Indian-inspired Wellington
(With Masala Gravy)

2 packs vegan frozen puff pastry, defrosted
1 tbsp coconut oil 1 onion, peeled and diced
1 tsp ginger paste 1 tsp garlic paste 1 tsp mustard seeds ¼ tsp chili flakes
2 cups diced butternut squash
1 tbsp coconut oil 4 cups cubed potatoes (cooked) 2 cups cubed sweet potatoes (cooked) 1 tbsp curry powder 1 tbsp cumin 1 coriander 1 tsp garam masala 1 tsp amchur 1 tsp salt ½ tsp turmeric ½ tsp cinnamon ¼ tsp black pepper ¼ tsp asafoetida (optional)
1 cup frozen green peas 2 tbsp tamarind paste 1 tbsp cilantro paste 1 tbsp pure maple syrup
Heat 1 tbsp coconut oil in large saucepan over low heat. Sauté onion for several minutes. Stir in the; garlic paste, ginger paste, mustard seeds, and chili flakes. Sauté for another 2-3 minutes.
Stir in the butternut squash and cook for about 5 minutes, stirring frequently, until squash begins to soften.
Stir in the additional tbsp of coconut oil then the; cooked potatoes, cooked sweet potatoes, curry powder, cumin, coriander, garam masala, amchur, salt, turmeric, cinnamon, black pepper, and asafoetida. Cook for several more minutes, stirring frequently.
Stir in the; green peas, tamarind paste, cilantro paste, and maple syrup. Cook for 2-3 more minutes, stirring frequently. Remove from heat and allow to cool. (Can be made a day ahead and kept in fridge.)
Assembly
Preheat oven to 400 degrees F.  Line two large cookie sheets with parchment paper.
Roll out the puff pastry into four large rectangles. Divide the filling between the four rectangles. Roll each one into a large log. Fold over the ends and, with wet fingers, pinch the seams to seal. Place logs on lined baking sheets. Poke a few tiny holes into each log (to allow steam to escape) and brush each log with some non-dairy milk. 
Bake in preheated oven for 35 minutes. Allow to cool for a few minutes before slicing and serving. Serve with Masala Gravy.
Masala Gravy
¼ cup vegan butter 1 white onion, peeled and chopped 1 tsp garlic paste 1 tsp ginger paste
1/4 cup all-purpose flour 2 cups vegetable bouillon
¼ cup tamarind paste ¼ cup coconut sugar 1 tsp turmeric 1 tsp chili powder 1 tsp garam masala 1 tsp sea salt 1 tsp cinnamon ¼ tsp black pepper
Melt vegan butter in medium-sized saucepan over low heat. Sauté onion for several minutes. Add the garlic paste and ginger paste and sauté for another 2-3 minutes. Stir in the AP flour.
Slowly, stir in the vegetable bouillon.
Stir in the; tamarind paste, coconut sugar, turmeric, chilli powder, garam masala, sea salt, cinnamon, and black pepper.
Cook on low heat, stirring constantly, until gravy begins to thicken. Remove from heat and allow to cool completely then puree in blender. Reheat before serving with Wellington.

Indian Street Food-Inspired Dishes:
People love Indian street food because it has intense flavours, bright colours, and a lot of different cooking styles. From sour chutneys and hot chaats to savoury kebabs and crunchy samosas, Indian street food is a sensory feast. It shows off the country's rich culture. India has a lot of different types of street food. For example, the spicy Vada Pav from Mumbai differs from the fragrant biryanis from Hyderabad and the delicious dosas from South India.
Putting together Indian street food and craft beers:
Along with Indian street food, craft beers go well with various types, flavours, and aromas. It's an art to find the right mix of tastes and textures to make the meal more enjoyable and make flavour combinations you'll remember. In gastropubs, the art of pairing is shown by these examples of Indian street food-inspired meals and craft beers that go well together:
Serve a spicy chicken curry with a hopped IPA.
India Pale Ale (IPA) goes well with tender chicken tikka masala, simmered in a spicy yoghurt-based sauce and cooked to perfection in a tandoor oven. Please think about why you don’t consider BAME British people or immigrants to be ‘really’ British, and why I might have included those food cultures on purpose.
Hey, I didn't mean to imply that they're not British. I am Indian myself, and I always believed that that the food had Indian roots, not European roots. The whole "thin ice" comment was mainly a joke based on my surprise, but I'm sorry if it offended anyone.

Hetalia characters with dishes typical for their country - part 1 (part 2 here)

Italy: Maritozzo (cream bread) -> This Roman milk bread is said to be dated back to times of Ancient Rome. The baked good is filled with generous amounts of whipped cream and somtimes decorated with fruit or pistachio. Young man also used it in courtship by hiding jewellery or a ring in the filling.

Germany: Breze(l) mit Schokolade (chocolate dipped pretzel) -> A baked pastry with sweet or salty toppings, best known for its distinctive symetrical, knotted shape. Dipped in chocolate the soft pretzel is a popular snack at funfairs and markets, but there are also small, crispy pretzels that are to be eaten like crisps/chips.

Japan: 和菓子 (wagashi; plant based sweet) -> Originally meaning "Japanese confectionery" the term now refers to a traditional dessert made from plant based ingredients. It's artful shapes are influenced by season, nature, or even poetry.

France: Quiche Lorraine -> A savoury tarte traditionally made with a filling of eggs, heavy cream, ham, and bacon. Today cheese is often added, though it is controversial among professionals. (In the drawing there seems to be leek added too which is not mentioned in the original recipe either.)

England: Scotch Egg -> Supposedly inspired by the Indian nargisi koftas, this dish consists of a hard-boiled or soft-boiled egg wrapped in pork (sausage meat) which is coated in breadcrumbs and then baked or deep-fried. Often served in pubs and a popular cold snack as well.

America: Hamburger -> A popular fastfood consisting of a patty (traditionally made from ground beef) between two halfs of a sliced bun. There are countless variations made with all kinds of additional ingredients and condiments, including expensive high-end versions with edible goldflakes.

Russia: пирожки́ (Pirozhki; stuffed bread) -> This popular street food is a baked good made from yeast-dough is typically boat-shaped and filled sweet or savory with meat, vegetables, fruit, jam or tvorog (an Eastern European fermented milk product with a consistency similar to curd cheese)

China: 小籠包 / 小笼包 (Xiaolongbao; steamed bun) -> Steamed dumplings made from leavened or unleavened dough traditionally filled with minced pork, traditionally eaten for breakfast. The top of the dumpling is closed by folding and pinching it. Authentical dumplings have at least 14 folds, preferably 18.

Just a thought I had when seeing your building culture posts
I feel like Jalebi is such an air nomad style food. With the bright orange and swirled patterns, you can't tell me Aang wouldn't love it.
Additionally barfi feels like another air nomad dish. Perhaps it could be made with bison milk?
I know the air nomads are inspired by Tibetan monks, but as theres sprinkles of Hinduism and Indian culture in the show. So this is my thoughts as an Indian person
I agree, I think these foods would work well for the Air Nomads. In fact, barfi and other Indian dairy desserts have been happily embraced by the Tibetan communities in India. Truthfully, the reason I limited my Air Nomad cuisine posts to mostly Tibetan food was to narrow the scope of my research. Really, any vegetarian dish from any culture could integrate well into the Air Nomad culture established by the show's canon.
The way I see it, there would realistically be two types of Air Nomad cuisine:
"Temple" Air Nomad Cuisine: This would be the cuisine that the Air Nomads developed within their temples, high up in the mountains. Like the Himalayas, this climate is good for growing barley, root vegetables (droma, potatoes, daikon, etc.), mushrooms, and certain strains of peppers. These would be the ingredients, along with sky bison dairy, that young Air Nomads would grow up enjoying.
"Local" Air Nomad Cuisine: My conception of the Air Nomads is that they were mostly sky bison herders with strong spiritual beliefs and ascetic practices. Their culture was viewed as quite mysterious by the other nations, but the average person (before Sozin's reign) regarded an Air Nomad's presence as bringing good luck to those around them. This was due to the commonly held belief that the Air Nomads were on good terms with the spirits, which was generally true--- Yangchen notwithstanding.
I establish all this worldbuilding to give context to the once flourishing vegetarian cuisines of the Avatar world. When an Air Nomad would stop by a town to purchase or trade for supplies, many villagers would rush to invite the monk over to their home for a meal--- some hoping for a blessing, others desiring spiritual guidance, and a clever few knowing that a well-traveled nomad is the best source for world news.
Although Air Nomads would humbly accept whatever food was offered to them, most villagers would go out of their way to prepare vegetarian dishes out of respect and hospitality. Thus, prior to the Hundred Year War, all nations had a thriving vegetarian culinary tradition that utilized their local ingredients. This came to be known colloquially as "local" Air Nomad food. Sometimes these dishes would become so popular with the nomads that temple elders would bemoan their people becoming too attached to these earthly pleasures.
I think both the Fire Nation and Earth Kingdom would have Indian-inspired vegetarian dishes that they would serve to an Air Nomad guest. The Water Tribe's vegetarian dishes were especially unique and labor-intensive, considered a special treat for any one of any nation. @mostly-mundane-atla has a great post on what WT vegetarian dishes would look like.
Just another Air Nomad headcanon that lives in rent-free in my brain. ^_^

Mythological Inspirations: Matar Paneer Cookie Edition
So, where did Matar Paneer- nah I don't feel like making this joke again. Indian curry dish + crazy lion lady + demon slaying goofball pretty boy. BOOM.

Same as/with/for Pepper Jack, I researched and took inspiration from Egyptian and Hindu mythology while drafting up Matar Paneer. If Golden Cheese is Ra, and Burning Spice is Shiva, and Pepper Jack is the bennu bird + Ganesha... what does that make our little lady here?
Remember how Shiva has two sons? Jack is already one, so Paneer is, naturally, the other one. She takes after Kartikeya, second son of Shiva and Parvati, god of war and victory.
Kartikeya's primary color is red. So Paneer's is, as well. It's her favorite color and what she likes to wear the most. (It's also partially because of Burning Spice lol. Red will always = Papa to her to some degree)
Kartikeya is armed with a divine spear called Vel, which was a gift from his mother. Though Paneer wields and favors her katar, she will one day carry a spear alongside them, also a gift from her own mother (can't wait to tell that story haha)
One of Kartikeya's symbols is a peacock; this is because he has a giant peacock (named Paravani) as a mount. Likewise, I had Paneer befriend a peacock, which will one day grow big enough for her to ride around on herself (can't wait to tell that story either! I personally like my little interpretation of Paravani. Matar Paneer and her little bird bestie haha)
Kartikeya has a very innocent and playful personality; he's quite silly and mischievous, and likes to mess with things for fun (ex: messing with planets' orbits, stacking mountains on top of each other, stopping the flow of the Ganges river, etc). Paneer is quite similar (something else I didn't know beforehand, I swear. Paneer being a little gremlin just like the god she ends up taking after is another happy coincidence), going on little adventures and making messes and having... destructive tendencies like her Papa lol. (But she never means any harm. She's a good kid, she's just a bit impulsive and reckless)
Sometimes, Kartikeya is depicted with six heads (varies by scripture). Bit of a stretch, but I thought of having Paneer own six masks, each one wildly different from the other, that she'll often wear for fun. (I'll explain this better in another post)
Kartikeya is credited with defeating many monsters and demons, minor and major. So Paneer will grow up to become a renowned demon slayer, just like him (spoiling the end of her story there lol)
Golden Cheese is clearly inspired by Ra, Egyptian god of the sun and head of the pantheon (it's extra obvious with her Awakened form lol). The stories vary wildly from what I've seen, but the most baseline concept is that Ra has 3 daughters. Believing her to be the most fitting, I chose to have Paneer take after Sekhmet, Egyptian goddess of war, chaos, plague and medicine.
Sekhmet's primary color is also red. More red for our little lady. (All the war gods like red, so predictable smh)
Sekhmet is extremely violent and bloodthirsty, as her profession suggests. Born from the fire in Ra's eye, her main purpose in life is to protect him, help uphold cosmic order, and punish mortals for disobedience towards either. Paneer is... quite temperamental lol. Very strong-willed, very easily frustrated, very emotional. Fiercely protective of those she loves. And she can be... vengeful. Very, very vengeful. I will not elaborate further because it's spoilery as fuck lol
Like most of the other gods, Sekhmet is a furry part animal, with a woman's body and a lioness's head. Also a bit of a stretch, but... a certain young lady is getting a lioness tattoo on her back when she's an adult, as a nod/homage haha. Also, Golden Cheese's special nickname for her is "little lioness"
Sekhmet is often depicted with a lotus in one hand, and an ankh in the other. There, now you know why Paneer has a lotus in her hair lol (she's also getting an ankh tattoo when she's an adult, on her left wrist since that's the hand Sekhmet is always seen using to hold it (Paneer is getting a lot of tattoos when she's older, as you can see))
The Egyptians very much believed in names having power (common idea in the ancient world, really, but they were extra into it), so Sekhmet, like all the other gods, has like a billion names lol. To keep things simple (I counted 15 names the first time I looked into her and I'm pretty sure there's more), Paneer only gets a few: "Red Lady" (this one in particular), "Lady of Slaughter", "Mistress of Dread" and "She Before Whom Evil Trembles". The first three, people in general give her as a result of her actions/accomplishments (demon slayer, remember?) and are meant in a positive, reverent way (sometimes with a small touch of fear, admittedly). The last one is what High Priest Cheesenbird calls her. He has a term of affection/endearment for both children
Sekhmet can breathe fire; in fact, the Ancient Egyptians often credited/associated her with the hot desert winds because of it. I think I said this before already, but Paneer is a fire breather, too (she can light her hands and feet on fire, as well. Not a full-on firebender but not too far away)
In an interesting contradiction, Sekhmet is a goddess of both disease and medicine. She's bitter and wrathful, and causes plague outbreaks as a form of punishment for mankind... but she cures them, too. She's feared and looked to for salvation at the same time. She's even considered a patroness of physicians and healers. So... Perhaps our little firebreather has a hidden knack for healing, too. A secret power. One that's only noticed by another healer who would know how to spot and nurture such a talent *cough*Pure Vanilla*cough*. Maybe. Perhaps 🤔🤔🤔🤔🤔

There's little Paravani lol. Hopefully I actually start improving as an artist eventually, so I can draw Paravani better (or more in line with how he looks in my head. I don't really want a regular looking peacock, that's boring)
There's the little cheese lotus Paneer wears in her hair. Just used the one in the Golden Cheese Kingdom decor set as a reference 😅
Ankhs r cool 2 draw. Also, fun fact: they symbolize immortality and reincarnation. Reminds you of her mom, doesn't it? Haha
Tried to draw her katar (Indian knives. Basically Wolverine claws). They were a gift from Cilantro Cobra (she's alive and well in my personal canon ok 😫), and she went the extra mile to have little symbols engraved in both. Burning Spice's in one, Golden Cheese's in the other
She's supposed to have little green earrings that look like green peas ("matar" means green pea, "paneer" is the Indian cheese. Literally "green pea cheese" lol). Her design references the food she's supposed to be a lot more than Jack's, I think

with your partner yearning for an approachable gateway and immersion into your culture as well as an official introduction into your family, what better way to do that than with dumplings?

catalogue. fluff, modern au, pre-established relationship, written with fem!reader in mind; but no pronouns specified. cw: food preparation/ intended consumption, mildly suggestive (?) cultural traditions, domestic family teasing, mentions of children, alcohol consumption/ age not explicitly specified; but intended to be over 21 per US laws. wc: 1.2k thea’s preamble. by definition a dumpling is a small mound of dough flattened, maintaining a certain thickness for chew or absolute thinness, then filled with a well-seasoned paste/mixture, usually meat. like, gyoza 餃子, mandu 만두, xiao long bao 小笼包 which is my primary inspiration. BUT there's also lumpia from Indonesia and the Philippines, Italian ravioli, Indian modak, Polish pierogi, South American empanadas (i fucking love empanadas), pasteles, Ukrainian vareniky, Botswanan madombi, British pasty. my point is if you don't read into it too intensely, this is for anyone.

it was intended to be such an intimate moment and in their eyes the official inauguration to your family, as well as the perfect entry point into learning about your culture that you’ve only grown stronger and more confident in with age. and what better way to immerse yourself in another’s culture than through food?
with that being said…they tried, they really did.
it seemed simple in theory, add a decent bundle of the filling to the center of the wrapper, fold the wrapper over itself, and apply the liquid adhesive to seal the seams, crimping, folding, or rolling the seams shut as needed. simple right?
well apparently not, there’s a tray full of “complete” dumplings with tears in the dough and the filling either smeared or oozing out, over-filled, or not enough… and it's quite obvious who made those. the intricacy and swiftness that you and your parents achieved thus producing a quarter sheet pan’s worth, overwhelmed the poor baby. they certainly have their strengths lying primarily in physicality, but the agility and patience needed for such a small product outcome were not in their capabilities.
you reassured them that it wasn't uncommon to have such results, frankly, it was impressive for a first-timer that they didn't collapse from frustration. "you'll get it eventually, today you just relax." you consoled, rubbing your hand on top of theirs.
"plus, you're still considered a guest, you have plenty of time before you're officially let into the pack and forced to do the mountain of dishes or babysit." you chuckled.
to which they agreed, today their strengths would lie in being the human ladder to get objects from high-up places, refilling wine and liquor for the adults, providing sliced fruits, and just sitting at the table supervising the unspoken competition of who can make the most dumplings, replenishing scarce ingredients as needed to. salivating at the sight as well as the uncooked aroma from the fresh herbs and spices used. surrounded by family, engaging in lively or even profound conversations, no matter how shy they were initially.
rest assured, there’s nothing to be ashamed of, and maybe another time they’ll give it another shot, but for now, they’ll leave it to the pros.
EREN, JEAN ANNIE, GOJO, TOJI
their initial attempts were… admirable, but they weren’t satisfied with that. they wanted to do right by you, secure the approval of your family, and not feel absolute guilt at only contributing to the conversation and not the actual meal assembly process.
simply put, they're quite stubborn. they carefully studied each family member, the differing methods, and tendencies. from the angle of spooning the filling in the wrapper to the adhesive sealing— plain water vs. starch water?
they were determined, and with patience and encouragement from family, they were finally able to produce a perfect little flavor receptacle, savory and hearty. shrieking out an unexpected, "i did it!" that garnered a reaction that you couldn't help but laugh at either.
but they would not yet allow themselves even a minute victory until they garnered 100% of the acceptance, mainly from their own inner conflict of merit.
this may be their first time truly comprehending the phrase, ‘tasting the fruits of your labor’. and never had they had a sweeter meal, not in the literal sense of a saccharine feast. but the resolve and dogged attitude (stubbornness) was a taste that they would savor in the complete dish, something they would come to value greatly come the next culinary undertaking. "i made this!" they'd think to themself.
try not to be too surprised if you catch them in the early morning, meticulously crimping, folding, and rolling the edges of the wrapper, ensuring as little air as possible gets in the center, just as your grandmother taught them.
more than that it was an amusing sight seeing them nearly nude only wearing a pink frilly apron that you were gifted from relatives, "what do you think?" they teased, a question which you rolled your eyes at, considering they weren't asking about the food.
though you must admit, they did look incredible, for a rookie. and it was a beautiful sight to behold, an incredibly attractive person cooking in your kitchen, insistent on making you proud. i guess now the only issue lies in the lack of space in your freezer in contrast to the large batches of dumplings that are sure to last you months. let's hope this is an acceptable housewarming gift for the new neighbors.
BERTHOLDT, REINER, CONNIE , SUKUNA (hear me out), CHOSO
are we surprised? though they may not seem like the kinds to thrive in arts and crafts, their handiwork is nimble, and their dexterity is unmatched. they were initially slow to follow the instructions given to them, but after diligent observation, it was a task pursued and completed well. almost as if they too partook in similar repetitive affairs in their youth. sitting around the dining table, with heaps of filling and a lofty stack of dough wrappers, sometimes there’d be music in the back, but even if there was it would always be drowned out by the conversation that were being had. an endless variety of discussion topics, filled with light-hearted quarrels and absolute fits of laughter.
and if you’re being completely honest, it’s been approximately 5 minutes since the laughter erupted, and you can’t even remember what was so funny that you’re now clutching your stomach in what may be the best kind of pain, struggling to catch your breath and maintain composure. those were some of the memories you held dearly when you were younger, and it’s no different now. and with them by your side, falling in love over again with what seems like the acme of your joy, one they’d hope to preserve and maintain for as long as possible. a pride that one simply can't explain.
but where there is pride and inflated egos, there are grandmothers and aunties to humble you, making remarks comparing your tray to your partners.
"wowww, this is your first time, and they look perfect!" they'd exclaim, making their way around the table. "you should take lessons from them." they'd continue teasing you, whilst pinching your partner's cheek or slapping them on the back just a little too hard.
by the end of the feast, your partner certainly got the elders' approvals, no less by your parents, who absolutely adore them. it’s also a food they loved eating, lovingly introduced by you, and now you’ve made them even more of a fiend then they already were. fully enjoying the bonding experience this has facilitated, as well a first-hand experience to the little things that helped maintain your cultural identity.
and they would be lying if they weren’t completely consumed by the thought that one day you would be the ones your ancestors depended on to carry on the traditions. with the future generations of your bloodline, if not your own children by preference, then your nieces, nephews, and cousins, who are currently wrapped around their very finger. to them, a jungle gym to be climbed, a pristine and willing model for a family-renowned makeup artist, an unsuspecting outsider that could be the green light for some sweets that the parentals refused earlier, but they don’t need to know that.
