KETO VANILLA CAKE DIABETIC BIRTHDAY CAKE -- -- Credit : sweetashoney.co Full: https://www.sweetashoney.co/keto-vanilla-cake-diabetic-birthday-cake/ - INGREDIENTS --VANILLA CAKE 4 eggs 1/2 cup sugar-free crystal sweetener - Monk Fruit or erythritol or xylitol 1 teaspoon vanilla extract 2 tablespoon coconut oil melted or avocado oil or flaxseed oil or almond oil 2 cups almond flour (240g) 1 teaspoon baking powder --VANILLA BUTTERCREAM FROSTING 1 cup dairy-free butter or unsalted butter soft, out of the fridge for 4 hours (150g, 5.3 oz) 3 cups sugar free powdered sweetener - Monk fruit or erythritol or xylitol 1 teaspoon vanilla 2-3 tablespoon coconut cream or heavy cream INSTRUCTIONS --VANILLA CAKE Preheat oven to 160C (325F). Grease a 9 inches round cake pan with coconut oil or butter. Set aside. In a large mixing bowl, whisk eggs with sugar free sweetener, oil and vanilla. Process as if you whisk a breakfast omelette. It should not take more than 30 seconds-1 minute, all you want is to combine the ingredients together. Whisk in almond flour and baking powder and whisk until evenly combined. Pour the vanilla cake batter into the prepared pan. Bake for 25 minutes, in the center of your oven, fan-bake mode is ideal if you have one otherwise use regular mode. Your cake is cooked when a skewer inserted in the middle of the cake come out clean or with few to no crumbs on it. Cool 5 minutes in the pan then release the cake on a cooling rack. Add 2 teaspoon minced garlic, 1/2 teaspoon salt, pinch of dried thyme, pinch dried basil, pinch of dried oregano and pepper to taste. Simmer for 3 minutes. Then add to a high speed blender with 1/2 tablespoon tapioca starch (or corn/potato/arrowroot starch) and 2 tablespoon nutritional yeast. Blend for one minute then add back to medium heat in a sauce pan and whisk until thickened. ***For thinner sauce: Add water or broth, 1 tablespoon at a time and whisk. SCALLOPS: 1/2 pound wild scallops (thawed and dried: place on paper towel and pat dry, then season with salt, pepper and paprika. Pat dry again! 😌😌😌 SAVE THIS POST 📫😍 2️⃣Heat 2 teaspoons ghee or coconut oil over medium high (I use cast iron) and sear the scallops for about 2 minutes per side (do this in batches to ensure you don’t overcrowd them: that’s how you get that sear!)
