Holiday Apple salad

Makes: 5 salads?
Ingredients
For the Candied Pecans
1/2 cup packed brown sugar
1/4 tsp ground cinnamon
1/4 tsp kosher salt
2 Tbsp water
1 cup pecans (sub. walnuts)
For the Salad
6 cup mixed greens (I got a spring mix)
2 apples, thinly sliced (Fuji, Gala and Honeycrisp)
1/2 cup crumbled blue cheese (sub. goat cheese or feta)
1/2 cup dried cranberries
For the Dressing
2 Tbsp apple cider vinegar
1/2 shallot, finely chopped
1/2 Tbsp Dijon mustard
1/3 cup extra-virgin olive oil
Instructions
1. In a skillet over medium heat, combine brown sugar, cinnamon, salt, and water. Stir, letting sugar dissolve. Add pecans and toss until totally coated.
2. Let simmer for 5 minutes until sticky, then remove from heat and let cool on a parchment-lined baking sheet in a single layer.
Pecans you don’t use for the salad can be stored in an airtight container up to 1 week.
3. In a large bowl, combine greens, apples, candied pecans, blue cheese, and dried cranberries.
Refrigerate until ready to dress and serve.
4. In a bowl (or 1 cup measuring cup), whisk together apple cider vinegar, shallot, Dijon, and olive oil. Season with salt.
5. Drizzle salad with dressing and toss to combine. Serve immediately.

Cranberry chutney
Sweet, tart, jammy cranberries evolve into the subtle aromatics of cumin, mustard, and bay leaf before rounding off into a smooth, even chili heat in this Anglo-Indian-style chutney. It's excellent in place of cranberry sauce on all kinds of roasts, meat pies, flatbreads, sandwiches, and charcuterie boards.
The cooked fruit-and-vinegar chutneys made by English cooks during the British colonization of India were inspired by the fresh and pickled Indian condiments that English traders and soldiers—including those in the East India Company's military arm—had acquired a taste for, but substituted locally familiar produce and cooking methods for Indian ones. "Indian" recipes began appearing in English cookbooks in the mid-18th century, inspiring and fulfilling a desire for the exotic and, effectively, advertising colonial goods. The domestic kitchen thus became a productive site for the creation and negotiation of colonial ideology: the average English housekeeper could feel a sense of ownership over India and its cultural and material products, and a sense of connection to the colonial endeavor desite physical distance.
This sauce, centered around a tart fruit that is simmered with sugar and savory aromatics and spices, is similar in composition to an Anglo-Indian chutney, but some Indian pantry staples that British recipes tend to substitute or remove (such as jaggery, bay leaf, and mustard oil) have been imported back in. The result is a pungent, spicy, deeply sweet, slightly sour topping that's good at cutting through rich, fatty, or starchy foods.

Ingredients:
1/2 cup dried cranberries (krainaberee), or 1 cup fresh or frozen
5 curry leaves (kari patta), or 1 Indian bay leaf (tej patta)
1/2 tsp cumin seeds (jeera)
1/2 tsp black mustard seeds (rai)
3 Tbsp jaggery (gur / gud)
1-3 small red chili peppers (kali mirch), to taste
1/2” chunk (5g) ginger (adarakh), peeled
1 clove garlic (lahsun)
1/2 red onion (pyaaj) or 1 shallot
1 Tbsp mustard oil (sarson ke tel)
1/3 cup (80 mL) water
Pinch black salt (kala namak)
Curry leaves can be purchased fresh at a South Asian grocery store. If you can't find any, Indian bay leaves can be used as a substitute (the flavor isn't per se similar, but it would also be appropriate in this dish). Indian bay leaves are distinct from Turkish or California laurel bay leaves and have a different taste and fragrance. They will be labelled “tej patta” in an Asian or halaal grocery store, and have three vertical lines running along them from root to tip, rather than radiating out diagonally from a central vein.
Instructions:
1. Pound onion, garlic, ginger, and chili to a paste in a mortar and pestle; or, use a food processor.
2. In a thick-bottomed pot, heat mustard oil on medium. Add curry leaves or tej patta and fry until fragrant.
3. Add cumin and mustard seed and fry another 30 seconds to a minute, until fragrant and popping.
4. Lower heat to low. Add aromatic paste and fry, stirring constantly, for about 30 seconds, until fragrant.
5. Add cranberries, jaggery, black salt, and water. Raise heat and bring to a boil. Reduce to a simmer and cook uncovered, stirring often, until thick and jammy. Remove from heat a bit before it reaches your desired consistency, since it will continue to thicken as it cools.
Store in a jar in the refrigerator for 2-3 weeks.

Fruity Christmas Pudding

I've baked this rather special Chocolate and Apricot Figgy Pudding for the Holidays for a few years now, and it's always been a resounding success, both a decadent and moist and light dessert to indulge in until midnight strikes! I wanted to try something a bit different this year, and made this very Fruity Christmas Pudding. Laden with all sorts of dried fruit, mellowed and softened in Cognac, it is just as beautiful as the chocolate one!  Happy Christmas, dears!!!
Ingredients (serve 6 to 8):
half a dozen large Medjool dates
half a dozen prunes
1/2 cup dried apricot
1/3 cup sultanas
1/3 cup dried cranberries
2 satsumas
1/3 cup good quality Brandy or Cognac (like Hennessy)
6 tablespoons unsalted butter, softened + more for greasing
½ cup demerara sugar
1 thumb-sized piece fresh ginger, peeled
3 large eggs
2/3 cup plain flour
½ teaspoon baking powder
1 ½ teaspoon Mixed Spice
1 cup Brioche Crumbs
1/4 cup almond meal
1/3 cup flaked almonds
1/4 cup very good Fig Jam (I used Fig and Almond Jam we brought back from our trip to Menton)
1 clean two pence or one pence coin
1/3 cup good quality Brandy or Cognac (like Hennessy)
The day before, pit and dice Medjool dates and plums. Dice dried apricots.
In a medium bowl, combine dice dates, plums and apricots with sultanas and dried cranberries. Grate in the zest of both satsumas, and thoroughly squeeze in their juice. Add the Cognac. Stir to mix well. Cover with cling film, and leave to soak, at room temperature, overnight.
The next day, cream butter and demerara sugar with a wooden spoon in a large bowl, until light, pale yellow and fluffy. Grate in fresh ginger, and stir until perfectly blended. Add the eggs, one at a time, beating well after each addition. 
In a medium bowl, combine flour, baking powder and Mixed Spice. Gradually stir flour mixture into egg mixture; fold in gently until well-mixed. 
Add Brioche Crumbs, almond meal, flaked almonds, Fig Jam and soaked fruits with their soaking liquid to the batter, and stir well. Drop the two pee in the pudding, make a wish, give a good stir, and give it to stir to anyone who’s at home, so they can make their wish too (from the oldest to the youngest!)
Generously butter a 2-quart pudding basin. Cut a small disc of baking paper and press into the base of the basin. Butter generously as well.
Spoon pudding batter into the prepared basin and press it down with the back of your wooden spoon. Cover the pudding with a layer of baking paper and foil, both pleated in the middle and tie securely with string. Trim off excess paper and foil with scissors.
Put a metal jam lid upside down at the bottom of a large pot to act as a trivet. Place a long double strip of of foil, letting it hang on both edges of the pot, to help you lift the pudding once it is cooked.
Lower the pudding in the pot, sit it on the band of foil, on the jam lid. Pour boiling water in the pot until it comes halfway up the pudding basin. Cover with a lid and bring back to a boil over medium-high heat. Once water is boiling, reduce heat to medium-low and simmer for 7 hours, regularly checking and adding boiling water so it is always halfway up the basin.
When cooked through, lift the pudding out of the pot. It should be a deep brown colour. Let cool a little, 15 to 20 minutes and turn pudding out onto serving plate. If you’re making it in advance, months ahead of Christmas, let cool completely and wrap tightly in cling film. Then place in a large metal tin (like a biscuit tin), and store in a cool, dark, draft-free place until Christmas.
On Christmas Day (or Eve, depending when you have it!) unwrap pudding and place in a buttered pudding basin, securing again with baking paper, foil and a string. Steam for about an hour.
Just before serving, quickly warm Brandy or Cognac, in a small saucepan, about 1 minute over low heat. Ignite carefully with a long match, and pour gently over the pudding, to flambé. 
When flames die out, serve warm Fruity Christmas Pudding with Brandy Ice Cream.
