Mention Kagawa Prefecture to any fan of Japanese cuisine and you’ll hear the words – 'Aaah, Sanuki udon... the best!', or something to that effect. This is udon-ken (udon prefecture) and various versions of the thick wheat-flour noodles can be found on almost every corner. Hone-tsuki-dori is a grilled or baked chicken-on-the-bone dish, said to have originated in Marugame, that is popular prefecture-wide.

Today, I'm going to make "Udon Noodles in a Chilled Dashi Soup".
Udon is thin, long and white noodles made from wheat flour and water. They are eaten hot in broth or eaten cold after being dipped in a soy-flavored sauce.
It is a local dish of Kagawa prefecture.
In my channel, I'm going to make Japanese cuisine by using Japanese Dashi.
I wanna express the Japanese aesthetic senses through my youtube video.

Japanese cuisine is so next level. I hope I get back there to try this someday.
Olive Sanuki Wagyu, exclusively raised in Kagawa prefecture is fed on the remains of pressed olives - It's considered the rarest beef in the world. If you try hard you might notice the underlying taste of olives. The choice of steak is Olive Beef Sirloin 200g -

Japanese Craft Beer
Tumblr media
Aussies love beer and love to travel. When they do travel they usually want to have unique authentic local experiences. What better drink to have in Japan than a Japanese craft beer then? Made with local ingredients by locals, it’s the ultimate local experience.
About ten years ago I started seeing craft beers here and there in Japan. Some were in the combine or convenience stores, and others were in bottle shops, and over the last five years, I’ve noticed an increasing number of craft beer bars have been popping up. Two years ago, on holidays in Gomyo, Kagawa Prefecture (way out in the sticks), I even saw a craft beer brewery there, which shows how far the scene has come in Japan in the last few years.
Is Craft Beer Popular in Japan?
In some cool neighborhoods like Shimokitazawa, there are several craft beer bars, as well as several bottle shops that sell a wide variety of craft beers. The most impressive craft beer selection is at Kitazawa Konishi along with an awesome Stars Wars treasure trove. Other trendy areas, like Koenji, Nakano, and Shibuya also have more than one craft beer place each. Now there are also some in business centres like Marunouchi, Ginza, Shinagawa and Gotanda. They are becoming so mainstream that I’ve ever seen one in Shinjuku!
Although craft beer’s popularity in Japan keeps growing and growing, in many izakayas, or Japanese-style pubs, there is not really a lot of them for sale. The same goes for sushi and ramen bars. So, if you are going out for sushi or some other real Japanese-style cuisine, you may be limited to sake, shochu, and beer from the big producers. Most craft beer bars tend to serve only western style food. The logic seems to be that burgers, hummus, and pita toast go better with the deeply interesting craft beers. Yakitori, ramen, and edamame on the other hand have matched beautifully with sake, shochu, and mainstream beers for centuries. They don’t want to mess with that.
Festivals for Craft Beer Fans
Aside from the increasing number of craft beer bars, there are also a lot of craft beer festivals in and around Nagano. A quick google search reveals BeerFes, The Great Japan Beer Festival, Oedo Beer Festival, and The American Craft Beer Experience plus lots of smaller festivals. Most of them are annual, some of them even happen two or three times a year and they all offer a wide range of craft beer plus tasty beer snacks. They will give you lots of different craft beers for your beer bucks.
In the regional cities such as Osaka, Sapporo, Fukuoka, Kobe, and Nagano, there is also a craft beer festival or two per year.
What Are Some Good Japanese Craft Beers?
Vertere TIPA is made out west of Tokyo in Okutama. You can visit the brewery, buy some beer and go for a hike. The hiking is good and the beer is great. They make a 10% double IPA which is also sold in the combine in the area but be careful that 10% really sneaks up on you.
Sankt Gallen – Brewed in Kanagawa, south of Tokyo, they claim to have made the first craft beer in Japan. They have lots of beer made with fruit, chocolate, and even a stout made with coffee beans excreted by an elephant.
Yona Yona Ale – the name means “drinking night by night”. Its home is in Karuizawa, a fashionable resort town in Nagano Prefecture in the snowy North. It tastes hoppy and fruity. Should be drunk at 13 degrees Celsius to bring out the flavors. They have their own craft beer bar called Yona Yona Beer Works. Their beers are American-style pale ales.
Swan Lake Beer – it’s brewed in Niigata to be crisp and a little bitter. It’s another craft beer brewery in the snowy North! They have a bottom fermentation beer, Koshihikari, made with rice of the same name.
Hitachino Nest Japanese Classic Ale – It has a light refreshing hoppy taste. The brewery is in  Kounosu in Ibaraki, northeast of Tokyo. The town’s name literally means “wild goose nest”. The family has been brewing sake for eight generations and their skills show in their very drinkable craft beers.
Shiga Kogen Beer – made in Yamanouchi in Nagano with pure mountain water. Some of their beers contain sake rice and all of them are unfiltered. They have an American Pale Ale, a coffee stout, and a barrel-aged sour ale. There is also UFO, an Unidentified Fermented Object, and an imperial milk stout.
Minoh – an Osaka microbrewery. They make Minoh Godfather 8 Yamaroku Ale which has Yamaroku soy sauce in it. It’s a 6% pale ale and not as weird as it sounds. They also made a salty ale with local salt but it was discontinued because it was as weird as it sounds.
Chabeer – from Kyoto makes a luscious cherry stout called Smoochies. They also make Wasabi Salt Gose, a 4.5% goes, which is a little spicy as you’d expect but surprisingly mild and malty.
So you can come to Japan for the temples, shrines, and fabulous food, you can even come for the skiing, but also dive into the vibrant craft beer scene to really get to know the locals. Local and sometimes quirky ingredients, ancient skills and modern brewing technology is a recipe for a great experience.

11 questions tag
Thank you for tagging me @thebookfreak. This was harder than I expected. Mostly because I am such an indecisive person and change my mind a lot. Also I took way too long until I posted this… Sorry…
Rules: Answer the 11 questions then make 11 of your own for the people you tag.
1. What’s the cuisine you’ve always wanted to try?  I don’t really have one that I’d like to try and I can be quiet picky when I don’t know how something tastes like. Also I can’t eat spicy and I should feel ashamed because I’m Asian and should be able to…
2. Are you a dog person or a cat person?  I’d say both, but I’m leaning towards cats. They represent me as a person, but dogs are still fun to play with. Both are amazing pets to have, but sadly I don’t have any pets. Yet.
3. Do you ever just sit and watch the sky? When I was younger I always looked up at the sky and tried to think up some stories about the different shapes of the clouds. It was very amusing, but now I don’t really take the time to enjoy the vast blueness that is gracing this earth. But I do enjoy sunrises, sunsets and the night sky. If I have the time, feel nostalgic or have an existential crisis I look up towards the sky and just let my mind wander around.
Last week when we were on a school trip to Greek, they night sky was splendid! I was so in awe that I had to lay down and watch the stars while my friends waited for me… It was worth laying on the dirty ground.
4. If you were able to meet your fav fictional character who would it be? What would you ask them? It was hard to think of one person and I took a while, but after looking at my bookshelf I’d say Ash from the book series ‘Iron Fey’ by Julie Kagawa. I’d love to ask him, if he secretly likes Puck and sees a love interest in him… I’m sorry! Their bromance is just amazing… but (spoiler alert) I’m happy that he ended up with Meghan.
5. What’s the most dumb thing you’ve ever done?  There are so many things and I could literally facepalm myself every time my mind plays those scenarios.
One thing I’m thinking of right now is when we went bowling in 7th grade. I didn’t know how slippery the bowling ally is for the ball to roll through it smoothly. I overstepped the line and slipped on the alley while the bowling ball was stuck in the middle of the alley. I tried reaching for the ball before I realised that I should probably leave the alley asap. I managed to make the ball roll all the way to the pins by throwing another ball. Still, I was mortified and needless to say that I’m never setting foot on an ally again.
But there are many more things that make me have a cringe attack and facepalm myself multiple times, e.g. some interactions with people.
6. Have you ever broken the rules in a strict prohibition zone? Uhm… no? I don’t think so besides using my phone in school. Or maybe that I didn’t put my phone on flight mode when we were on an airplane… ups.
7. Three of your all time favorite songs. This is hard because I’m a very indecisive person and because I haven’t listened to anything much besides classical music and now some k-pop.
1.) Demons by Imagine Dragons
2.) Hey by Andreas Bourani (it’s a german song) and Stressed out by Twenty One Pilots. (Yes, I am cheating right now, but they are sharing the second place, because I can’t decide which one is better and definitely wanted to include this last song).
3.) And my recent favourite is from my new found k-pop group BTS:‘First love’.
I literally got dragged into BTS by my close friend like a month ago… and I regret nothing. (Ok, maybe my lost time that I could spend for school… but let’s be honest. I’d just procrastinate with something else.)
Tbh, I didn’t include any classical songs and I feel like I am betraying those amazing sounding songs… I apologise profusely, but there are just too many songs in this world to choose from. Additionally, I am still at this stage where I haven’t listened to many different genres and am still trying to find myself and my style etc..
8. Your fav dialogue. I’m hating these favourite things. I always have to rake up my brain with some answer… but I’d say Judy’s hustle scene in Zootopia. And obviously all those scenes in Sherlock Holmes.
9. Is there any ship you can litteraly argue like crazy? I don’t like ship wars and avoid confrontations, but I’d say I’m very passionate about some of my non-canon ships Kakasaku and Zutara and would defend them if necessary.
10. Do you still watch Disney movies?  Of course! And I still cry at the same scenes every time I rewatch them. It gets me every time. Those movies are just so good! And I am very emotionally invested when I watch them.
11. Do you believe in magic? I’m still waiting for my letter from Hogwarts… but my realistic brain tells me to go on with my normal life… (I’d choose Ravenclaw).
My questions:
1.) What’s your favourite childhood cartoon series?
2.) Butter or margarine? And why? (This debate came up on our school trip and I’m interested to see some other perspectives)
3.) Where would you like to travel to?
4.) What did you want to become when you were younger?
5.) Did you pursue that dream or would you still follow it through?
6.) Average hour of sleep every night?
7.) Any fears?
8.) If you could, would you change anything in the past?
9.) What superpower would you love to have?
10.) What are your dreams for the future?
11.) What’s your goal in life?
I’m tagging @mydarlingl0ve, @peachpie24, @61-darkangel (I hope you will come online someday) and @thebookfreak (yes, I’m tagging you back so you can answer some new questions :D).
