really best on the day you bake them.

We love custards and puddings and their creamy, sweet flavors, but we don’t always remember the difference between these dessert classics. We’ll settle this confusion once and for all.
When it comes to dessert, nothing’s yummier than a cup of pudding or custard. Lucious and creamy, a good old-fashioned custard or tasty pudding can feel like the ultimate indulgence, but we often get tripped up on what the difference is between these two desserts. So we’re here to settle the confusion and tell you definitively what is custard and what is pudding.
What’s pudding?
First, when we talk about pudding, we’re not talking about the instant, packaged kind that is whisked with cold milk—although these convenient mixes yield desserts that are dreamy and delicious in their own ways (like this peanut butter-meets-chocolate favorite). Here, we’re sticking to true puddings—the comforting, old-fashioned-style dessert that Grandma cooked on the stovetop and was proud to include in her repertoire.
An authentic pudding is a sweetened milk- or cream-based mixture that is thickened with a gelatinized starch, usually cornstarch or flour, then cooked in a saucepan on the stove. This classic treat boasts great versatility as a dessert, as it can be incorporated into a trifle (these 10 are worth trying!), parfait or simply eaten on its own. The toughest choice? Deciding on vanilla or chocolate. Or branch out with a fun new flavor like pumpkin or mochaccino.
How is custard different?
Custard is pudding’s close cousin and is typically made of eggs, sugar and milk, and is either baked or stirred using gentle heat. While most custard and pudding recipes both typically call for eggs, the main difference is that pudding uses a starch for thickening, whereas custard’s thickening agent is the egg itself (or egg yolk, in most instances). Custard’s texture also tends to be firmer than pudding.
Like pudding, custard can be layered into trifles, topped with berries or enjoyed on its own. But its big claim to fame is restaurant-style desserts like pots de creme and creme brulee. It can also be baked into pies, bread puddings and more.
The takeaway
Unfortunately, neither pudding nor custard rank high in the make-ahead category. They are best eaten the same day they’re made, although their lifespan can be stretched a day or two (that is, if there’s any left).

These parfaits are the perfect party dessert. You can assemble a giant parfait in a big bowl for people to scoop from, or set up a DIY parfait bar and let people build their own.
The homemade cake is made with siggi’s yogurt and is lower in sugar than a traditional cake. The yogurt helps make it moist and a little spongier than a traditional birthday cake….but that actually helps it hold up better in these parfaits.
If baking isn’t your forte, don’t panic. This cake is made with just a few simple ingredients and is so easy to make! Of course, you could use a store-bought cake or box of cake mix, but the ingredient list will probably be a little longer and the sugar content a little higher. What I love about making the cake with siggi’s is that it allowed me to cut back on the butter and sugar without losing flavor…plus it adds a little protein punch!
As far as the parfaits themselves, all you need is more siggi’s yogurt and some freshly cut fruit. I used siggi’s 4% vanilla in the cake and siggi’s 2% coconut in the parfaits. The light coconut flavor pairs well with the vanilla cake and the fruits I chose – including cherries, peaches, blueberries and kiwi. Feel free to try other siggi’s flavors if you prefer – they have some great choices like mixed berry, black cherry, mango and strawberry rhubarb that would also taste great!

Ingredients
3 Tbsp butter, softened
1/3 cup siggi's yogurt (vanilla or coconut)
1/3 cup sugar
2 eggs
1 tsp vanilla extract
1/2 cup milk
1 cup white whole wheat flour
1.5 tsp baking powder
additional siggis yogurt for layering
diced mixed fruit (blueberries, cherries, peaches, kiwis, mangos, strawberries, etc)
Instructions
In a large bowl, beat butter, yogurt, sugar, eggs and vanilla with an electric mixer for 2 minutes. Add milk, flour and baking powder and mix until just combined.
Pour into a greased 8 inch round cake pan (i line the bottom of mine with parchment paper) and bake at 350 degrees F for 25-30 minutes.
Let cool, then cut into cubes of desired size.
To assemble parfaits, layer yogurt, fruit and cake cubes in bowls or mason jars and serve.

Seasonal Ontario Food's Top Ten - Desserts!
Oh goody! Desserts! Not really what I try to make this place about, but I love 'em and so do most people. I try to keep the fat and sugar down to a dull roar when I do make a dessert, and to put fruit (in season!) front and forward. They sure do break down to a lot of categories I'm afraid; but perhaps that isn't really a problem as I can choose more... I still can't quite count to ten but whatever. I had this idea that I don't make a lot of pies but apparently not true. I have a little expression, "The cook is never a fussy eater." Meaning the cook is just as fussy as anybody, but since they get to choose what gets cooked, it's always what they like. My desserts fall into that category. I think I make the best desserts ever, but I will have to concede that that is because they are so exactly tailored to my tastes, not through any extraordinary talent. I hope they suit some other people too. Mostly Fruit: Strawberry Tapioca Pudding with Custard - The first dessert I posted on this blog set the tone with all kinds of my favourite things. Blueberry-Peach Parfaits - A little bit of fuss but not too much and well worth it. Beautiful and delicious. Rhubarb, Cranberry & Ginger Compote or Fool - Not for the faint of tastebuds, but something I really love. Rich and intense.
Peach & Raspberry Sorbet - this technique, also used for Sour Cherry &Apricot Sorbet - is really handy. Frozen fruit, chosen for a certain amount of smooth substance, whizzed in the food processor until it is very very smooth, but still frozen enough to eat with a spoon. Not really sorbet, but I don't know what else you would call it. Delicious and nutritious; can't say that about most desserts. Almond Jelly with Peaches & Cream - Another light and perfect thing to do with summer fruit. Easy and just a little unusual. Tea-Poached Pears with Honey -Poached or baked fruit make an excellent every-day kind of dessert, but they will do quite well for company too. Pear Jelly with Blueberries - Yes I do like pears. It's hard to get good ones and they seem to get harder to find every year but I persevere in looking for them. Cranberry Marshmallows - More like mostly sugar, but these were fun anyway. Not apparently as sweet as most marshmallows (but sorry, all the sugar is there anyway). Spiced Maple Poached Pears - More poached pears because poached pears are good. With maple syrup and spices? Yes please! Watermelon Jelly & Sicilian Watermelon Pudding - My most viewed recipe in this category and why not? Easy, refreshing, light, and just a little surprising. Really good. Pies & Tarts: Sour Cream Fruit Crumble Pie - Terrible photo; excellent if somewhat rich pie. I should do it again. Unbaked Strawberry Pie - best pie ever? Or maybe that's Strawberry Cream Pie - like Banana Cream Pie, only strawberries. Almond-Orange Tart with Sweet Cherries - Possibly this should be with the cakes, but it's reasonably tarty I suppose. One of the very few baked things I think better than just eating the cherries. Coconut Macaroon Tart (with Rhubarb) - A lovely tart base that is good with all kinds of summer fruit, with rhubarb in this case. Yellow Plum & Gooseberry Pie - This was something of a one-off but I still remember how very, very tasty it was. Chai Pumpkin Pie - Not your completely traditional Pumpkin Pie but none the worse for that. Crustless Rhubarb Custard Pie -My most viewed pie recipe, by a lot. It's good! But as usual not my personal top pie. Cranberry-Raisin Pie - A delightful combination for a rich yet fruity winter pie. Gingerbread Pear Pie with Dried Cranberries - The gingerbread crust is unusual but really makes this pie sing.
Rhubarb Mousse Pie - Light fluffy texture, tart zingy rhubarb; perfect! Haskap & Dried Apple Pie - I made this last year and I'm looking forward to making it again this year. Haskaps are taking the home gardening world by storm, and it turns out they cook up very nicely. Cakes: Foolproof Banana Cake - Not so very local, but on the other hand; foolproof. Hazelnut Torte - Rich, fancy and special. Has been one of my two major occasion cake recipes for years.
Applesauce Spice Cake - An old fashioned and very popular cake. Gluten Free Almond Pound Cake -My other major occasion cake. Not cheap to make, but very, very special. Unbaked Whipped Cream Cheesecake - Delicate and scrumptious, while being the perfect frame for perfect summer berries. Plum Torte - A simple little cake that is very satisfying. Cheesecake, with Strawberries in this Case - not the world's richest cheesecake and all the better for that in my opinion. Extremely eatable. Chocolate Icebox Cake with Raspberries & Homemade Chocolate Wafers - You know this cake. Now with HOMEMADE WAFERS. And raspberries. Superb, in other words. Caroline's Low Sugar Sweet Potato Cake - My most viewed cake recipe, because lots of people want their cake and their low sugar too. It's a dilemma, and this little treat deals with it quite well. Three Seed Cake - I love this cake. I think it's very special. Probably not for everyone, I concede. Meyer's Lemon Curd Cake Roll -made with local lemons! Well, maybe. Mighty fine in any case. Cookies: Gingerbread Snaps (Cookies) - my favourite gingersnap, without eggs or dairy, easy to work with and a great project with children. Now I'm not working with kids I just make a double batch and roll 'em out in circles because they also just get better the longer they sit. Peanut Butter Cookies Loaded for Bear - All my favourite cookie ingredients in one glorious cookie. Icebox Cookies in Four Variations - for the mass production of apparently varied Christmas (or other cookie occasion) cookies. Sneaky! Clever! Mmm! Rolled Spice Cookies - My favourite Christmas cookie, based on Lebkuchen. Another one where I make a double batch and eat them for months because they just keep getting better.

Aunt Alethea's Famous Squares - Another one that has stood the test of time; required for Christmas to actually be Christmas. Cocoa Cream Puffs - Cream puffs are still very easy to make. And now, you can make them chocolate. Oh my! Rum Ball Bars - A simplified version of the popular original Rum Balls. Cocoa Madeleines - Simple and not too sweet, but entirely satisfying. Coffee Brownies - Don't eat these at night! Or you'll lie in bed awake and have to get up and eat another. Puddings & Composite Desserts: Apple Batter Pudding -Terrible photo; excellent old fashioned dessert. I could eat this for breakfast, lunch and dinner. This may be my favourite dessert, also Prune & Apricot Whip with Custard which is very similar. Tart and fruity, mooshy, creamy, and custardy. What more do you want? Chocolate Cherry Crisp - Doesn't look like much but this is fabulous. I mean! How could it not be? Pumpkin Bread Pudding - Simple and obvious pudding for everyone who loves pumpkin pie and bread pudding. Yogurt Panna Cotta - and Aunt Hilda's Spanish Cream - two similar desserts I can't choose between. White Chocolate Mousse with Cranberries - Rich and special. I made it for Christmas, hence the cranberries but make it all year with whatever fruit is available. So good. Rhubarb-Almond Crisp - A recent effort that was really quite impressive. Almonds and sherry go so well with rhubarb. Cocoa Crepes - Wasn't quite sure where to put this, it doesn't really quite fit into any category.
