I made these Keto brownies and they came out really good! The longer they sit out they taste more fudgey. Now, they are really thin and don't rise that much, so maybe double the batch? (I made two separate batches). But it's definitely worth it when you're forced to do Keto lol.
Just a note, they can be a little crumbly. So lay down some parchment paper when you bake them so they don't stick.

Keto Oreo Dirt Cake
Ingredients
Cookie Crumbs
1 1/2 cups finely ground almond flour
3/4 cup granular sweetener
1/2 cup black Dutch cocoa powder
1/2 cup butter melted
1/8 teaspoon salt
1/2 teaspoon vanilla extract
Chocolate Mousse
1/4 cup cold water
2 tablespoons beef gelatin powder
2 tablespoons very hot water
2 cups heavy whipping cream
1/2 cup granular sweetener
1/2 cup cocoa powder
Whipped Cream
1 cup heavy whipping cream
2 tablespoons confectioners sweetener
1 teaspoon vanilla extract

Instructions
Make the Cookie Crumbs
Preheat oven to 350 degrees. Line a sheet pan with parchement paper.
Put all of the ingredients in a large bowl. Use a fork to stir them together until well combined. The mixture will be wet and crumbly.
Spread the crumbs evenly onto sheet pan. Bake for 15 minutes. The cookie crumbs will look wet and still be soft. Allow to completely cool. Break up mixture into small crumbles. (It's less messy to leave them on the parchment paper and fold in the paper with your hands to crush the cookie crumbs.)
Make the Chocolate Mousse
Put water in a small bowl and sprinkle the gelatin over it. Let stand for 1 minute to soften. Add the hot water, Stirring until the gelatin is completely dissolved.
Use a large mixing bowl with a hand mixer or a stand mixer fitted with a whisk attachment. Whip the cream and sweetener on medium speed until soft peaks start to form. Scrap down the sides. Continue mixing, slowly adding the cocoa powder. Mix until all the ingredients are well combined. Pour in the gelatin mixture and mix until the mousse is smooth.
Make the Whipped Cream
Use a large mixing bowl with a hand mixer or a stand mixer fitted with a whisk attachement. On medium speed, blend cream with sweetener and vanilla until stiff peaks form.
Layer the cake
Use a large trifle bowl or other clear serving bowl to layer the ingredients. Spread one third of the cookie crumbs in the bottom of the bowl. Next, evenly spread half of the chocolate mousse over the cookies followed by half of the whipped cream. Repeat with another third of the cookie crumbs and the rest of the mousse and whipped cream. Sprinkle the top with the rest of the cookie crumbs. Refrigerate for at least 8 hours to overnight before serving.

You can layer the cake in any dish you like. For example, it can be layered in a 9×13 cake pan or individual dessert cups or jars for parties.

1/2 c. coconut flour
1/4 c. shredded coconut
1/2 c. (1 stick) butter, melted
3 (8-oz.) blocks cream cheese, softened to room temperature
16 oz. sour cream, at room temperature
1 tbsp. stevia
2 tsp. pure vanilla extract
3 large eggs, at room temperature
Sliced strawberries, for serving
Directions:
Step 1
Preheat oven to 300°. Make the crust: Grease an 8" or 9" springform pan, and cover the bottom and edges with foil. In a medium bowl, mix together the flours, coconut, and butter. Press the crust into the bottom and a little up the sides of the prepared pan. Place the pan in the fridge while you make the filling.

Step 2
Make the filling: In a large bowl, beat the cream cheese and sour cream together, then beat in the stevia and vanilla. Add the eggs one at a time, mixing after each addition. Spread the filling evenly over the crust.
Step 3
Place cheesecake in a deep roasting pan and set on middle rack of oven. Carefully pour enough boiling water into roasting pan to come halfway up sides of springform pan. Bake for 1 hour to 1 hour 20 minutes, until it only slightly jiggles in the center. Turn oven off, but leave the cake in the oven with the door slightly ajar to cool slowly for an hour.
