For people on the ketogenic diet, these Keto No Bake Cookies are a tasty treat. They're simple to make and don't need to be baked, so they're great for a quick dessert or snack.
Ingredients: 1 cup almond flour. 1/2 cup unsweetened shredded coconut. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered erythritol. 1/4 cup almond butter. 1/4 cup coconut oil. 1 tsp vanilla extract. Pinch of salt.
Instructions: Put shredded coconut, cocoa powder, almond flour, and powdered erythritol in a bowl and mix them together. Put almond butter and coconut oil in a small saucepan and melt them over low heat. Stir the mixture until it is smooth. Take it off the heat and add vanilla extract and a pinch of salt. Fold them in. Add the wet mixture to the dry ones and mix them together until they are well mixed. Put parchment paper on the bottom of a baking sheet. Drop spoonfuls of the mixture onto the baking sheet that has been prepared. Use a cookie scoop to shape the dough into cookies. Cool the baking sheet in the fridge for at least 30 minutes, or until the cookies are firm. Put the cookies in a container that won't let air in and put it in the fridge until you're ready to serve them.

This gluten-free no-bake cheesecake has blueberries and lavender in it, which go so well together. The creamy filling is made without dairy or gluten, and the crust is made with gluten-free graham crackers. This dessert is great for people who are sensitive to either gluten or dairy.
Ingredients: 2 cups gluten-free graham cracker crumbs. 1/2 cup melted coconut oil. 1/4 cup maple syrup. 1 1/2 cups fresh blueberries. 1 tablespoon dried culinary lavender buds. 16 ounces dairy-free cream cheese. 1/2 cup coconut cream. 1/4 cup powdered sugar. 1 teaspoon pure vanilla extract. Zest of 1 lemon. Fresh blueberries and lavender sprigs for garnish.
Instructions: Put the melted coconut oil, maple syrup, and gluten-free graham cracker crumbs in a bowl. To make the crust, press this mixture into the bottom of a 9-inch springform pan. While you make the filling, put it in the freezer to set. Place the dried lavender buds and fresh blueberries in a small saucepan. Heat them over low heat until the lavender buds release their juices and become soft. This should take about 5 minutes. Take it off the heat and let it cool down a bit. The dairy-free cream cheese, coconut cream, powdered sugar, vanilla extract, and lemon zest should all be put into a blender. Mix until it's creamy and smooth. Putting the blueberry and lavender mix into the blender, blend it until the ingredients are well mixed and the filling turns a beautiful purple color. Put the gluten-free crust in the springform pan and pour the filling on top of it. Use a spatula to make the top smooth. Put the cheesecake in the fridge for at least four hours, or until it sets and gets firm. After the cheesecake has set, take it out of the springform pan and add lavender sprigs and fresh blueberries on top. Gluten-Free Blueberry Lavender Cheese is ready to be served. Spread it out and enjoy!
