Ingredients: 2 cups Greek yogurt. 1/4 cup honey. 1 cup fresh strawberries, diced. 1/2 cup roasted pistachios, chopped. 1/2 teaspoon vanilla extract. 1/4 cup granola optional, for topping.
Instructions: In a mixing bowl, combine Greek yogurt, honey, and vanilla extract. Mix until smooth and well combined. Line a baking dish with parchment paper, ensuring there's some overhang on the sides for easy removal. Spread half of the yogurt mixture evenly into the bottom of the baking dish. Evenly sprinkle the diced strawberries and chopped pistachios over the yogurt layer. Pour the remaining yogurt mixture on top and spread it evenly. Ingredients: 2 cups non-dairy yogurt. 1/2 cup raisins. 1/4 cup dark rum. 1/4 cup maple syrup. 1 tsp vanilla extract. Pinch of salt.
Instructions: Soak raisins in rum for at least an hour, or overnight for the best taste, in a small bowl. Put non-dairy yogurt, maple syrup, vanilla extract, and salt in a blender. Mix until it's smooth. Add the soaked raisins and any extra rum that you have left. Put the mixture into an ice cream maker and churn it for as long as the manufacturer says to, which is usually between 20 and 25 minutes. After churning, put the frozen yogurt in a container that can go in the freezer and freeze it for another two to three hours, until it is firm. Put out ice cream scoops of rum raisin and enjoy!
