Exploring the Role of Ghee in Indian Cooking
Indian cuisine is renowned for its rich and diverse flavours, and at the heart of many traditional recipes lies a golden elixir known as ghee. Ghee, a form of clarified butter, has been a staple in Indian kitchens for centuries, playing a crucial role in both culinary and cultural aspects of Indian cooking. This article explores the multifaceted role of ghee in Indian cuisine, from its preparation to its significance in various dishes.
The Art of Making Ghee
From Butter to Liquid Gold
The process of making ghee is a time-honoured tradition that transforms ordinary butter into a fragrant and nutty substance known as liquid gold. Butter is simmered gently, allowing its water content to evaporate and milk solids to separate. The result is a clarified butter with a higher smoke point, longer shelf life, and a distinct flavour profile that sets it apart from regular butter.
The Culinary Alchemy of Ghee
Enhancing Flavours and Aromas
Ghee is more than just a cooking fat; it is a culinary gem that enhances the flavours and aromas of Indian dishes. Its high smoke point makes it ideal for sautéing, frying, and deep-frying, imparting a rich and nutty essence to the food. Whether it's the sizzle of spices in a tadka or the slow-cooking of aromatic biryanis, ghee elevates the taste and fragrance of every dish it graces.
A Versatile Ingredient
Ghee's versatility extends beyond its use as a cooking medium. It is a key ingredient in many Indian sweets and desserts, imparting a unique richness to delicacies like halwa, ladoo, and gulab jamun. Its velvety texture and deep flavour make it a preferred choice for adding the final touch to gravies and curries, bringing a lusciousness that is hard to replicate with other fats.
The Nutritional Elevation of Ghee
Beyond Flavour – Nutritional Benefits
Contrary to common misconceptions about fats, ghee offers a range of nutritional benefits. It is rich in fat-soluble vitamins like A, E, and D, and contains essential fatty acids that promote overall well-being. Additionally, the absence of milk solids in ghee makes it suitable for individuals with lactose intolerance. When consumed in moderation, ghee can be part of a balanced and nutritious diet.
Cultural Significance of Ghee
Ghee in Rituals and Festivities
Ghee holds immense cultural significance in India, extending its influence beyond the kitchen and into religious rituals and festivities. In Hindu traditions, ghee is often used in sacred ceremonies and offered to deities as a symbol of purity. During festivals like Diwali, the preparation of sweets and savouries using ghee becomes a symbolic expression of joy and celebration.
Symbol of Prosperity and Hospitality
In Indian households, the act of serving food cooked with ghee is considered a gesture of hospitality and abundance. Ghee is associated with prosperity, and its presence in meals signifies the care and effort invested in preparing a wholesome and flavourful feast. It transcends mere culinary use to become a symbol of familial warmth and generosity.
In the intricate tapestry of Indian cooking, ghee emerges as a golden thread, weaving together flavours, traditions, and nutritional richness. Its journey from butter to liquid gold reflects the artistry of Indian culinary techniques, while its ability to enhance a dish's taste and fragrance makes it indispensable in the kitchen. Beyond its culinary prowess, ghee embodies cultural values, becoming a symbol of purity, prosperity, and hospitality. As India continues to embrace its culinary heritage, ghee remains a timeless ingredient that bridges the gap between tradition and modernity, enriching both the plate and the soul.

Bite-Size History: Exploring the Origins of Traditional Snacks | Tocco
Tumblr media
Festivities have already begun in India and every month from now, we get to see colours, celebration, and belongingness. India being a land of diverse cultures, languages, and traditions, it celebrates a wide range of traditional festivals throughout the year. These festivals often have religious, cultural, or historical significance. The festivals are sometimes a single day event, or it may go on for a few days. Not only that, some of these are region specific and the way it is celebrated in each region also differs. A good harvest is a sign of prosperity, and some states dedicate days to celebrate this as a token of gratitude to Mother Earth. Pongal in Tamil Nadu, Lohri in Punjab, Onam in Kerala, Bihu in Assam, Nuakhai in Odisha are all harvest festivals and commemorated in festive spirit. Diwali being the festival of lights and Holi being the festival of colours are celebrated across the country, and in some states with abundance. Dussehra and Bakrid celebrated by Hindus and Muslims respectively are linked to mythological beliefs. For generations, these festivals have been celebrated with much galore and the customs are dutifully practiced and passed on to younger generations. While the significance, customs and traditions differ for each, at the end of the day, they contribute to immense happiness and memories.
Nostalgia
These festivals evoke some fond memories and take us back to a beautiful nostalgia of events. The inevitable aspects of each festival involve rituals that are jointly done by the families at the place of worship, playing games together, gifting and most importantly, preparing festival special delicious sweets and traditional snacks at home. The last bit holds a special place in the hearts of many as it greatly contributes to childhood nostalgia and there's always a sentimental value attached to it whenever we savour such snacks. Some foods are associated with specific festivals, and these may also be offered to God as ‘prasad’ in Hindu traditions.
One of the famous sweets made during festivals, is the Modak sweet offered to Lord Ganesha during Ganesh Chaturthi. They are steamed dumplings with coconut-jaggery mix stuffed inside. This is famously made especially in Maharashtra where Ganesh Chaturthi is celebrated with much glory. Similarly, during the Pongal festival in Tamil Nadu, it is a custom to make ‘venpongal’ (a savoury dish made with rice) or Chakkara pongal, the sweeter version of it. It is a popular dish served to guests and visitors during Pongal day. Rakshabandhan, that symbolises the unique bond and love between sister and brother involves the sister to tie a ‘rakhi’ on the brother’s wrist, and the brother offers gifts to the sister along with a sweet fed by him. This is mostly barfi, or other traditional Mithais. During Bakr-eid, which is a holy festival observed by Muslims all over the world, prepares a vibrant spread of ‘sacrifice feast’ and Haleem tops the list of most favourite dishes. The beauty of all these delicacies and others prepared in different parts of the state is that it’s always made extra to share with friends and loved ones, boasting the culture of sharing and love among Indians.
Sense of Comfort and Belongingness
The recipe of the dishes is passed on to the younger generations which is also why whenever we have them it takes us back to the memories of us as children waiting near the kitchen to have them fresh, and our grandparents assuring us that we will be given a generous amount of it. The same set of ingredients in the exact portion size is followed as a practice because nobody likes to mess with the iconic dishes made by our ancestors. The familiarity is what brings a sense of comfort and belongingness during these festivals. Over the years, families moving to nuclear size and the inconvenience for everyone travelling to one place for celebrations had made many to resort to buying these dishes from shops. The trade-off here is the authentic taste of the dishes which we get when it’s made at home. Also, homemade snacks ensure the ingredients are used in moderation at hygienic settings. During the festive days, home-based businesses may offer these homemade snacks which can be pre-ordered especially for the people who cannot access it otherwise.
The importance of the traditional snacks is very significant in the concept of festivals of India, that if not preserved and passed on to the future generations, the true essence will go extinct in some years. It is also to be kept in mind that it's not just about the taste, but food is a unifying force that brings together families and communities closer. Festivals such as Dussehra, Diwali, Ganesh Chaturthi are around the corner, and this year, try going back to your roots, preparing the festival special dishes with recipes from your grandparents’ kitchen. Inculcate the essence of unity and love among everyone!

Murmura Chivda - Spicy Puffed Rice - Alfa Foods
A delightful Indian snack known as murmura chivda or kurmura chivda is made with puffed rice, curry leaves, herbs, and peanuts. This quick and easy recipe for crunchy and spicy puffed rice may be prepared in under 30 minutes. It is a nutritious, gluten-free, vegan snack that is great for teatime or as a Diwali (faral) snack!
Try this murmura chivda recipe if you're wanting to prepare a quick, easy, savoury snack for Diwali, which is just around the corner. Kurmura, also known as Murmura Chivda, is a quick, crispy, and highly addicting snack that can be made in about 30 minutes. If you enjoy chivda as much as I do, try this alternative recipe for Poha chivda.
What is Murmura Chivda
Puffed rice is known as murmura (or muri) in English, mamra in Gujarati, and kurmura in Marathi. It is taste-neutral, light, and white in colour. Indian households frequently utilise it to prepare snacks like bhel puri, sukhi bhel, murmura combination, and chivda. An Indian snack mix or spicy trail mix is called chivda or namkeen. The ingredients and recipe for chivda can differ depending on the locale.
The major ingredient in chivdaa, which can be either oats, cornflakes, rice flakes, or puffed rice, is typically a mixture of dried fruits, nuts, other fried crispy foods, and spices and curry leaves. I'm giving a recipe for murmura chivda in the Maharashtrian manner today.  This chivda is made with puffed rice, split-roasted chickpeas, roasted peanuts, and is spiced with curry leaves, green chile, and basic spices. It is a far healthier and tastier alternative to purchasing pre-made alternatives like diet bhel, lemon bhel, sukhi bhel, or other puffed rice snacks. It is a really basic and straightforward dish that comes together in less than 30 minutes.
Also, take ideas from our previous blog on: The Best Banana Chips Brand in 2022: A Complete Buying Guide For You
What Will Inspire You To This Recipe
It's easy and basic.
It is quick, assembling in 20 minutes.
extremely tasty and compelling
Healthy, gluten-free, and vegan
at ambient temperature, a long shelf life
Excellent with tea or as snacks when travelling.
ideal for a flavorful Diwali faral.
Ingredients
Puffed rice: are murmura, mamra, and kurmura. It serves as the recipe's foundation. Similar to the rice crispies cereal, it is white, puffed, and light, but its flavour is unflavored and unsweetened. Murmura of Basmati rice was utilised. These are offered online and at grocery stores in India. Nuts: I've roasted raw peanuts until they are crunchy. To reduce the time, use toasted peanuts. These give the chivda some protein and a pleasant crunch. You can also use cashews and coconut flakes as an alternative. Split chickpeas that have been roasted: Dalia (daliya). They also provide a nice crunch. These are offered online and at grocery stores in India.
Spices & seasoning: To create chivda, you'll need basic tempering components like turmeric, curry leaves, asafoetida, mustard seeds, cumin seeds, and zeera. If you want to make it less spicy, you can omit or reduce the green chilies. Sugar and salt are used to flavour food and provide a hint of sweetness. Oil is used to temper. Use neutral, flavourless vegetable or canola oil.
Step By Step Procedure
1 - Dry roast the puffed rice on medium-low heat, stirring occasionally, until crispy (approximately 3-5 mins). One puffed rice should crush easily between your thumb and index finger when tested, producing a crisp, crunchy sound. Transfer to a sizable dish or clean plate. Set apart. Puffed rice can be roasted, but doing so will help it stay beautiful and crispy for longer. 2 - Heat oil in the same pan (clean it if necessary), then add peanuts. until the peanuts are brown and crispy, saute on medium heat (approximately 3-5 mins). Transfer to the bowl with the puffed rice after draining. 3 - After that, add the split chickpeas and cook them until they're just beginning to turn golden (approximately 2-3 mins).
Also, take ideas from our previous blog on: Health Benefits of Makhana: 7 Incredible Advantages of Fox Nuts
4 - Drain and add to the bowl with the peanuts and puffed rice. Set apart.
5 - Add the mustard seeds to the same pan with the oil over medium heat. Due to the roasting of the peanuts, the oil may appear little stained, but that is okay. 6 - Add the cumin seeds, asafoetida (hing), curry leaves, and green chile once the seeds begin to sputter. If you are too close when adding the green chile, it could make you sneeze and cough. 7 - Continue cooking until the green chile and curry leaves are crispy. 8 - Lower the heat and add the turmeric.
9 - Continue to cook the turmeric for a few seconds. Keep it from burning. 10 - Add salt, sugar, split chickpeas, and roasted murmura to the mixture. 11 - Gently stir the mixture until it is thoroughly covered and crispy. It will change into a lovely shade of yellow.  To avoid the mixture burning, turn off the heat and continue mixing for a few minutes after you have done so. 12 - Spicy Puffed Rice Mixture, also known as Murmura Chivda, is ready!
Suggestions For Serving and Storage
Before putting the puffed rice chivda in an airtight container, let it cool fully. It lasts 3 to 4 weeks at room temperature before going bad.  With chai or coffee, serve it room temperature as is. It also works well as a lunchbox and travel snack.
For a quick answer to your chaat desire, top this chivda with onion, tomato, potato, and a squeeze of lemon juice! You can also use it as the base for bhel puri! You should eat the mixture right away because adding any type of vegetable may cause it to become mushy.
Recipes Guide
For this recipe, use crisp, fresh, high-quality puffed rice. Even puffed rice that hasn't expired occasionally becomes stale, squishy, and develops an unpleasant odour after being stored for a while.
To make soft puffed rice crunchy once more, dry roast the grains of rice. The puffed rice is twice roasted, once before tempering and once more while tempering, to prolong the crispiness of the chivda.  Green chiles and curry leaves should be cooked till crispy. Their shelf life is extended as a result.  This recipe is simple to double. You can either prepare a big amount to share with your loved ones or preserve it in an airtight container.
To suit your tastes, alter the spice amounts. If you like your puffed rice chivda light, omit the chile or use only half of it.
