By modifying a refrigerator commonly used in both research and industry, researchers at the National Institute of Standards and Technology (NIST) have drastically reduced the time and energy required to cool materials to within a few degrees above absolute zero. The scientists say that their prototype device, which they are now working to commercialize with an industrial partner, could annually save an estimated 27 million watts of power, $30 million in global electricity consumption, and enough cooling water to fill 5,000 Olympic swimming pools.

In 2010, the open‐data activist Waldo Jaquith decided to make a cheeseburger from scratch, using only agrarian methods. He and his wife had just built a home in the woods of Virginia, where they raised chickens and tended to an extensive vegetable garden. Flush with pride in his self-sufficiency, Jaquith outlined the steps required: bake buns, mince beef, make cheese, harvest lettuce, tomatoes, and onion. Then he realized that he wasn’t nearly committed enough. To really make a cheeseburger from scratch, he would also need to plant, harvest, and grind his own wheat, and raise at least two cows, one for the dairy and another to be slaughtered for the meat. At this point, Jaquith gave up. The problem wasn’t labor but timing. His tomatoes were in season in late summer, his lettuce ready to harvest in spring and fall. According to the seasonal, pre-refrigeration calendar he was trying to follow, Jaquith would have needed to make his cheese in the springtime, after his dairy cow had given birth: her calf would be slaughtered for the rennet, and the milk intended to feed it repurposed. But the cow that provided his beef wouldn’t be killed until the autumn, when the weather started to get cold. If Jaquith turned the tomatoes into ketchup and aged his cheese in a cellar for six months, until the meat, lettuce, and wheat bun were ready, he could maybe, possibly, make a cheeseburger from scratch. But practically speaking, he concluded, “the cheeseburger couldn’t have existed until nearly a century ago.”
Refrigeration (a.k.a. the cold chain) gave us new foods, but it also led to selecting and altering foods — the prime example being the lifeless tomato — to favor ones that can survive the process. This is a cool (HA!) article.

Cold Cookery : cold recipes : booklet issued by The British Electrical Development Association : London : nd [c.1937] : cover by mikeyashworth Via Flickr: One of the many publicity booklets issued by the propoganda arm of the electrical industries in the UK, the British Electrical Development Association, to help consumers both choose electrical equipment and use it. The EDA had been formed in 1919 and it survived through nationalisation of the industry in 1948 until its various functions were taken over, at different times, by the Electricity Council. The promotion of domestic appliances, such as refrigerators, was much increased in the 1930s as efforts to sell the domestic use of electricity, especially to new suburban families, developed. Much of the publicity issued at the time was specifically aimed at a more female audience both in terms of the influence on the purchase of 'time saving appliances' as well as assisting in the use of them. The latter was often a case of when new 'modern' householders no longer had access to a more traditional domestic help. The booklet states that it was "issued for the convenience of owners of electric refrigerators" and inlcludes advice as to the use of the 'fridge and recipes that required refrigeration to prepare or store. The colourful cover sadly is uncredited and no printer is shown. The titles are set in the German designed Corvinus Skyline typeface that was available in the UK through the London agency of Soldans Ltd.

A spring house is a small building constructed over a spring. While the original purpose of a springhouse was to keep the spring water clean by excluding fallen leaves, animals, etc., the enclosing structure was also used for refrigeration before the coming of ice delivery and, later electric refrigeration.
The water of the spring maintains a constant cool temperature inside the spring house all year. Food that would otherwise spoil, such as meat, fruit, or dairy products could be kept there. It was also safe from animals as well. Springhouses often also served as pumphouses, milkhouses, and root cellars.

About a third of the food produced globally each year goes to waste, while approximately 800 million people suffer from hunger, according to the UN’s Food and Agriculture Organization. The new study in the journal Environmental Research Letters also shows that at the same time, fully refrigerated supply chains, or “cold chains,” could cut food waste-related emissions of climate-warming greenhouse gases by 41% globally. Sub-Saharan Africa and South and Southeast Asia have the greatest potential for reductions in both food losses and related emissions through increased cold-chain implementation, according to the study.

God I really hope I hear from this other company soon. I want to move on from residential and light commercial hvac and go to heavy commercial refrigeration. The company I want to work for got contracts to two big projects near the place I’m hoping to move to so it’ll be a sweet gig if I get it.

Under the right conditions, fruit can be stored for basically forever. I am currently eating fruit that was at the back of my fridge for several months. It's only slightly degraded in quality but it's still a crisp delicious snack.
