Day 1:
It’s going well so far. It has been a bit of a struggle because I have only just planned my meals for the week so had to make do with what we had in the house.
Managed to make a green smoothie for breakfast and a veggie stir fry with couscous with a sweet chilli and garlic sauce.
The food hasn’t been hard to adjust too so far as I would ordinarily eat this anyway.
Going for a meal out tonight and 80% of the menu is vegan so I’m excited to be inspired by some Sri Lankan vegan recipes 😋

So A New Journey Begins....Veganism
Today is Aug. 18, 2019 and it is the first day of my vegan journey. As of right now I am committed to keeping this up until Sept. 18, 2019 which is a full month. My goals/motivations are pretty simple; I honestly looked in the mirror and admitted that I am on a path that will shorten my life as well as decrease the quality of it as well. I stepped on the scale last night and faced this truth head on...291 lbs. I have got to lose the excess fat that I have put onto my body that surrounds my organs, compresses my veins (high blood pressure), and hinders my joints. My next reason is that I really want to see if this change will help me feel better all over. Will I experience what it really means to be healthy and  if so then what exactly have I been missing out on? Has my perceived good health held me back from really being my best self? My last reason is sheer will. I want to do this at least for my appointed goal. I want to practice mental strength not just wish for it or claim to have it without putting into practice. Ultimately I want to be a better me and I believe taking control of what I eat will help get there.  I have tried to do research leading up to this beginning in preparation for doing this the right way. I have had so many people try to give me the negatives of what they have HEARD what others have gone through trying to live this plant based lifestyle and their failures. Yes, I know that there is a right and a very wrong way to do this but that is why I have tried to do my fair share of research. Now I must say that I am in very much need of help making this really stick and enjoying the journey. ESTABLISHED VEGANS OF ALL WALKS I NEED YOUR HELP! I don't know anything and I looked around in the kitchen today and felt like I had nothing to eat but carrots, peanut butter, and some chibata bread (today I had rice, chic peas, cabbage, and yes the chibata bread) so please share your knowledge and experience with a fledging Vegan. I had some homemade vegan bolognese sauce to use up but no pasta so I decided to put it on my veggies with some rice as a starch. ***************************** If you’re a new vegan let me be clear about how much food this is. I’m American so sorry for the b.s. measurements it’s not my fault! A cup is roughly the size of an average tea cup. ***************************** In this dinner there are 1.5 cups of white rice (I prefer brown but needed to use this up) 1.5 cups of broccoli, 1.5 cups of zucchini (courgettes), a half a cup of green beans, and at least 1.5 cups of oil free bolognese sauce. This is roughly 550 calories. This HUGE plate of food is no more than 600 calories. ***************************** When you first transition to a vegan diet it is likely that you will under eat especially if you’re doing the “whole food oil free” thing. Oils and fats are VERY calorie dense as are processed foods but plants don’t contain a lot of oil (nuts and avocados aside) and Whole Foods have no added calories. As a result a plate of plant based food will be significantly lower in calories than you’re typically “western diet” plate of food. This means you need to eat more and eat more often. Also eat a lot of starchy food, that’s the base of your diet, of the 550 calories in this meal, 300 are from rice! I highly recommend loading a plate, eating till you’re just DONE and saving the rest to eat later. Chances are you’ll want more in a couple hours. If you’re eating a lot of meat replacements or processed vegan food you may not experience this as much. ***************************** A whole food vegan plant based diet is one of abundance! If you’re changing what you eat to lose weight or to improve your health it’s absolutely vital that you don’t calorie restrict!
