today i went to the doctor! she listened to me. so i was able to go get x-rays on my heel! hooray!
i went and got tacos for lunch with my friend chelsie from the school. it was really nice to sit down and catch up with her, it's been a while since i was able to do that. plus we went to mexican place that's relatively new, and we enjoyed tacos together as it was taco tuesday. unfortunately they don't have a deal for tacos on tuesdays, which i think they should because it would draw a lot more people than were there today. when we got there, it was us and a guy at the bar. another older man showed up later. kinda wild.
when i returned home after lunch and my x-rays, i was tired enough that i decided to take a nap. it was really awfully humid today, so despite my air conditioner and its best intentions, it was still relatively miserable in the room. but i slept up until dinner time, when i helped mom with a few last-minute things before we served a table full of random shit that goes on hawaiian haystacks.
to which, when i say the name, i often get confused stares and "huh?" or "what's that?" because it's apparently a midwestern/western/mormon thing that it doesn't exist outside of certain social circles. HOWEVER. hawaiian haystacks are so good and should be had by every child (or adult for that matter) that has ever wanted to eat something different than what was being served.
the beauty of hawaiian haystacks is that they are versatile and able to please a large crowd without much effort. it's a base of white rice, topped with pieces of chicken and gravy, with a bunch of toppings added, finished off with a plentiful handful of crispy chow mein noodles.
on mine, i put cheddar cheese, coconut, pineapple, and peas. chelsea put on cheese, onions, ham, peppers, green onion, and a little bit of coconut. completely different flavor profiles. same table of food. and it's an easy thing to serve en masse or in shifts since it's just two things that are hot and everything else can be cold or room-temperature. doesn't matter. stick a container in an ice bath. have a crock pot. simple as that.
plus it's delicious. and the pickiest can eat everything separately. and it's chicken and gravy, it's delicious.
anyway. go ahead and try making it yourself at some point, because it's so easy to do, too. a jar of chicken gravy and a can of chicken will do just as well as cooking the chicken and making the gravy yourself. plus it all keeps well and you can make something new every time.
this was not intended to be an advertisement for hawaiian haystacks but here we are.
all of that said.
i got to talk to joel a little today - we've agreed on getting a fryer for the apartment at some point. when i finally don't have this job, i'll be able to cook a lot more and if i'm gonna make homemade chicken tendies i'm gonna need a deep fryer. luckily he's on board, if for no other reason than the oil being moved every time you cook. wild.
