4 pork chops bone in or out
Salt and pepper to season
1 teaspoon garlic powder
2 tablespoons olive oil
1 tablespoon unsalted butter
6 cloves garlic, minced
1/4 cup honey

1/4 cup water (or chicken broth)
2 tablespoons rice wine vinegar (or apple cider vinegar, or any white vinegar)
INSTRUCTIONS
Heat the grill or broiler in the oven to high. Just before cooking, season chops with salt, pepper, and garlic powder.
In a pan or skillet, heat the oil until it is hot. Chops should be seared until golden and fully cooked on all sides (about 4-5 minutes each side). Move to a platter and reserve.
Heat to a medium setting. In the same pan, melt butter while scraping away any browned bits from the bottom. Garlic is cooked till aromatic (about 30 seconds). Honey, vinegar, and water are added. Increase the heat to medium-high and cook, stirring periodically, until the sauce slightly thickens and reduces (approximately 3 to 4 minutes).
Add pork back into the pan, baste generously with the sauce and broil/grill for 1-2 minutes, or until edges are slightly charred.
Garnish with parsley and serve over vegetables, rice, pasta or with a salad.

Offal, aka organ meats, are about to make a comeback. Yes, I predict that brains, livers, spleens, tongues and testicles will feature heavily on the menus of Israel’s (and the diaspora’s Jewish/Israeli-style) hottest eateries by this time next year — if they aren’t already. Why? Because young chefs are increasingly inspired by traditional Jewish dishes, driving a return-to-roots style of cooking. And these old-school classics are notably innard-heavy.
Offal is an oxymoron; it’s both a poor-person food, which is why it was so popular in the shtetl, and a celebratory food, eaten on Shabbat and festivals. Many Sephardic cultures consider it a delicacy. Read on and decide for yourself.
Let’s start with an old Ashkenazi classic: chopped liver. While for me, it will always be in style, many of my contemporaries don’t feel the same. Luckily, young Jewish chefs have already set their sights on it, and may well have the power to convert millennial diners. Take Anthony Rose’s recipe in “The Last Schmaltz,” which sears the livers, then deglazes the pan with arak before blending, serving the chopped liver with thyme-scented caramelized onions.
Another well-known offal dish is the Jerusalem mixed grill. Made with chicken giblets and lamb parts, and seasoned with onion, garlic, black pepper, cumin, turmeric and coriander, this classic street food is believed to have originated sometime between 1960-1970 at one of two (now feuding) restaurants in Jerusalem’s Machaneh Yehuda Market. While the Jerusalem grill is far younger than most Jewish offal dishes, it originated in a similar way: Butchers had a surplus of unwanted offal so they sold it off cheaply, then some savvy chefs turned the offal into a desirable dish. The mixed grill was one of the first offal dishes to receive multiple modern makeovers. At his restaurant Rovi, Yotam Ottolenghi adds baharat onions and pickles, while Michael Solomonov included a Jerusalem grill-Southern dirty rice hybrid in “Israeli Soul.“
Of course, this is not the first dish based around grilled offal; Tunisian Jews liked to throw a selection of lamb or veal innards onto the grill, which they called mechoui d’abats, and Baghdadi Jews sought a similar smokiness, which they achieved by cooking chicken livers on the tandoor.
Roman Jews preferred their offal battered and fried, rather than grilled. Few know that their famed carciofi alla giudia (deep-fried artichokes) was often served alongside fried sweetbreads, livers, and — most notably — brains. North Africa’s Sephardi communities loved their brains, too, commonly serving them in an omelet called a meguina or menina on festive occasions. Meir Adoni referenced this love in his brain fricassee — a North African-French fusion dish of veal brains inside a croissant with harissa and preserved lemon — at his New York restaurant Nur.
Offal was also commonly used to add a depth of flavor to a soup or stew. Yemenite Jews — one of the few communities who continue to cook traditional offal dishes — make a soup with bulls’ penis and cows’ udders, while Eastern European Jews, particularly of Polish descent, continue to add kishke  — a sausage made of stuffed beef intestine — to their weekly Shabbat cholent. A slow-cooked stew called akod is one of the better-known dishes of Tunisian Jewish cuisine, where tripe flavored with cumin, garlic, harissa and tomato paste is the star of the show. Moroccan Jews eat a similar dish on Passover, which ditches the tomato paste but adds liver, heart, and beef dumplings.
Admittedly, there are some offal-based dishes that may find it trickier to stage a comeback. Ptcha – an aspic that reached its height of popularity in shtetl-era Ashkenazi communities — is arguably top of the list. However, it’s not without hope; ptcha was actually born in Turkey in the 14th century as a peasant soup made with lamb’s feet, served hot. This, I’d wager, is a more palatable gateway (it’s basically bone broth) to the Eastern European version, which opts for calves’ feet and allows the soup to cool and set into a jelly, thanks to the gelatin in the hooves.
It only takes one dish to change your view of offal from weird and unappetizing to tasty and versatile. If livers, brains and tripe were good enough for our ancestors, not to mention famed chefs, who are we to turn up our noses? Happy eating!

Analysis of the Food/Diet of the Lower Class in the Victorian era
(It was a bit tricky for me to find sufficiently detailed answers about the time and group I was looking for, as I wanted a bit more than the basics. Apologies for any mistakes)
Bread was a staple of the lower-class diet, such as wholemeal, rye bread, unleavened bread (like oatcakes), etc.. For the poor, it was often made of cheap-quality flour and likely denser than modern bread.
These could be supplemented with whatever vegetables that were cheapest as well as locally available at that time of year. Onions were among the cheapest (half penny for a dozen, cheaper if they were bruised) and available all year. They were more expensive in late spring, at which point they could be substituted by leeks. Watercress was another cheap staple (halfpenny for 4 bunches from April to January/February) and were regularly eaten at breakfast. Cabbage was cheap and easily available, along with broccoli, with lettuce and radishes available in summer. Carrots and turnips were inexpensive staples, especially in winter, and they along with cabbage were often used in stews and soups.
As for fruit, apples were the cheapest and most commonly available (from August to May). Cherries were also fairly cheap (from May to July). Pears, blackberries, and plums were available throughout autumn. Then there were gooseberries, plums and greengages (in late September), raspberries, and strawberries. Not all fruits were affordable, like oranges, which were imported from Spain in winter but were expensive and often given as gifts, and pineapples, which were a sign of wealth.
Potatoes were another staple and were prepared in various ways, including boiled, mashed, roasted, or fried. They grew well in Britain’s mild weather, making them easy to produce and sell, meaning they were cheap and thus became a frequent meal.
In terms of meat, the lower class ate it infrequently, maybe once a week, with the worst off even less often. Pork was 1 of the most common types of meat, when it could be afforded.
As a result, the poor made the most of it (using and eating every part of it). For example, a cook would boil a piece of beef or mutton with vegetables one day (probably Sunday, the only day many people had off from work), then return to the boiling pot the next day and skim the fat off from the top to be used for frying or pie crusts. Then he or she could set the liquid back to boiling, adding a stingy amount of oatmeal (one recipe recommends a tablespoon of oatmeal for every pint of liquid) to produce another nourishing meal from the broth. Recipes call it a pot liquor soup; we’d more likely call it gruel.
Gruel, made by boiling grains, like oats, rice, or barley, in water or milk, was a common food option for the poor as it required minimal ingredients and was easy to prepare. It often served as a breakfast or basic meal.
Porridge refers to a thicker and more substantial version of cooked grains, usually oats, in water or milk. It was typically cooked for a longer amount of time, resulting in a creamier and heartier consistency. It was also a popular breakfast choice due to it being nutritious and filling.
They tended to buy cuts and trimmings of meat no one else wanted, which were referred to as “block ornaments”. Examples included sheep’s organs, shanks, gristly bits, and heads. Most of these cuts were tough or didn’t have much meat on them, but they could produce a filling broth. Tripe (lining of stomach of animals like cattle, sheep, and pig), liver, meat on the bone (shin or cheek), and offal (aka organ meats like brains, hearts, sweetbreads, liver, kidneys, lungs, and intestines) were also cheap.
Chicken was rare, as the birds were kept for eggs, and usually not eaten unless the bird stopped laying eggs.
Later in the Victorian era, bacon became a popular choice at breakfast (alongside kippers aka a type of fish made from herring, eggs, and porridge).
Drippings was another common part of the lower class diet. Drippings refer to the fat that is collected as a result of cooking meat. When meat, such as beef, pork, or poultry, is roasted or grilled, the fat present in the meat melts and drips down into the pan or tray. This fat is then collected and saved, typically in a container or jar, for later use. They add flavor and richness to dishes and are commonly used for making gravies, sauces, or to enhance the flavor of roasted vegetables, as a few examples.
Since meat was a luxury, the lower class tended to go for cheaper proteins, like eggs and legumes.
Many East End homes kept hens in their backyards, with a couple hens able to produce up to a dozen eggs per home per week. Hard cheeses like cheddar was produced countrywide and so available all year round, meaning it was able to enter the diet of the lower class. It was a good protein, kept well, and even stale it could be eaten toasted with bread.
Regarding legumes (ex: beans, peas, peanuts, lentils, etc…), they were a cost-effective source of protein, fiber, and nutrients. Dried legumes were more affordable and available all year round. Beans (good from July to September) were a staple for many lower class, often cooked in stews, soups, or baked dishes. Peas (affordable from June to July) and lentils were also commonly consumed.
In terms of drinks, tea was very common. It became more affordable with the help of increased trade, improved transportation, and advancements in production methods. The poor drank tea that tended to be weaker, as they reused the tea leaves several times before disposing of them. Black tea was common, the most popular being those imported from countries like China and India.
Milk was widely consumed but not usually in large quantities, due to cost and adulteration fears (aka fear of contamination). Beer was also common (made with low alcohol content so you didn’t get drunk), even for women and older children, as water wasn’t safe to drink back them (easily contaminated, but the brewing process killed off the germs). Coffee was another option, but it tended to be more expensive than tea, beer, or milk.
Sugar became cheaper at least after 1874, but still tended to be relatively expensive, especially for those on lower incomes. Thus it remained more of a luxury item and consumed in mostly smaller quantities or for special occasions.
Butter, like sugar, would’ve also been considered a relatively expensive item, and thus not as widely consumed. Instead, they used cheaper options of fat, like lard and dripping.
Nuts were another slightly more expensive item. But there were some options if a poorer individual could afford them. Chestnuts were the most common (favorite street snack in chestnut season, running from September to January). There were also filberts and hazelnuts (available from October to May) and walnuts (seasonal). Imported almonds and brazil nuts were more expensive, but commonly consumed around Christmas as a “treat”.
Even if they could afford things like sugar, butter, or nuts, the lower class likely would’ve typically used their income on more basic necessities and things they needed for their job or life.
Individuals were paid on Saturday, and that plus the absence of refrigeration affected the weekly menu. It’s possible the lower class at least may have possessed basic cooking utensils, like a skillet, pot, or kettle. The ‘best’ and relatively most expensive meals were taken on Saturday evening and Sunday, though the poorest would often buy food at the end of Saturday trading, at the cheapest possible prices. Menu choices became cheaper through the week: purchases of food would diminish in quantity as the food budget shrank, and meat would often only be purchased once a week, though vegetables and fruit were usually purchased and consumed on a daily basis.
The very poor might purchase cheaper older fruits, vegetables, and meat on the verge of edibility, though this didn’t really diminish the nutrients in them much.
The lack of refrigeration facilities meant that meats eaten hot on any one day were almost inevitably consumed (cold) on the second day. Any more leftovers were, due to incipient spoilage, curried or hashed on the third day. Spices and the higher heat involved in frying the hash would disguise any taint to the meat and lessen the chances of food poisoning.
Men worked on average 9–10 hours per day for 5.5-6 days a week, giving a range from 50–60 hours of physical activity per week. Factoring in the walk to and from work increases the range of total hours of work-related physical activity up to 55–70 hours per week. They likely required around 5000 calories a day.
The daily wage for poor miners back then may have been around 3-4 shillings, with the weekly wage then around 18-24 shillings. In dollars, 3-4 shillings was likely around $1. In today’s money, 3-4 shillings a day may be around £4 to £5 or $5 to $6.

𑐔𑐟𑐵𑑄𑐩𑐬𑐶 / चतांमरि (chatā̃mari), sometimes called "Newari pizza," are rice crèpes made plain or with a savory topping. Chatamari are a popular festival food among the indigenous 𑐣𑐾𑐰𑐵𑑅 / नेवा: (Naivāḥ / Newa) people, most of whom live in the 𑐣𑐾𑐥𑐵𑑅 𑐐𑐵𑑅 / नेपाः गाः (Naipāḥ gāḥ / Nepa Valley) in central Nepal. [1] They are regarded as a near-compulsory addition to the table for holidays including 𑐴𑑂𑐩𑐥𑐸𑐖𑐵 / म्ह पूजा (mha pūjā) and 𑐡𑐶𑐐𑐸 𑐥𑐹𑐖𑐵 / दिगु पूजा (digu pūjā), when they are served as snacks and appetizers.
A chatamari consists of a thin, fried crèpe, fluffy on the inside and crispy around the edges, and an optional juicy, well-spiced topping. Common toppings are vegetable (with black-eyed peas, potato, and/or soy chunks); meat (with minced chicken or buffalo and tomato); a cracked egg; or some combination thereof. Ginger, garlic, red onion, cumin, turmeric, and sometimes red chili powder and coriander add bite and aroma. To cook chatamari, a thin layer of batter is spread on a tawa, and the batter is topped; the whole is then covered with a clay conical lid and left to steam.
This recipe is for a 𑐎𑐷𑐩𑐵 / कीमा (kīmā; minced meat)​ chatamari with potato, but you can try replacing the meat substitute with cooked black-eyed peas, replacing the potato with more meat, or replacing the meat and potato with vegetables of your choice (try green peas, julienned carrots, and green onion)—the basic format of this dish is highly customizable.
The Nepali language is increasingly the language of broadcast, education, and even the home, to the detriment of other languages including the Newa language Nepal Bhasa (𑐣𑐾𑐰𑐵𑑅 𑐨𑐵𑐫𑑂‎ / नेवा: ��ाय्, nevāḥ bhāy). Scripts historically used to write Nepal Bhasa and Sanskrit have been almost entirely replaced with Devanagari. 𑐥𑑂𑐬𑐔𑐮𑐶𑐟 / प्रचलित (prachalit; lit. "common") was the script used by literate Newa until it began to decline at the turn of the 20th century; the 1960s governmental policy of सांस्कृतिक एकता (Nepali: sā̃skr̥tik ektā; cultural unity) further marginalized it.
Revival efforts have begun, which claim Prachalit (and the ornamental script Ranjana, also used to write Nepal Bhasa and Sanskrit) as parts of Newa identity, and seek to teach them at fairs and in workshops. A process of "ethnicity-building" and identity formation within Nepal, including pushes to use students' mother tongues as the language of instruction (with Devanagari as a "common" script) and to use minoritized languages in television and radio broadcast, have been ongoing since the 1990s.

Ingredients
Makes 4 large.
For the topping:
3/4 cup (74g) textured vegetable protein + 1/2 cup (118mL) broth
Or 1 1/2 cup ground beef substitute of choice
1 russet potato (200g) (optional)
2 roma tomatoes, minced or thinly sliced
1 small red onion, minced or thinly sliced
1 green chili, diced or thinly sliced
1/2-inch chunk (5g) ginger, peeled and grated or pounded
2 cloves garlic, grated or pounded
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
1 tsp red chili powder (substitute sweet paprika to reduce spice level)
1 tsp meat masala (optional)
2 Tbsp neutral oil (if not including 'egg')
Cilantro, to top
For the egg (optional):
2 Tbsp yellow mung flour or chickpea flour (besan)
1/4 cup coconut milk
1 tsp kala namak (black salt)
You may also use any other egg substitute. This one is inspired by Vietnamese bánh xèo. The coconut milk provides binding and fat; the final topping will not taste of coconut. You may replace it with any neutral oil.
For the batter:
1 1/2 cup (240g) white rice flour
About 1 1/2 cup (350 mL) cool water
Mustard oil, to fry
The chatamari in the photo is served with achar.
Instructions
For the batter:
1. Measure flour into a bowl. Pour in water slowly while whisking until a smooth, pourable batter (the consistency of crèpe batter) forms. Set aside to rest while making the filling.

For the filling:
1. Peel and cube potato, then boil until soft. Mash thoroughly with a bean masher or fork.
2. Hydrate TVP in broth or stock (I used water with 1/2 tsp vegetarian beef stock concentrate) for 10 minutes.
3. Mix potato, minced tomatoes and onion, ground 'meat', spices, and 'egg' together in a large mixing bowl until well-combined.
To assemble:
1. Heat a large tawa, comal, or nonstick skillet on medium. Fill a ladle with 100 mL (a bit less than 1/2 cup) of batter, and pour it into the center of the skillet; it should become round on its own. Thin it out a bit with the bottom of the ladle.
2. Cover the top of the batter with the topping, leaving a bit of space on the edge. Optionally, add about 2 tsp of oil around the edges of the chatamari to crisp.
3. Lower the heat to low and cover. Cook for 7 minutes. Remove chatamari onto a plate.
If the rice pancake cracks, your batter is too thin; try resting it, uncovered, for 5-10 minutes, then stirring it and trying again.
4. Raise heat to medium for a minute. Add another ladle of batter, top the chatamari, add oil, lower the heat and cover to cook as before. Repeat until batter or filling runs out.

Breakfast foods in China
Since arriving in China my typical breakfast has changed quite a lot (hello baozi and mung bean paste!) so I decided to explore some common local breakfast foods eaten in China!
包子 - Bāozi (my love) These have been an almost consistent (excluding the lunar new year when the canteens and most cafes and restaurants closed) staple of my breakfast ever since I arrived in China. They come with several fillings such as veggie, pork, seafood etc. and they can cooked in different ways such as being steamed, fried etc. Here's a more in-depth post about the types of dumplings and bāo.
粥 - Porridge (zhōu) I sometimes have porridge for lunch instead and it's a really filling meal. I get the Century Egg Congee with Chicken - 皮蛋瘦肉粥 (Pídàn shòu ròu zhōu) and it's one of my all time favourite meals.
煎饼 - Egg pancake (jiānbing) Popular also as a street food, this is a thin crepe type pancake with an egg, veggie, spice, sauce and sometimes meat filling. The actual filling varies as you can customize what veggies and spice level you'd like and whether or not you want meat.

热干面 - Hot and dry noodles (règānmiàn) I honestly had no idea about this dishes existence until a while ago, probably because it's a regional dish originating from Wuhan which is kind of far away from my location. These are spicy and dried noodles which are actually eaten without a broth unlike many other noodles. They seem pretty interesting so if anyone tried them before do share your experience!
桂林米粉 - Guilin Rice noodles (guìlín mĭfĕn) This appears to be another regional dish from Guilin, Guanxi as I had no idea that this was a also a pretty popular breakfast dish. Apparently it's not the noodles but rather the broth that they're cooked in that makes them special, with the actual recepie varying across the region. Someone should do a long weekend trip vlog (pondering on this) to Guilin where they just go from store to store trying these noodles and trying to determine the differences.
葱油饼 - Scallion oil pancake (cōngyŏubĭng) A tasty but heavy-ish pancake imo. These pancakes are cooked with scallions (green onion) and pan-fried to give it that crispy and chewy texture. Very tasty, but it's a little too heavy on the oil for me so I save these pancakes for special occasions instead.

豆浆油条 - Soy milk and deep-fried dough sticks (dòujiāng yóutiáo) I have tried the dough sticks, and I have tried soya milk but separately so far. The dough sticks are these long deep-friend dough sticks, reminding me slightly of breadsticks but more lighter and chewier.
茶鸡蛋 - Tea eggs (chájīdàn) I adore these, my canteen serves them along with regular eggs for breakfast and the tea eggs are usually the first to go. They actually don't really involve tea, instead these eggs are cooked in a mixture of chinese five-spice powder (pepper, cloves, cinnamon, star anise and fennel seeds), soy sauce, and black tea leaves, although some recipes leave out the tea leaves. They have a relatively strong smell so I usually grab some for breakfast on the weekends or in the canteen at lunch if there are any leftover after breakfast. They are also quite cheap, one egg is around 2 yuan so around 0.30 euro, making them a pretty filling and affordable breakfast food.

what’s the first soup you learned to make? any special occasion soups?

the first soup i learned to make was either a mediocre version of tomato soup OR it was lentil soup. i'm going to say it was lentil because that sounds way better and if i am correct about that, it's actually a good version because i am still making that same lentil soup today. but honestly, no idea!
but onto the exciting part, the special occasion soups:
special occasion soup can really be any soup you like best. i am going to go with laksa though, because it's very decadent and not something i would eat regularly. i was initially introduced to this because my biological dad is from singapore. if you're unfamiliar, it's a popular curry soup in southeast asia made with shrimp paste and coconut milk! this is a pretty good recipe/general guide. i don't really use the recipe just because i am lazy and i buy the paste already made, but it's still a great guide that tells you a bit about how to eat it and what to eat it with. most people use rice noodles, but i prefer yellow noodles (also called egg noodles, also called lo mein, really depends on where you get them, but they are yellow). the recipe calls for chicken, but i don't eat chicken too often so i typically stick with seafood! for garnish, i like to do fried tofu puffs, bean sprouts, cilantro (mint or basil is nice too), fish balls, and a bit of lime.
this is a soup that will only really be appealing if you like shellfish and coconut, so it won't be for everyone! here are my other recommendations for soups that feel sort of ✨fancy special occasion ✨: french onion soup (usually calls for beef stock, but i have also used onion bouillon and it turned out nicely!), pizza soup (i omit the peppers because i am not a fan), and butternut squash soup with crispy sage leaves (this is the only way you can get me to eat squash, also the sage leaves are a must).

Som Tum or Thai spicy papaya salad is a popular Thai dish originated from north eastern Thailand. The dish is famous for being rich in flavour i.e. a mix of sweet, spicy and sour. There are many types of Som Tum that you may find in Thailand, or at any Thai restaurant. Therefore, it is important to know your Som Tum before making any order! Also, you need to pay attention to some ingredients in Som Tum as it may contain ingredients like peanuts or shrimps which some people are allergic to). In this article, we will be covering different types of Som Tum and finish it off with whether the dish is vegetarian friendly.
Different types of Thai papaya salad
The main ingredient of som tum is the shredded green, raw papaya. Other common vegetables include tomatoes and green beans (sometimes carrots as well). The dish derives its taste from garlic, chili, tamarind, lime, fish sauce and a bit of sugar.

Som Tum Thai is the first variation of som tum that we will cover. It has unique ingredients including dried shrimp and peanut on top of your usual raw papaya, tomato and green beans. Som Tum Thai is common in central Thailand so you will be able to find it anywhere in Bangkok.

Som Tum Phu or crab Som Tum is a variation where either preserved sesarma crab or flower crab is added to Som Tum dish to enhance the flavor.
Som Tum Lao or Som Tum Pla Ra is characterized by a special ingredient called “Pla Ra” or fermented fish. This type of Som Tum with a small portion of fermented fish will have a stronger smell and flavor compared to other types of Som Tum. For those who enjoy the fermented fish enhancement, they will quote this is the best type of Som Tum. On the other hand, others who are not a fan will find the dish pungent. It is either you love or hate it.

Som Tum cucumber salad replaces shredded green papaya with refreshing sliced cucumber for its main ingredient. Some variation of the som tum cucumber salad also add Thai sausage, shrimp or grilled pork into the mix which make the dish interesting.

Som Tum with fruits uses fruits as the main ingredient instead of shredded raw papaya or cucumber. Common fruits you will find in this type of Som Tum include apple, guava, pomelo and corn (although corn is not exactly a fruit). Some recipes will also add dragon fruit, grape, kiwi, pineapple. Actually, you can add any fruit you like, but the rule of thumb is to avoid adding watery fruit like watermelon. The reason being is obvious, you do not want your Som Tum too watery.
How to enjoy a meal with Thai papaya salad
You can have Som Tum on its own, but usually Thai people enjoy Som Tum with a number of other dishes. The most common one is to have sticky rice or kanom jeen as carb companion for Som Tum. Other than that, you can add some protein source like grilled/fried chicken or pork neck (which go really well with Nam Jim Jaew dipping sauce). This is because the typical Som Tum does not have any meat inside. Som Tum is already quite rich with vegetables but usually there are other raw vegetables and herbs accompanying this dish. This can include cabbage, basil leaves, green beans and cucumbers.

Is Som Tum vegetarian friendly?
If you are a strict vegetarian then the answer might be no, as most Som Tum dishes contain fish sauce and Som Tum Thai contains dried shrimp. However, some shops offer vegetarian Som Tum, for example Som Tum Thai without dried shrimp. Otherwise Som Tum with cucumber or fruits are generally vegetarian friendly.

The dishes of Brodia come in these categories:
Celebratory dishes - Sour cream congee
Cheap recipes which can use leftovers or cheap ingredients - meat pie.

Exotic dishes - chicken tomato curry.
Crisp bread -  Crispbread can also be known as 'Glasgow morning rolls' or 'Scottish rolls'. They are very light and airy, and very, very crispy on the outside. Some people prefer almost black and in very odd differing shapes. The lifespan of these rolls is 24 hours so they must be eaten fresh. Some people eat them for breakfast while others make sandwiches with them. They are not the healthiest dining option but they are a well loved Scottish tradition. People make hot filled rolls with them which can include: square sausage, black pudding, bacon, potato scone or egg. Sometimes they are eaten with a very thick layer of butter. They can be made easily and cheaply which makes them perfect common folk food.
Sour cream congee - Congee is normally made with rice so I believe that this recipe is closer to rommegrot rather than congee. Rommegrot is a traditional Norwegian recipe meaning 'sour cream porridge '. Romme means 'sour cream' and grit means 'porridge'. It has a thick consistency and is often eaten with butter, cinnamon, sugar or cured meats. Traditionally it was eaten at celebrations including weddings and births, however it was not uncommon for peasant families to eat a plain version several days a week as a staple part of their diet. 
Crepe pancakes - The recipe is very similar to Scotch pancakes. In some parts of Scotland they are known as 'dropped scones'. They are different to French and English crepes because they are smaller, thicker and slightly risen. Traditionally they were eaten before lent to use up ingredients to avoid waste. The common folk would make them to use up ingredients before they spoil. 
Jam cake - This recipe seems to be based on Albert cake. This came has a short crust pastry base, jam and a light and fluffy sponge. It was a cake created in the Victorian era and made after Queen Victoria's husband, Prince Albert.
Tree cake - This recipe is for Sakotis ('Tree cake) which is a layered cake made on a spit. It is a celebration cake which takes a lot of time to make. It is often decorated with sugar iced flowers or chocolate. This is not an everyday cake in Brodia, unlike jam cake and crepe pancakes.
Fish Dango -  Dango is a species of fish but the recipe doesn't suggest that it is a recipe solely for this species. The recipe suggests this is battered fish, a popular dish and chip shop meal. You will find a fish and chip shop in every high street in the UK. The original recipe comes from Spanish and Portuguese Jews. In the 15th century Judaism was outlawed in Spain during the Spanish Inquisition. The Jews fled to Portugal. In 1496 King Manuel I mandated the expulsion or baptizing of Jews. The Jews fled to the UK where they introduced their version of fried fish. The Jews preferred their battered fish cold. It is a way to preserve fish.
Cheese wedge - This is just a big slice of cheese. Random cheese fact; the British are the most lactose persistent population in the world. Cheese was an important source of animal protein in the diet of mediaeval commoners, for people who could not afford meat, it was the only source. The byproduct of a cheese wedge could be used to make whey cheeses.
Oatmeal - This is a porridge recipe.  Oats have been grown in Scotland since late medieval times. There was no way to preserve oats, so they were turned into a paste and stored in a wooden drawer. The paste porridge would be eaten for a few days until it hardened, then it was eaten in thick slices.
Baked potato - Potatoes, also known as 'earth apples' changed from being an exotic ingredient only nobles sampled in the 16th century to a household staple in the 18th century. Generally it was recommended to serve them with butter or cream.  
Nut compote - Candied nuts could be an alternate name for this dish. Compote comes from the Latin  word 'compositus', meaning 'mixture'. In medieval medicine it was believed that sugar syrup balanced out the effects of humidity on the body. At a feast compote would be served at the beginning of the last course of a feast.
Traveler's egg - This is a recipe for Scotch egg. There is debate about the origins of the Scotch egg, Yorkshire and India are two of the potential origins. From the name 'Traveler's why's I gather the origin of choice is that it was created by luxury food sellers Fortnum & Mason in 1738 as a quick and convenient snack for city folk travelling to their country homes. 
Chicken tomato curry - This dish could be a reference to Chicken Tikka Masala. The origin of the dish is debated, but it is believed that spiced recipes were developed in both England and India thanks to the spice routes. In medieval times, spices helped make aging meat more palatable. In medieval Europe spices were considered an exotic ingredient purchased by the affluent, likewise in Brodia, spices would be a luxury traded commodity from Solm.

 Haggis - Medieval manuscript calls it 'hagese'. When cattle drivers were taking their cattle to market, rations were made from any available ingredients and stored inside a sheep's stomach. When an animal was slaughtered, the nobleman would let the butcher keep the offal. I can imagine haggis being taken down mines when mining operations would take several days.
Crumble cake -This recipe can also be called 'crumb cake'. Fruit cakes were popular because they could be kept for many months. 
Marinated herring - Herring was a very important fish in Medieval Europe. Great Yarmouth, the port of Copenhagen and development of Amsterdam were founded due to herring fishing. The marinate would help but fermented and spoilt fish palatable. 
Meat pie - This recipe is a reference to 'Scotch pie'. In medieval times ours were known as 'pyes'. In royal courts they were used to entertain, an example of this can of merriment is live birds hidden in a crust that fly out when the pie is cut into. For the commoner, pies were a way of using and preserving meat and vegetables

From the traditional eating standards to Instagram chefs, the chefs in the aprons share one thing in common: being the best at what they do. For National Cooking Day on Sept. 25, Black Enterprise highlights five chefs killing the game in their respective lanes.
According to National Today, National Cooking Day was set up to encourage and inspire food lovers to try something new and explore the true beauty of the kitchen. From finger-licking good barbecue to fine-dining sous chefs, these five culinary artists have created a lane of their own.
Rodney Scott – South Carolina 
Scott is known to make your mouth water with his traditional barbecue recipes and is often referred to as one of the U.S.’s master pit masters; the chef and business owner has made his mark as one of the industry’s favorites. His popular restaurant, Rodney Scott’s Whole Hog BBQ, is a staple in the Charleston community, serving fried chicken, pit-cooked chicken, mac and cheese, and, oh yeah, whole pigs.
He gives his feedback to those coming up behind him as a judge on Food Network’s BBQ Brawl.
Ayo Adeyemi – London
Chef Adeyemi has brought West Africa to the U.K. As head chef of London’s Michelin-star restaurant, Akoko, Adeyemi has changed how traditional African food is celebrated.
“When I was growing up in the industry as a young chef, restaurants like this weren’t around,” Adeyemi said, according to SCMP. “So I was forced to have to learn the modern British culture, the modern Asian culture, the modern French culture.”
Under the chef’s leadership, the menu now hosts an interesting take on jollof rice, served with BBQ, native blue lobster, and smoked goat with mustard seeds.
Nyesha Arrington – California
Her multiracial upbringing has made her keen sense of taste a powerful force in the industry. Arrington, who grew up with a Korean and Black background, trained with top cooks to pick up a spatula and has served as the head chef at Wilshire in Santa Monica, California. Arrington prides herself on concurring many food lanes, including “that path of France and nouvelle cuisine,” she told The New York Times, but she says the main thing she loves is finding the common denominator in food.
While she has made appearances in the Los Angeles Times and GQ, she currently stars as a judge on the cooking competition show Next Level Chef.

On National Tempura Day, we are encouraged to enjoy any sort of dish that has been made with tempura batter. This is a Japanese fare, with most people tucking into delicious Tempura prawns on this date! However, there are many things you can deep-fry in this batter. Seafood and vegetables are the most popular, yet there’s nothing stopping you from having Tempura chicken. We are sure that there are plenty of unique concoctions you can come up with as well. Deep-fried Mars bars are popular, so what about a Tempura version?
Tempura is a traditional Japanese dish. It was introduced in the 16th century by the Portuguese that were living in Nagasaki at the time. They used fritter-cooking to achieve the light batter. The batter typically consists of soft wheat flour, for example, all-purpose flour, pastry flour, or cake flour, which is combined with iced water. Some people prefer to use sparkling water to keep the batter light.
A lot of people will also add spices, oil, starch, baking powder or baking soda, and/or eggs, especially the egg yolk. Traditionally, this batter is mixed in small batches. Chopsticks are used to mix the batter, and it is only mixed minimally, i.e. for a few seconds. Any lumps are left in the mixture, and this – along with the cold temperature – is how the crisp and unique fluffy tempura structure is created when cooking.
Cooked tempura pieces tend to be either salted and eaten as they are or they are presented with a dipping sauce. Tentsuyu sauce is the most common sauce to enjoy with this batter. A lot of people serve it with grated daikon, which is a mild-flavored winter radish, and they eat it straight after it has been fried. You will also find that tempura is typically found in udon soup or bowls of soba in Japan, typically in the form of a fritter, shiso leaf, or shrimp.
It is also not uncommon for tempura to be used in combination with other foods. Portuguese Jesuit missionaries introduced the recipe for tempura to Japan during the sixteenth century (around 1549). It is believed that Portuguese Jesuit Tokugawa Isyasu, founder and first shogun of the Tokugawa shogunate of Japan, loved tempura. Since the Genroku era (September 1688 – March 1704) tempura was originally a very popular food that was eaten at street vendors called yatai.
Today, chefs all over the world include tempura dishes on their menus using a wide variety of different batters and ingredients including the non-traditional broccoli, zucchini, and asparagus as well as dry fruits. Some meats, usually chicken and cheeses, are known to be served tempura-style in some American restaurants. For sushi lovers, a more recent variation of tempura sushi has the entire piece of sushi dipped in batter and tempura-fried. The word “tempura” comes from the word “tempora”, a Latin word meaning “times”, “time period” used by both Spanish and Portuguese missionaries to refer to the Lenten period or Ember Days.
The idea that the word “tempura” may have been derived from the Portuguese noun tempero, meaning a condiment or seasoning of any kind, or from the verb temperar, meaning “to season” has not been substantiated. The term “tempura” is thought to have gained popularity in southern Japan; it became widely used to refer to any sort of food prepared using hot oil, including some already existing Japanese foods. Today, the word “tempura” is also commonly used to refer to satsuma age, a fried fish cake that is made without batter. In Bangladesh, the blossoms of pumpkins or marrows are often deep-fried with a gram of rice flour spice mix, creating a Bengali style tempura known as kumro ful bhaja.

Celebrating National Tempura Day is easy. You gather up the ingredients necessary to create a tempura, be it a homemade recipe or one you found online, and make the dish to serve it with family as a happy dinner meal. You could decide to have tempura prawns or starter or you could opt for a main dish that incorporates tempura, such as the ones we mentioned earlier.
The great thing about this batter is that it is highly versatile and so it can be teamed with a wide range of seafood, vegetables, and meat. This means that you can have a lot of fun experimenting with different ingredients. Why not have a tempura cook-off with your friends? Or, you could host a Japanese-inspired dinner party?
Why not get some of your friends around for afternoon tea Japanese style? In Japan, tea ceremonies have been popular for many years. Combine this with some delicious tempura dishes for everyone to eat, and you’ve got the perfect lunch-time event. After all, it is always fun to do something a bit different, isn’t it?
The tea that is famous in Japan is pure Matcha green tea. We’re sure you may have even seen Matcha tea or Matcha lattes in your local coffee shop! Matcha comes in many different forms and grades. It is important to be aware of this when purchasing, as you don’t want to end up selecting the wrong product. Generally speaking, you have two key options to select from when buying Matcha – ceremonial Matcha and cooking grade Matchas.
Most people prefer to invest in ceremonial Matcha green tea, and this is because it is of the highest quality and it is suitable for everyday drinking. Of course, you can incorporate it into cooking too, but when creating a Matcha beverage it is even more important to choose high levels of quality. You won’t get better than ceremonial Matcha and this is emphasised by the fact that this Matcha is used in the traditional Japanese tea ceremonies. This type of Matcha should be powdery, very fine, and boast a bright spring green shade.
If it has a slightly yellow colour and feels coarse, you definitely do not have ceremonial grade Matcha on your hands. Ceremonial Matcha is also delicious enough to be enjoyed on its own. You can simply mix it with hot water and consume it as it is; it does not need any sweeteners or additions. Another point worth bearing in mind is that you only need about half a teaspoon of ceremonial grade Matcha when making a cup of tea. You will need more than this when using a lower grade of Matcha. Therefore, while ceremonial Matcha may be more expensive to buy initially, it will last you a lot longer, and thus the costs even themselves out.
No matter whether you are going to host a traditional Japanese tea ceremony with your friends or an evening of fine dining, you will need to decide what tempura dishes you are going to create. The great news is that there are so many different options for you to choose from!
Let’s go through some of the most popular. If you’re looking for a veggie dish, eggplant tempura is a great choice. This is known as Nasu. Or, how about Ebi? This is shrimp tempura, and it is delicious! It is typically used as a topping for udon or soba noodles, yet it can also be enjoyed on its own. Don’t confuse this with Ebi Furai; this is another type of fish, yet it is deep fried with panko batter, which is a lot heavier.
Some other options include tempura shiitake mushrooms, Ika, which is squid tempura, and Hotate, which is tempura scallops. If you are feeling really adventurous, you may want to consider Anago, which is salt-water eel. They have a sweet taste and a soft texture.

Looking for a Shabbat dinner centerpiece or a hearty midweek meal? Picture cubes of eggplant, zucchini, bell peppers, tomatoes and potatoes cooked together to create that special harmony only veggies that grew together in the sun achieve. You’re thinking of ratatouille, right? But what I have in mind is a heartier dish from Romania and Bulgaria called ghiveci or guvech.
Romanian ghiveci and Bulgarian guvech are indeed very similar to the famous ratatouille, but being peasant’s food, they’re more rustic and substantial. The veggies for guvech are cut into large, uneven chunks, and can be cooked all together at once, while for ratatouille, each component is fried separately before they are combined. This makes guvech preparation much easier, and allows for creative improvisations; you can easily add any vegetables in season. Besides the mandatory eggplant, zucchini, peppers, tomatoes and potatoes, green beans or okra are common. Guvech is seasoned very simply with salt, black pepper and occasionally paprika, to let the produce shine. The Bulgarian version is cooked with fatty meat, while most Romanian versions are vegan.
“In Bulgaria, guvech used to be cooked in a clay pot called gyuveche,” Etti Ben Yosef, a Bulgarian Jew who lives in Israel, told me. “The stew was cooked in the oven for many hours at low temperature.” 
But these days, when Ben Yosef makes guvech for Shabbat dinner, she uses a pressure cooker to precook the beef short ribs before adding them to the vegetables. Then, she cooks the entire stew on the stove for a long time, putting it in the oven for the final hour to give it a nice crust. She feels lucky to share the recipe with her adult children. “I keep the tradition so the kids will remember,” she said.
Guvech’s origins can be traced to the Ottoman Empire that ruled the Balkan region for hundreds of years. The original Turkish dish, called güveç, is cooked in a wide, clay dish by the same name. It’s very similar to the Bulgarian guvech and includes chicken, lamb or beef. There are many other variations of the dish throughout the Balkans. Bosnian Đuveč or djuvec is the name of a clay pot as well as a veggie casserole that’s cooked with rice; Greek giouvetsi is also cooked with rice. In Romania, the eggplant-tomato version is considered summer ghiveci, while winter ghiveci is prepared with carrots, cabbage, cauliflower and mushrooms. 
Bulgarian Sephardi Jews and Romanian Ashkenazi Jews brought guvech to Israel (where it’s pronounced “ghe-vech”) and made the dish widely popular. No wonder, given that eggplant and tomatoes are so beloved in Israel and are of such high quality. Early Israeli versions can be found in Molly Bar David’s “Folkloric Cookbook” from 1964. The first version includes 14 different vegetables (including celery root and cauliflower) and meat. The second version is for Romanian ghiveci that’s baked with a whole fish on top.
The vegetarian Romanian version is probably most common in Israel nowadays. And although it is  traditionally served over rice, I like to serve it on another Romanian staple, mamaliga. It’s the definition of comfort food. 
This recipe is the Bulgarian version of guvech that includes meat. You can make the recipe vegetarian by simply omitting the meat. The rest of the ingredients and instructions stay the same.
Notes:
It is recommended, and easy, to add any seasonal vegetables to the basic guvech. Consider adding: 1 lb butternut squash or sweet potato, cut into ½-inch dice; ½ lb whole okra, stems removed; or ½ lb green beans, cut into 1-inch pieces.
You can cook the meat, if using, up to two days in advance. Store the cooked meat in the fridge with the cooking liquid. Before using, remove from the fridge and discard the fat on the top of the pot (the fat will be solid and white in color). 
Guvech keeps in the fridge for up to four days.

Tamales
They are very popular in Colombian cuisine. Perfect for a hearty breakfast or a delicious snack, they are made with rice, flour, pork and poultry, carrots, eggs, potatoes and peas. The preparation is wrapped in banana leaves and ingredients can be added or restored according to the taste of whoever is going to taste it.

Types of tamales
Tamal or coastal cake
One of the most delicious Colombian tamales is the costeño since it uses a distinctive ingredient: rice. Try them and dare to prepare them!
Ingredients (10 tamales)
•4 cups of rice
•1000 grams of minced pork
•500 grams of bacon cut into squares
•1000 grams of chicken cut into portions
•1 cup of vinegar
•2 tablespoons of achiotado oil
•3 cups of stew
•750 grams of peeled and sliced potatoes
•2 ripe tomatoes, peeled and sliced
•2 big-headed onions, peeled and sliced
•4 chopped garlic
• 4 criollo peppers, chopped
• Quarter cup of capers
•8 cabbage leaves
•Salt and pepper
• Greased bijao leaves
Preparation
To start, you must soak the rice with the achiotado oil and salt in vinegar.
Then, you must put the meats in a pan over medium heat with the stew, seasonings and a little water until they are well cooked. When the meats are ready, spread the leaves on a table. First, put a large one, and on top place a medium one to form a cross. Now, on top of them, add half of the portion of rice, the meats, the potato slices, onion, tomato, capers, the other part of the rice and the cabbage leaf. To give it a little more flavor you can add more stew.
Finally, join the tips of the leaves by wrapping the dough to form a square and tie them with the rope. Cook in a large pot for 2 to 3 hours.

Santafereño tamale
This is the typical tamale from Bogotá. It differs from other Colombian tamales due to its ingredients and its preparation process. If you want to learn how to make them, we will show you the recipe!
Ingredients (10 tamales)
•2 pounds of soaked corn dough
•1 pound of chicken
•½ pound of sausage
•1 pound of pork ribs
•½ pound green peas
•1 ½ cups of hogao (fried tomato and long onion)
•½ pound of cooked chickpeas
•1 ½ cup of water
•½ cup lard
•Salt and pepper to taste
•Plantana or chisgua leaves
Preparation
Once you have the ground and cooked corn, add a little water and melted lard to form the tamale dough. Then, add the hogao, the meats (seasoned, cooked and chopped) and the grains, and season with salt and pepper. Keep kneading until the ingredients are well incorporated, and let it rest for 1 hour. After you have let the dough rest, spread out the banana leaves, brush them with a little oil and start adding the portions of dough. Later, take the tips of the leaves and join them at the top to form a kind of rectangular or square package. Finally, assemble the tamales with a cabuya, and cook them in boiling water for 2 hours.
