¾ teaspoon fine sea salt
½ teaspoon Dijon mustard
Vegetables
2 tablespoons extra-virgin olive oil
1 medium-to-large yellow onion, chopped
2 large or 3 medium carrots, chopped (about 1 cup)
8 ounces Baby Bella mushrooms, cleaned and chopped
½ teaspoon fine sea salt, to taste
Freshly ground black pepper, to taste
5 to 6 ounces baby spinach, roughly chopped
2 cloves garlic, pressed or minced
Everything else
2 ½ cups marinara sauce, homemade or store-bought
9 no-boil lasagna noodles
Suggested garnishes: vegan Parmesan (or a light sprinkle of nutritional yeast) and fresh basil
Instructions
Preheat the oven to 425 degrees Fahrenheit.
If you soaked your cashews, drain them and rinse them in clean water.
Blend the cashews, water, vinegar, salt, and mustard in a food processor. Blend until the mixture is creamy and smooth, pausing occasionally to scrape the sides. If the mixture isn’t blending easily, add up to 1/2 cup more water carefully, only using what is necessary. Place aside.
Preparing the vegetables: In a large skillet over medium heat, warm the olive oil. Once shimmering, add the onion, carrots, mushrooms, salt and several twists of black pepper. Cook, stirring every couple of minutes, until most of the moisture is gone and the vegetables are tender and turning golden on the edges, about 8 to 10 minutes. Add another splash of olive oil if necessary to prevent them from sticking to the bottom of the pan.
Add a few sizable handfuls of spinach to the skillet. Cook with frequent stirring until the spinach has wilted. Repeat with the remaining spinach and simmer for an additional 3 minutes, or until the spinach has completely wilted. Stirring frequently, add the garlic and simmer for about 30 seconds until fragrant. After taking the skillet off the heat, add salt and pepper as desired.
Spread ¾ cup tomato sauce evenly over the bottom of a 9” by 9” baking dish. Layer 3 lasagna noodles on top (snap off their ends to fit, and/or overlap their edges as necessary). Spread 1 cup of the cashew cream evenly over the noodles. Top with half of the veggies. Top with ¾ cup tomato sauce.
Top with 3 more noodles, followed by another 1 cup cashew cream (save the leftover cream). Then add the remaining veggies.
Top with 3 more noodles, then spread ¾ cup tomato sauce over the top to evenly cover the noodles.
Wrap a sheet of parchment paper or aluminum foil around the top of the lasagna, making sure it’s taut so it doesn’t touch the top. Bake, covered, for 25 minutes, then remove the cover, rotate the pan by 180° and continue cooking for about 5 to 10 more minutes, until it’s steaming and lightly bubbling at the corners.
Remove the pan from the oven and let the lasagna cool for 15 to 20 minutes, so it has time to set and cool down to a reasonable temperature. Drizzle leftover cashew cream on top (if it’s too thick to drizzle, thin it out with a small amount of water first). Sprinkle vegan Parmesan and fresh basil on top, if using, then slice and serve.

1 cup water
2 tablespoons lemon juice
2 teaspoons apple cider vinegar
¾ teaspoon fine sea salt
½ teaspoon Dijon mustard
Vegetables
2 tablespoons extra-virgin olive oil
1 medium-to-large yellow onion, chopped
2 large or 3 medium carrots, chopped (about 1 cup)
8 ounces Baby Bella mushrooms, cleaned and chopped
½ teaspoon fine sea salt, to taste
Freshly ground black pepper, to taste
5 to 6 ounces baby spinach, roughly chopped
2 cloves garlic, pressed or minced
Everything else
2 ½ cups marinara sauce, homemade or store-bought
9 no-boil lasagna noodles
Suggested garnishes: vegan Parmesan (or a light sprinkle of nutritional yeast) and fresh basil
Instructions
Preheat the oven to 425 degrees Fahrenheit.
If you soaked your cashews, drain them and rinse them in clean water.
Blend the cashews, water, vinegar, salt, and mustard in a food processor. Blend until the mixture is creamy and smooth, pausing occasionally to scrape the sides. If the mixture isn’t blending easily, add up to 1/2 cup more water carefully, only using what is necessary. Place aside.
Preparing the vegetables: In a large skillet over medium heat, warm the olive oil. Once shimmering, add the onion, carrots, mushrooms, salt and several twists of black pepper. Cook, stirring every couple of minutes, until most of the moisture is gone and the vegetables are tender and turning golden on the edges, about 8 to 10 minutes. Add another splash of olive oil if necessary to prevent them from sticking to the bottom of the pan.
Add a few sizable handfuls of spinach to the skillet. Cook with frequent stirring until the spinach has wilted. Repeat with the remaining spinach and simmer for an additional 3 minutes, or until the spinach has completely wilted. Stirring frequently, add the garlic and simmer for about 30 seconds until fragrant. After taking the skillet off the heat, add salt and pepper as desired.
Spread ¾ cup tomato sauce evenly over the bottom of a 9” by 9” baking dish. Layer 3 lasagna noodles on top (snap off their ends to fit, and/or overlap their edges as necessary). Spread 1 cup of the cashew cream evenly over the noodles. Top with half of the veggies. Top with ¾ cup tomato sauce.
Top with 3 more noodles, followed by another 1 cup cashew cream (save the leftover cream). Then add the remaining veggies.
Top with 3 more noodles, then spread ¾ cup tomato sauce over the top to evenly cover the noodles.
Wrap a sheet of parchment paper or aluminum foil around the top of the lasagna, making sure it’s taut so it doesn’t touch the top. Bake, covered, for 25 minutes, then remove the cover, rotate the pan by 180° and continue cooking for about 5 to 10 more minutes, until it’s steaming and lightly bubbling at the corners.
Remove the pan from the oven and let the lasagna cool for 15 to 20 minutes, so it has time to set and cool down to a reasonable temperature. Drizzle leftover cashew cream on top (if it’s too thick to drizzle, thin it out with a small amount of water first). Sprinkle vegan Parmesan and fresh basil on top, if using, then slice and serve.

1 whole bay leaf
10 uncooked lasagna noodles broken into approx. 1-2 inch pieces
1/2 cup heavy cream(optional)
CHEESE GARNISH
shredded mozzarella cheese
freshly finely grated Parmesan cheese
ricotta cheese
INSTRUCTIONS
Over medium-high heat, preheat a large soup pot or Dutch oven.
Stirring occasionally, add the steak and onion and cook until the beef is browned. Saute for 30 seconds after adding the garlic and red pepper flakes. Drain away any extra fat.
Add Prego Sauce, 6 cups chicken broth, crushed tomatoes, tomato paste, balsamic vinegar, sugar, spices, bay leaf and lasagna noodles. Bring to a boil then reduce to a simmer until lasagna noodles are tender, stirring occasionally (approximately 20-30 minutes).
Throw away the bay leaf and stir in 2-4 cups of chicken stock and heavy cream, if preferred, to achieve the appropriate consistency.
Serve each plate with the required number of cheeses as a garnish.

Ingredients
(for 6 servings)
4 boneless, skinless chicken breasts
4 teaspoons salt
4 teaspoons pepper
4 teaspoons garlic powder
4 tablespoons canola oil
3 cloves garlic, minced
½ medium white onion, finely chopped
2 cups heavy cream(480 mL)
½ cup shredded parmesan cheese(55 g)
1 cup fresh parsley(35 g), chopped
10 lasagna noodles, cooked
2 cups shredded mozzarella cheese(200 g)
6 strips bacon, cooked and crumbled
Preparation
Preheat oven to 350°F (180°C).
Slice each chicken breast in half lengthwise, then season with 1 teaspoon each of salt, pepper, and garlic powder.
In a big pan with high heat, heat the oil. Sear the chicken for about a minute on each side. Later, they will finish cooking in the oven.
In the residual oil (drain some if necessary), toss in the garlic and onions, stirring constantly until the mixture has started to brown.
Pour in the cream, stir until it starts to boil, then add the parmesan and parsley.
Cook for 1 additional minute, then remove from heat.
In a 9″ x 13″ (23cm x 33cm) rectangular baking pan, spread about ¼ of the cream mixture on the bottom.
Lay enough lasagna noodles to cover the sauce, then spread about ½ of the remaining cream mixture on top.
Place enough chicken breasts to cover the sauce, then sprinkle with half of the mozzarella, followed by half of the bacon and half of the parsley.
Repeat the layers once more, starting with noodles, sauce, chicken, bacon, parsley, and mozzarella.
Bake for about 25 minutes, until the cheese is golden brown.
Cool for about 15 minutes, slice, and serve!

Origin

The narrative starts in the southern Chinese province of Guizhou. Ding Bautzen accidentally fell into the ocean as a small child in the early 19 th century, and he had never learned to swim.
Ding was saved and later had a position in the Sichuan provincial government because of the quick thinking of a local. A Ding met the man and his family to offer his gratitude to the man who saved his life years earlier.
A dish of chopped and marinated chicken, peanuts, and hot Sichuan peppercorns was given to him there that he had never eaten before.
He loved the meal so much that he inquired about the recipe and began giving it to visitors at his house as well. Soon after, the meal became popular throughout the province and was given the name Gongbao Jiding, after the guy who gave it that name.
As time passed, the spicy and savory Kung Pao Chicken dish spread to restaurants all throughout China and eventually to North America, where Europeans fell in love with it. Ever since, the dish continues to remain quite popular in America and is served happily in the restaurants too.

800g boneless/skinless chicken breast cut into 1 inch cubes
1 tablespoon Shaoxing wine or dry sherry
1 tablespoon light soy sauce
2 teaspoons baking soda
1 teaspoon cornstarch / corn flour
Sauce:
1/2 cup low-sodium chicken stock (or broth) — water can be used
5 tablespoons light soy sauce
2 tablespoons Chinese black vinegar (or substitute good-quality balsamic vinegar)
2 tablespoon Chinese Shaoxing wine (or dry sherry)
2 teaspoon dark soy sauce
2 teaspoons hoisin sauce
2 tablespoons sugar(as per taste)
1 teaspoon cornstarch / corn flour
For Stir Fry:
4 tablespoons cooking oil divided
1 1/2 tablespoons garlic (4-6 cloves)
1 tablespoon ginger
1/2 red bell pepper (capsicum) seeded and diced
1/2 green bell pepper (capsicum) seeded and diced
8-10 dried chilies cut into ½-inch pieces (adjust to taste)
1 tablespoon Sichuan peppercorns, lightly toasted and ground
4 green onion / scallion stems cut into 1-inch pieces
1/2 cup roasted/unsalted peanuts
2 teaspoons sesame oil optional
How to make delicious Kung pao chicken at home
In a shallow bowl, combine all the ingredients for the chicken. Cover and marinate for 10 minutes.
Set aside after whisking the sauce ingredients until the sugar has dissolved.
Over high heat, preheat a sizable skillet, pan, or wok. Add 2 teaspoons of cooking oil, let it heat up, then add the chicken that has been marinating. Cook the chicken for 3 to 4 minutes, tossing periodically, or until the edges are browned. Heat has been removed; set aside.
Put any leftover cooking oil in the same pan or wok. Stir-fry for one minute after adding the garlic, ginger, chili chopped, peppers (capsicums) and Sichuan peppercorns.
Mix the prepared sauce well, add it to the pan, and then stir it as it boils.
Reintroduce the chicken after the sauce starts to thin out. When the sauce starts to somewhat thicken, toss the chicken back into the pan or wok and stir all of the ingredients together until the chicken is thoroughly covered (about 2 minutes).
Add the sesame oil, peanuts, and green onions. To blend the flavor’s, give everything a good toss and cook for a further 2 minutes. Serve right away with fried or steaming hot rice!

Pour the batter into your prepared loaf pan.
Bake for 55 to 65 minutes at 350°F (175°C), or until a wooden skewer or toothpick inserted into the center of the cake comes out clean. Streaks of wet batter are unacceptable, while a few dry crumbs are acceptable. Loosely tent the loaf with foil and continue baking it until it’s fully done if the exterior of the loaf is browned but the middle is still damp.
Remove from oven, then allow to cool in the pan for a while. After that, take the banana bread out of the pan and allow it to cool completely before cutting. Slice and present. (A bread knife is useful for cutting slices that won’t crumble.)
The banana bread will remain fresh at room temperature for 4 days if properly wrapped. You can freeze or refrigerate the bread for longer storage for up to 5 days.
