Ingredients: 1 cup pitted dates. 1/4 cup almond butter. 1/4 cup coconut milk. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Allow dates to soak in hot water for ten minutes. Then, drain them. Put almond butter, coconut milk, salt, dates that have been soaked in water in a blender or food processor. To make it smooth and creamy, scrape down the sides of the bowl as needed. Move the mixture to a saucepan. Cook over low heat, stirring often, for 5 to 7 minutes, or until it gets a little thicker. Take it off the heat and let it cool down a bit before you serve. Put any leftovers in a container that won't let air in and put it in the fridge.

Instructions: Add cold brew coffee, vanilla extract, coconut milk, and a pinch of salt to a blender. Blend until smooth. Mix until it's smooth. Put the mixture into an ice cream maker and churn it according to the machine's directions until it's the consistency of soft serve. Move the ice cream that has been churned to a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. Over medium heat, mix the coconut sugar, bourbon, and coconut oil in a saucepan. For about 5 to 7 minutes, stir the mixture all the time until the sugar is gone and it's smooth and thick. Take it off the heat and let it cool down a bit. Add sea salt to taste. Top the vegan cold brew ice cream with a caramel sauce made with salted bourbon. Have fun!

Apple Pie Bars are the best fall dessert that you can make that is also paleo and vegan. These bars are too good to resist. They have a buttery crust, a sweet and gooey apple filling, and a crunchy crumble topping.
Ingredients: For the Crust:. - 1 cup almond flour. - 1/4 cup coconut flour. - 1/4 cup coconut oil melted. - 3 tbsp maple syrup. - 1 tsp vanilla extract. - 1/4 tsp salt. For the Apple Filling:. - 3 medium apples peeled, cored, and thinly sliced. - 2 tbsp coconut oil. - 2 tbsp maple syrup. - 1 tsp cinnamon. - 1/4 tsp nutmeg. - 1/4 tsp salt. - 1 tsp arrowroot powder. - 1 tbsp water. For the Crumble Topping:. - 1/2 cup almond flour. - 1/4 cup chopped pecans. - 2 tbsp coconut oil melted. - 1 tbsp maple syrup. - 1/2 tsp cinnamon. - Pinch of salt.
Instructions: Preheat oven to 350F 175C and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. For the crust, mix almond flour, coconut flour, melted coconut oil, maple syrup, vanilla extract, and salt in a bowl until well combined. Press the mixture into the bottom of the prepared baking dish. Bake the crust in the preheated oven for 10 minutes, then remove and let it cool slightly. For the apple filling, heat coconut oil in a large skillet over medium heat. Add the sliced apples, maple syrup, cinnamon, nutmeg, and salt. Cook, stirring occasionally, until the apples are soft, about 10 minutes. In a small bowl, mix arrowroot powder and water. Add the mixture to the skillet with the apples and stir until the sauce thickens, about 1-2 minutes. Remove from heat. Spread the apple filling evenly over the crust. For the crumble topping, mix almond flour, chopped pecans, melted coconut oil, maple syrup, cinnamon, and salt in a bowl until crumbly. Sprinkle the crumble topping over the apple filling. Ingredients: 1 cup almond flour. 1 cup all-purpose flour. 1/2 cup vegan butter, softened. 1/2 cup granulated sugar. 1/4 cup almond milk. 1 teaspoon vanilla extract. 1/2 teaspoon almond extract. 1/4 teaspoon salt.
Instructions: Start by heating the oven to 350F 175C. Put vegan butter and sugar in a bowl and mix them together until they are smooth. Along with the vanilla extract and almond extract, add the almond milk to the creamed mixture. Mix well. Add the all-purpose flour, almond flour, and salt to the wet mixture slowly while stirring it together. Do this until a dough forms. Make little balls out of the dough and put them on a baking sheet that has parchment paper on it. Press down gently on each cookie dough ball with a fork to make them a little flatter. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Your vegan vanilla almond sugar cookies are ready to eat once they're cool.
