I just watched a tiktok of Will Poulter talking about the lack of fine dining restaurants specializing in African cuisines, and how only 4 Michelin stars have ever been held by Black chefs. I feel like this fact would be such an interesting addition to the Sydney wants a star plot line and considering how their first menu drew so heavily on Carm’s Italian culture it would be nice to see a future menu drawing from Syd’s Nigerian/west African heritage.

Carmy does not know how to do a chaos menu

They spent like 5 minutes working on it together. Carmy knows how to pair foods and what makes sense logically on a plate. But a chaos menu requires stepping outside of what's expected, experimenting, pairing two unlikely things together. We've seen Syd do that with the Etoufée and Coca Cola. Even her omelette had a bit of chaos with the potato chips. Carmy is used to cooking by the book. The closest thing they made to chaos was a savory cannoli and broth with grapes. Right now it's still looking very standard Italian. Sydney's touch is just waiting to be added. The thoughtfulness is not fully there yet, probably cause he had been avoiding thoughts of her. The menu is not done and is for sure going to get a revamp in Season 3. If my theory on her mom's family being from the Creole South is right, an Italian/Creole fusion chaos menu would make so much sense both for them and historically speaking as those two cuisines have already meshed. The muffuletta sandwich is famously a mix of those two and would fit perfectly for the window in the back. Also location wise, The Bear is on Orleans street and if Sydney's influence comes from New Orleans. It's just too perfect, yet thoughtfully unexpected.

Oh my! I do have something in the works. It’s kind of inspired by The Godfather.
Carmy’s the prodigal son who’s being set up to take over the family biz. He really wants to be an artist so he runs to Italy, partially to make them believe he’s learning the ropes of it all but really he’s there for art classes and the starving artist life.
Enter All-American Good Girl Syd who’s in Italy to learn the ins and outs of the Italian Cuisine.
She’s short on cash and she answers an ad for an artist who needs a model for his painting. I guess it’s already pretty obvious who the artist is.
I’m still debating on when the era will be but definitely not modern/contemporary times! I am learning more towards the 80’s/90’s though.
How does that sound? To readers out there, should I pursue this? Hmmmm

Alfred can afford to be a little more idealistic, but that's just his way.
**Historical Note: Though immigrants from each of these groups contributed in a variety of ways, these are some of the ways in which they contributed most prominently.
Irish Americans were incredibly active in the entertainment industry, especially in music. Irish Americans were very prominent in vaudeville, and eventually Broadway. However, this was due to a pre-existing music tradition that stemmed from Irish immigrants bringing over their folk music. Many Irish airs became popular parlor songs in the UK, America, and Canada. The strong Irish presence in the Union Army during the Civil War also further popularized folk songs such as "McLeod's Reel." Though the Potato Famine caused the decline of traditional music in Ireland, many songs and playing styles were preserved by Irish Americans in the United States and later carried back to Ireland in the 1890s-1920s when recordings began to become accessible. These recordings were also among the first to be sold in the United States.
Italian American cuisine is one of the most influential marks left by the community, especially from Southern Italians. Many innovations in Italian cuisine occurred in the United States, and many Italian immigrants became successful restauranteurs. This explosion occurred due to previously inaccessible foods suddenly being affordable in the United States, such as meat and imported cheese. Today, Italian American food is still one of the most popular cuisine choices in the United States.
Though all of the groups mentioned had involvement in labor union activity, Lithuanian Americans were particularly prominent activists. One of the most famous of these activists was Emma Goldman, but there were several others who formed the United Mine Workers and the Amalgated Clothing Workers Union. Sydney Hillman, a Lithuanian immigrant, was the head of the Amalgated Clothing Workers Union from the 1910s to the 1940s. Even in fiction, in Upton Sinclair's The Jungle, Lithuanian workers and their union activity are the central focus. Lithuanian Americans' strongest import really seemed to be their activism!
For all of these groups though, one big part of what made American so attractive was the comparative plenty to what they had in their countries of origin. Though many immigrants worked long, difficult manual labor jobs, they were able to afford new goods in the United States that had previously been unimaginable. This is mostly due to the United States' ability to produce goods en masse, which made them cheaper. Furthermore, in Ireland and Southern Italy, land ownership had become virtually impossible (through landlords hiking rent prices in Ireland or land distribution after the Risorgimento in Italy). Even if their positions were not enviable in the United States, from a financial standpoint, their salaries and the resources available put them in a slightly better position.

SYDNEY, PASTA, CARMY, AND FAILURE

When Sydney was trying to create items for the menu and failing at it, I kept asking myself why, why is he self-sabotaging now, even when she may have been waiting for a change like this her whole life.
There were some events related to her fear of failure, to pasta, and to Carmy, that created a unique avalanche of her own.
She tells Carmy the story of the incident that broke her business, about a mean lady who demanded fresh pasta that she couldn't deliver despite her best efforts. The failure was caused by improvisation on her part, trying to compensate for biting more than she could chew to begin with. 
In that same scene, she fucks up Carmy's recipe to ferment the pasta. Too much acid, when he had suggested her to add acid to another of her original dishes before. This was a subconscious response to how badly she fears to disappoint him, yet she does. Simple instructions, something she has done before, fucked up (remember the stock incident, even if it wasn't her fault, she felt humiliated). Pros to Carmy for actually reacting as a friend this time and the next scenario, even if that didn't help Sydney's self-critic too much.
Next time they cook together, Sydney fucks up another recipe, one of her own. Too much salt. Again, something she has done before.
And then, Carmy ditches her.
She has to go for inspiration alone, and what does she imagine as a possible signature dish? A pasta dish. It makes sense; it is an Italian restaurant, after all. 
When she imagines this dish, she imagines it plated on the circular black plate Carmy liked, the only one he wanted.
Later, after fighting with Carmy, she tries to make that pasta dish she imagined but fails at it. 
She cannot improvise or be creative because the last time she did that, she was punished by losing her business. And then made a recipe of her own, or tried to collaborate on another one, fucked up in front of her partner and idol. All these cases, in her mind, it connected to a pasta dish.

She has failed in the same area (pasta) in different scenarios (Carmy and his standards, that is the same as saying the industry standard, her business, fucking a recipe) doubting herself to the point she has locked herself in an art block.
About Carmy ditching her on the food tour, for what we know, she may think that was something Carmy did on purpose as a way of saying, "You are a CDC now. This is your problem." She spoke to everyone all day, saying she had a partner, only to realize there is no such thing as a partnership at the top of this industry; you can pull your weight, or you sit your ass down. Nobody wants to feel like death weight in a partnership, and now she may feel she is lacking in the things that made Carmy choose her; that is why, in 2x09, under the table, she goes, "You could do this without me." The reassurance coming from Carmy completes her arc. 
Now, these some other thoughts on this:
Sydney may still only be able to define her own culinary success by the things that had made Carmy successful. Let's remember she is working for his family restaurant. Most recipes are his family recipes (filled with trauma, but we are not going to touch that today). He is the mold she cannot fit in, the plat in which she doesn't provide anything yet, to her eyes. This is a very common problem for artistic people, success is only defined by the people before you, if your own creative voice doesn't fit that mold, you may think you are not good, or ready.
She considers his experience more valuable than her own instincts, so I really hope she gets to resolve that. 
The inspirations he decides on would be pretty interesting since now she was only trying to fit the mold of her previous failures. Something is to be said about a woman of color, with a culture of her own, trying to fit in a Western-oriented industry, fighting to be taken seriously in what is considered "high-end cuisine." Someone made a post of a female black chef who won a chef competition combining her Italian and African heritage, something like that (at least until she gets her own spot), would be pretty neat.
Finally, and to aggravate everything, SHE IS RUNNING FULL SPEED. The sense of urgency that was very evident in s1. we don't know what makes her this way (it may be "working twice as hard to get the same recognition" or a different type of trauma). “Growing too much too fast" on her business, gambling on a shot on a kinda disgraced star chef in a chaotic environment, pressuring Carmy to change the restaurant on s1, pushing her dish to the food critic, all that collapsing on her all at once. Then she took care of her own and Carmy’s responsibilities on s2, because she tough that was expected of her. Too much, too fast. If she ever wants to make a path of her own, she needs to heal this.

You know what killing me about Carmy making Bolognese or Ragu or w/e pasta dish he made for her? He's Italian American, and he comes from a family that basically lives in the kitchen preparing Italian cuisine....So he probably could have made that dish for Claire [last name not on file] blindfolded, it would be equivalent to a Trinbagonian chef bringing a girl home and making them a quick pelau, or a Jamaican man making peas and rice or canned mackerel and rice, and her being all starry-eyed at the barest of minimums. Homeboy didn't even bust out any French cuisine, no dessert nothing!

Is the Bolognese/Ragu equivalent to our curry or to a pelau? That aside I don’t think it was that odd of a choice *runs and hide*, after coming home from a long day of work related stress that ended on a high with them passing the fire suppression test. It makes sense that he’d make them comfort food; it’s reminds me of The Menu when Anya Taylor Joy’s character ‘Margot’ requests the cheeseburger with fries, it’s not a glamorous dish in any sense but he’s doing the thing that he appreciate most about food, which is taking care of the people he loves. It’s simple, hearty, represents his family and represents home. It’s all so much better than anything he and his girl dinner’s have going on.
My biggest take away from that scene is that he should been cooking for SYDNEY, who we see cleaning up their restaurant way after everyone leaves, then to go home alone to no warm home cooked meal. I was also pissed off that his efforts went unacknowledged, home girl went straight for the lips *I get it* but just another reason they aren’t really meant for each other.

The Gold Coast Australia is world renowned for its glorious year round sub-tropical climate and easy going atmosphere. Just a few of the amenities are Theme Parks such as Sea World, Dreamworld, Wet and Wild, and Movie World. These are all situated in the suburb of Southport. Here you will discover many excellent dining, night life and sporting facilities are.
There are of course many fine resort hotels on the Gold Coast. One of the finest is the five star Pines. It is a truly magnificent resort hotel, glistening calico against verdant sleekly groomed gardens of nearly five hundred acres. This three hundred plus roomed establishment is one of Queensland's largest and most luxurious. It is highly recommended for couples, business people on conventions and wedding parties in particular Surfers Paradise .
The awesome facilities on offer include; four ethnic restaurants, a massive convention centre, top grade day spa, state of the art health club, both indoor and outdoor swimming pools, concierge, twenty four hour front desk, lifts, ATM, bar/lounge, and the famous championship golf course, used by the likes of Jack Nicklaus. All about Carnival Adventure & Carnival Encounter

Carnival Cruise Line is welcoming two additional ships to the fleet in 2025, but unlike nearly every new Carnival ship of recent times, the next two additions are older ships, dating back to the turn of the 21st century!
Both these ships have been sailing for P&O Cruises, a role they’ve had since the end of the COVID pandemic shutdown in 2022.
With P&O Cruises in Australia shutting down in March 2025, these two 109,000 gross ton cruise ships will transfer across to the Carnival brand, where they will be among the oldest ships to wear the Carnival colours.
In fact, both ships were originally designed and built for Princess Cruises before Princess had even been absorbed into Carnival Corporation.

Princess Cruises Origins:
Both members of the Grand class and built at Fincantieri, Carnival Adventure was the first to enter service. She was ordered in 1998 and entered service for Princess in 2001 where she sailed under the name Golden Princess.
Her sistership, Carnival Encounter, entered service in 2002, and was named Star Princess. The two ships were some of the biggest ships in the world at the time, and feature many design traits that made Princess famous.
This includes the large and spacious atrium, with nearby dining, entertainment venues and lounges, as well as multiple swimming pools, ample top-deck space and an elevated nightclub at the stern that gives them a very unusual appearance.

As Star Princess, Carnival Encounter was well known in the Californian market, as the ship pioneered big-ship cruising for Princess out of port of Los Angeles.
Too wide to fit through the original locks of the Panama Canal, the ship made the journey to America’s west coast by cruising east from Italy, taking in an Indian Ocean and Pacific Ocean transit along the way.
As Golden Princess, Carnival Adventure undertook several long duration voyages, including a world cruise that included calls in Australia and throughout Asia.
P&O Australia:
Both ships were sailing with Princess in 2020, though by this stage had been flagged for transfer to P&O Cruises. Their large size meant they could replace the capacity of Pacific Dawn, Pacific Eden, Pacific Aria and Pacific Jewel.
The COVID pandemic interrupted these plans, with both Golden Princess and Star Princess laid up in 2020. During the global cruise shutdown, Golden Princess and Star Princess were removed from the Princess fleet and transferred to P&O Australia. They were Pacific Adventure and Pacific Encounter respectively.  
Both ships were given refits before returning to service, to Australianise the interior and align the ships with the updated P&O Australia style introduced aboard the retiring Pacific Dawn and Pacific Aria as well as her sister ship Pacific Eden.
This included the addition of specialty restaurants Angelos (Italian), Dragon Lady (Asian Cuisine) and the Waterfront (P&O’s main dining room).
The P&O Edge adventure experience was also added, while Pacific Adventure had her funnel cut down, to allow her to pass under the iconic Sydney Harbour Bridge – this is actually a handy way to tell the difference between the two ships!
Pacific Encounter entered Australian service in August 2022 after a triumphant arrival in Sydney. She was only the 2nd cruise ship after the smaller Pacific Explorer to return to Australia. Pacific Encounter later repositioned to Brisbane where she has homeported since.
Pacific Adventure arrived in the Sydney market in October 2022.

Carnival Cruise Line:
In 2023, both ships hosted special celebrations, to commemorate P&O’s 90th anniversary of Australian cruising. Politicians, media and special guests were invited aboard Pacific Aventure in Brisbane and Pacific Encounter in Sydney.
Yet despite the celebratory year, things would change dramatically in 2024 when Carnival Corporation announced P&O Australia was closing in 2025.
Ultimately these two popular ships will remain in the Australian market, transferring ton Carnival Cruise Line in March 2025 as Carnival Adventure and Carnival Encounter.
This will make them among the oldest ships to cruise for Carnival, though they are still several years younger than Carnival’s Sunshine, Elation, Paradise and Sunrise.
They will be unique among the Carnival fleet, as the Grand class was designed by Princess Cruises well before Carnival merged with P&O-Princess, which owned Princess Cruises at the time of the merger in 2003.
As such, there is little similarity in the internal design, layout or décor of these ships when compared to the rest of the Carnival fleet.
But their Australianising for P&O Cruises was highly successful, and I’d argue that both ships present better in their current internal décor than they did as Princess ships.

P&O’s addition of vibrant carpeting, blue tones to the accommodation and corridors have really helped break up the beige interior Princess is often associated with.
In addition, the P&O specialty restaurants are fantastic, with Dragon Lady especially among the best cruise ship restaurants I’ve ever tried – though whether these dining venues will be retained under the Carnival brand is yet to be seen.
While maintaining a unique Australian feel, in their new role, both ships are expected to receive Carnival branding… though I highly doubt they will receive a whale tail funnel. Rather expect to see Carnival colours painted on the existing funnel structure similar to the Carnival Luminosa.
