We had a virtual cheese tasting as our work holiday party. Jasper Hill creamery is actually a Vermont brand, so it was extra fun for me! I remember them establishing their aging cellars back in 2006 and what a big deal it was. That's like $100 of cheese up there. My job's pretty great.

Little Hosmer from Jasper Hill
Please welcome the newest addition to the Cellars at Jasper Hill collection: Little Hosmer!  A “mini version of a new world-style brie”, this gooey cheese is approachable in flavor, with notes of cauliflower, butter, and fresh cream.  Its namesake is equally charming; a small pond in Craftsbury, Vermont, where the cheesemakers take breaks swimming and fishing. The Cellars at Jasper Hill   began with the intention to be a model for struggling New England farmers while reviving the dairy industry in the Vermont area.  They proved that, with certain modifications, it was possible to be successful amongst the rocky hillsides that dominate the area’s farming terrain.  In the early 2000’s the company invested in a series of aging tunnels built into the farm's hillside.  The tunnels have been designed to maintain the specific temperatures and humidity levels necessary for ripening, ensuring consistency and the best environment for cheeses not only from Jasper Hill Creamery, but also from neighboring cheesemakers.

Sterling College: Fundamentals of Artisan Cheesemaking, May 15-24
In addition to being a full time cheesemaker at the creamery, I’ve also recently gotten involved with social media here at Jasper Hill Farm, including managing the Instagram account and writing newsletter content. My recent post, on Sterling College’s “Fundamentals of Artisan Cheesemaking” offering, in May, is one I’d like to share here as well. I had the good fortune to audit several of the classes with Ivan Larcher during the January session, and highly recommend the next session, running May 15-24, to anyone looking for an educational opportunity in cheesemaking. 
Back in 2013 I completed the Cheesemaker Certification course at UVM’s Vermont Institute of Artisan Cheese. Sadly, the educational department within the Institute had to shut its doors soon after, due to financial reasons, ending what was, at that time, the only educational program of it’s kind in the US (I was part of the very last graduating class). 
However, Sterling College soon began offering their own, similar program, and many of the professors from VIAC, including Larcher, have migrated from that program to this one. I can say, from my experience both at VIAC and at Sterling, that this is an excellent program and highly recommended.

Led by world-renowned French master cheesemaker and educator Ivan Larcher, "Fundamentals of Artisan Cheese" will provide students with all of the practical and scientific knowledge needed to create the highest quality artisanal cheese, as well as covering core concepts and practices on financial, facility design and management, distribution and marketing aspects as well.
Sessions will also be held with members of the Jasper Hill Farm team, including the chance to talk cheese with Mateo Kehler, co-founder of Jasper Hill; sensory and historical sessions with Zoe Brickley; food safety and sanitation & hygiene with Emily Hershberger; cave tours with the affinage team and cheese microbiology with our resident microbiologists.

Fifteen years later he tracks you down.  Those feelings the two of you shared never went away, but now he is not only an Avengers but a single father.  Can the two of you make it work after all this time when your lives have gone in such different directions?

Chapter 15: Now
“Alright, alright,” Clint said, holding his three kids at once.  “I’ll be back soon enough.  I promise.”
“We don’t want you to go,” Lila whined.
“I know, sweetheart,” Clint soothed.  “But there are a bunch of kids just like you that are in trouble right now, and I gotta go help them.  We’ll be back in a day or two.  I promise.”
Clint’s words of reassurance seemed to only make the kids cling to him even tighter.  You couldn’t blame them really - if you’d had a parent that had given half a damn about you, and you knew how easy it was to lose that, you wouldn’t want to let them go either.
“I’ll protect him,” you said.  “Anyone who tries to hurt your dad will have to get through me first.”
“Yeah, and she’s really tough.  Plus your Auntie Nat will be there.  So will Auntie Wanda, and Uncle Steve,” Clint assured them.  “I’ll be home soon, and Ebony’s gonna take really good care of you.”
“That’s right,” Ebony agreed.  “I will.  Plus, because you’re dad’s not here, I can give you as much candy as I want.”
Cooper and Lila reluctantly pulled away but when Ebony went to take Nate, he wailed and clung to Clint.
“Come on now, bud,” Clint soothed.  “I need you to be super brave, and someone needs to take care of Jasper.  You know he likes you best.”
Nate looked up and furrowed his brow.  “Weally?”
“Yeah, really,” you agreed.  “I think he likes you even more than he likes me.”
Nate reluctantly let himself be taken by Ebony and Clint quickly kissed the kids goodbye.  “This is really just a ‘go-in and arrest them’ thing,” Clint said to Ebony.  It was something he’d already told her three times, but she let him repeat it.  “Couple of days max.  I’ll call if I can but you can always call Pepper for a status report if you need to.”
“I know, I know,” Ebony said.  “Get out.  I’ve got this.”
He smiled at her and patted Lucky before heading out with you.  “Fuck, that does not get easier.”
“Yeah, well, they’re worried about you,” you said, taking his hand as the two of you descended the stairs.
“It was better when Laura was alive,” he said.  “They never loved me leaving, but there’d just be some tears.  Not this ‘clinging to me’ thing.”
“Well,” you said.  “The older two have lost two parents now, right?  Probably they’ve started thinking they’ll lose everyone.”
Clint stopped dead in the stairwell and looked back up the stairs.  “Fuck,” he cursed.
You took a few more steps before the tug of his hand made you realize that he wasn’t walking with you anymore.  “What?  You didn’t realize that?”
“I mean -” he shrugged his shoulders and started walking again.  “I guess part of me did.  I knew it was separation anxiety because they’d lost her.  But I guess I didn’t think that this was becoming a theme for them.”
“You can stay behind if you want,” you said.  “I am sure the rest of us can handle it.”
Clint shook his head.  “No,” he said.  “As much as I hate it, Jacques was one of my father figures.  I hate him - and I also kind of love him.  I need to see this out to the end.”
You nodded.  You knew exactly how he felt.  This was a long time in the making and you wanted to be there to take him down so you could have closure too.
When the two of you stepped out onto the street a van pulled up beside you and the back door slid open.  You and Clint jumped in and squeezed into a chair next to Bucky.  “How far do we have to go?”  Clint asked.
“I’d say a three or four hour drive.  Depending on traffic,” Steve said.
“We’re not taking the Quinn?”
“We didn’t want to give them a chance to spot us coming,” Steve said.  “The whole reason Swordsman keeps getting away from us is because he’s always one step ahead.  Tony and Sam are going to fly in once we get there.”
Clint nodded and shifted in his chair, pushing you against Bucky a little more.  “Hey, bird,” Bucky snarked.  “Wanna not spread out so much, we have a long fuckin’ drive.”
“Yeah?”  Clint teased.  “How about I do this instead.”
He leaned into you like he was going to kiss you.  You burst out laughing and pulled away from him, pushing further against Bucky.  “Get off me, you idiot!”  You squealed.
“Steve, you think I can drive?”  Bucky deadpanned as he pushed you both off of him.

It was dark by the time the van pulled up down the street from the large, yet run-down Queen Anne house that stood at the top of the hill, and everyone in the van was getting antsy.  It was the kind of house that kids would say a witch owned.  The yard was overgrown and brown, and the paint was all peeling from the timber of the house.   There was a large, rusty gate out the front and the walls that surrounded it were starting to crumble.  Somehow, despite never really knowing Jacques to have lived in a house, this was exactly the kind of place you could see him in.
You stretched a little as you stepped out of the back of the van, and Steve gathered you all into a huddle.
“From what we can tell, his security is top of the line, so don’t let the appearance fool you,” Steve said.  “Tread lightly, stay in the shadow.  He has a good view of the entire area, and if he’s alerted they’re all going to run.  You four, he said pointing to you, Bucky, Natasha, and Clint split up.  I want you to enter unseen, and block off the exits.  The rest of us will follow on when you give the signal.  Wanda, do your best to keep track of who’s in the building so we don’t lose anyone.”
“Yes, sir,” Wanda said.
“We all know our jobs?”  Steve said.  When no one replied he nodded.  “Then let’s go.”
You pulled your mask down and followed Natasha, Bucky, and Clint up the hill, keeping low and to the shadows.  When the four of you reached the stone fence, Natasha waved you and Clint in one direction and she and Bucky went in the other.
When you reached about halfway down the wall, you found a tree that - while it didn’t hang over the fence - it was close enough that the two of you could jump over.  Clint gave you a lift into the tree and you pulled him up after you.  Without a word the two of you ran along the branch that got you closest to the wall, and when the branch began to sag, you leaped, somersaulting in the air and landing crouched on the ground.
Clint wasn’t far behind you, and when he was safely inside the walls, you split up.  Clint continued his trip around the building, while you went straight for it.
You reached a dying hedge near the house and crouched behind it as you surveyed the building.  There was a cellar door near you and a trellis that ran up the side of the tower.  You knew the likelihood that both were alarmed was pretty high if what Steve said was true.
Bucky’s voice came through your comms.  “Winter Soldier in position.  No indication they’ve seen us.”
“Black Widow in position,” Natasha responded. “Awaiting orders.”
“Sugar Snap in position,” you echoed, remaining hidden in your spot and gazing over the house, looking to see if anyone seemed clued into your position.  There was movement in the house, but nothing that seemed to indicate that anyone was alarmed.
“Hang on, hang on…” Clint said, slightly breathlessly.  “Okay, Hawkeye in position.”
“Alright, we’re at the gate,” Steve said.  “Tony?  Sam?  You ready?”
“When you are, Cap,” Sam responded.
“Yeah, hurry it along,” Tony added.  “I want to go back to binging the Mandalorian.”
“Alright, team one, enter the building,” Steve said.  “Get as far in as you can go before tripping the alarms.”
You took off from your hiding spot, scaling the lattice until you reached the top window on the tower.  Using your sword you forced the window open, immediately setting off the alarms.  You ignored them, jumping through the window.  There was no one in the room, but there were a lot of computers, and on the table were photos of girls in compromising positions.  Your blood boiled seeing them, remembering back to when it was you being manipulated by the man who had said you’d be safe.
The sound of running echoed in the hall outside and you pulled your sword, readying yourself as the door burst open.
Jacques Duquesne hadn’t changed a lot in the past 18 years.  He was older, yes.  But aside from a few more lines on his face, and grey in his hair, but he still looked as fit as he ever had.  “Well, well, well,” he said, stopping short in front of you and pulling his own sword from its sheath.  “You’re all grown up.  Zelda said you were working with the Avengers now.”
“That’s right,” you said.  “And you are now going to go to prison for a very long time.”
He raised his sword.  “That’s adorable.  You think you’re going to get payback for something you agreed to willingly?”
“I was a kid!”  You shouted and charged at him.
He deflected you easily.  Your rage getting the better of you.  You spun around and attacked him again, and he shoved you aside.
“You really are so cute, ma petite,” Jacques taunted.  “Barton taught you with the blade, but he never was as good as me.”
He swung at you and knocked the blade to the side, but he pushed back, shoving your blade against you.  He was stronger than you, and you couldn’t match the brute force he was putting behind the attack.  You flipped backward and he swung the blade at you.  You watched it in slow motion as the blade swung under you and put your foot on the flat of the blade, balancing on it even as it moved.  You flipped back again and kicked him in the jaw, sending him reeling.
As you landed on the ground - sword at the ready - Jacques recovered, wiping the blood from his lip.  “I’m going to make you pay for that, you little bitch.”
“Come get it,” you hissed.
He swung at you, and you countered.  He swung again quickly, and each strike he made, you parried.  He was stronger and the better swordsman, but you were more agile and your need to beat him was greater.  You started to back him out into the hall, adrenaline spurring you on even as your arm began to tire.
You reached the stairwell, and Jacques cried out and spun, a spray of blood splattering your face even before you were even sure what had happened.  Jaques tripped and stumbled down the stairs and as he dropped from your line of sight, you saw Clint with his bow drawn and everything clicked into place.  Clint had shot him.
You jumped down the stairs after the swordsman and knocked him from his feet.  He landed on his back, and the arrow that had punctured his shoulder, pushed through it more, making him cry out.  You kicked his sword away and held your blade to his throat.  “Goodbye, Jacques,” you said, looking down into his eyes - revenge the only thing driving you.
“Sugar!”  Clint yelled.
You turned and narrowed your eyes at him.  “Why shouldn’t I?”
Clint approached you slowly like you were a wild animal ready to lash out.  “Because… you are better than him.”  He put his hand on your arm and looked you in the eye.  You could hear fighting in the rest of the building and you were vaguely aware that Steve was standing at the bottom of the stairs with his shield at the ready.  “Don’t let him pull you down to his level.  Not again.”
You looked back down at Jacques.  He was breathing heavily, but smirking at you - daring you to do something.  You took a deep breath, weighing your options.  For a moment it felt like both things were happening at the same time.  You were killing him and you weren’t.  He was dead and he was alive.  Schroedinger’s cat in real-time.  You swung your sword away and Clint pulled you into his arms.  Steve moved quickly, pinning Jacques to the ground, putting him in handcuffs.
“You and me, sugar,” Clint whispered.
You nodded and sagged against him as the adrenaline left your system.  You knew he was right.  You’d separated before because you’d both chosen different paths.  Now, you were choosing the same one, and you wouldn’t let anything come between you again.

“Summin Strange in Them There Hills” Preview
Chapter One: Two Missing, Presumed Dead
This was supposed to be my time off, but “two missing, presumed dead” isn’t the kind of story I can turn down. I was in my apartment, surrounded by bottles, dirty dishes and cigarette butts, when an envelope slid beneath my front door. “Fuck,” I thought, assuming it to be a bill I had forgotten or the harbinger of trouble. It was the latter. A note from my boss, sparse on the explanation: and old friend of his was running an outpost on the frontier, two boys went out and never came back, leave [the contact’s] last name out of the press. If there are those of faint heart among us, my next series of columns will not be for you. Or maybe they will, I’m scribbling the first draft of this while waiting for the train with no intent of changing it. My job is to see the present and past with clear eyes; the future will always remain shrouded in fog. The only other instruction I was given was to hop on the next train available to Darmatilo. I know nothing about it, beside the fact that it lies in the region first settled by our kind when we moved westward. In my frenzy to get down to the station, I packed lightly and walked fast. It seems the line only runs in that direction twice a day, so I’ve had plenty of time to wander about. The ticket counter had a small display of pamphlets next to it, trying to tempt workers to waste their vacation in an arid wasteland, but I was able to scrounge up some information on my destination. Not directly, it was mostly an ad for the luxurious riverfront city of Ladustri, but there was a passing line about the ‘historic’ settlement of Darmatilo, separated by a small ridge from the mining town of Lagerdient. After eighty years it’s suddenly ‘historic’, the absolute gall. The train should be arriving any minute, and only now am I realizing that I could have gone back home to pack more substantively. I’m not used to last minute trips, nor stories with the possibility of more than a few days work. Maybe I’ll be lucky and head home before I run out of clean clothes, but it feels almost vulgar to suggest. My packing playing a role in the length of my stay is fine in the context of a feel-good story, but heading into something more dramatic… Comfort be damned, I’ll stay however long it takes to finish the piece.
Travel is not an unfamiliar aspect of the job, and it comes with a few perks. I don’t often head out of the city, Our City that is, but when I do I travel well. Private cabin with plenty of space, complimentary food service, and unlimited access to the sleeper cars. I spent most of my time glued to a book, but when the trolleys passed by and roused me from my trance I would glance up at the world dashing by. Trees to mountains to nothing desert. Swear to god my ears popped at least three times. Despite the emptiness stretching out before me, the desert is a relief. Something about the mountains, knowing I was so far above everything else, put me off. No matter how much I ate, nothing felt satisfying. I couldn’t concentrate on my book and even my nocturnal excursions provided little relief in the face of knowing how separated from everything I was. The air is too thin up there, no one wants to man an outpost up there. Despite all the complaints I could have about the desert, moving away from that truly dead region into one that seems that way was a relief. The ground was more even and I actually ended up finishing my book. Tragic, finishing a nonsense book in a single sitting, everything wrong with it jumped out much more ferociously. But I wasn’t reading for the plot, I wanted to see characters wriggle through strange situations. It posed this great question of, beyond all the strangeness in normal life, what if there was much more out there in the stars? Automatons indistinguishable from humans, Earth as our homeworld being a long forgotten relic, ‘star ships’ with the ability to jump great distances across the universe… I can’t tell whether the idea of humanity’s faults existing far beyond the bounds of our world is deeply cynical or a profane kind of optimism. If I’ve been keeping track of the stations correctly, I should be getting off soon. This section of my notes, or article if I decide to publish it as is, might be coming to a premature end but I need the last five minutes of any journey to get ready to transition back into work. I may travel for work, but it’s never felt like work. I can’t think of any other moment where I feel so comfortable and justified to fold into myself.
The whine of the whistle felt louder, knowing that I should start gathering my things. I’m a professional and know what I’m doing, so I hung back while everyone else stood up and huddled around the doors as they waited for them to open. Part of me can understand the impulse to get out as quickly as possible, but pragmatically the best option is to stay comfortable and seated until everyone is moving. Filtering out with the last of the passengers, I glanced along the platform for a figure who seemed to be waiting for someone. A man dressed in jeans and a dirty grey shirt was leaning against one of the pillars supporting the station awning, brim of his black hat pulled over his face and cigarette hanging out of his mouth. He looked over to me and gave a little nod upwards in acknowledgment. “Nic?” “And you must be Marcy, mighty nice to meet you,” he said, sticking his hand out. I nodded and kept moving, hoping the horses weren’t in the opposite direction. I would not describe Nic as loquacious, gregarious, or even a minor form of talkative. He was silent down the boardwalk, and was sparse with his words in identifying the black stallion as his and chestnut horse next to it, with a white streak going from its mouth past its chest, as the one I would be using. He focused on the case on the ride over, along with confirming that his first name was fine to use. Franz and James were the lads missing, the first disappearances in a long line of ‘kids’ finding refuge in the outpost, and… I’ll print it because it’s the truth, but I hate it: I was only there to make the remaining residents feel at ease. Not to say I won’t see this assignment to the conclusion, I am still an investigator, but I wasn’t meant to mention I’d only shown up to write for a paper. Something about wanting to keep the ‘kids’ from the brutal truths of our existence, make them think someone cares enough to look into it. Seems I am that someone who cares, although their understanding of my motivation may be a bit skewed. The ridge was surprisingly verdant, lined with trees on either side which were surrounded by pine needles and shrubbery. How they got into the desert I’ll never know, but squirrels rustled through the branches as we passed, spooked by our presence. Nic spent the gallop from the station shouting over his shoulder to get me up to speed, yet in the craggy path, full of sharp turns forcing us to keep our pace slow, he was silent. Why was that? “I wanted to give you a chance to appreciate the scenery.” And after all that time on the train, surrounded by dirt out to the horizon, I did. It reminded me of a certain part of the park about seven kilometers south of my flat. A straight path, but juxtaposed with everything around them[rephrase] both feel like somewhere you could get lost amongst the trees.
We spent at least half an hour winding through the wilderness until we entered a clearing, at the centre of which was a three story house. The wood was weather-beaten and dark from some impossible rain localized in this little area, and it had a covered porch out front next to the hitching post with chairs and a barrel hosting a crowded ashtray. The sound of hooves below us was muffled by grass as we approached the house. Candlelight flickered in the windows and I concentrated on taking in the moment; getting back into the experience of the first night off in a distant place, settling in so I can better take in what it feels like to be here. Following Nic inside, I got the faint whiff of roast beef. The dining room to our left was set up for dinner, but the room was empty. In the living room to the right a fire was blazing next to a man in a suit, who glanced up at us from his book with a look of anger. “You’re late,” he said, setting his book aside to get up. Despite shaking his head solemnly, his lips trembled, fighting to curl upwards, as he held in laughter. “Marcy’s train was late, and-” “Absolutely no excuse! The food’s gone cold, what am I meant to do? Heat it up in the oven like a commoner?” I said nothing while observing this ritual, as he sidled up to Nic and gave him a kiss on the cheek. They laughed and he turned to me. “Jasper,” he said, sticking his hand out for me shake. I introduced myself and, looking to Nic to confirm that I could speak freely, made sure we were on the same page as to why I was there. He wasn’t entirely comfortable talking about it, something about it making him not want to leave the house, and shifted the conversation to getting me settled in.[Ugh rewrite this] “We can save this for tomorrow, no? You’re probably starving, let me get dinner heated back up.” He gave Nic another peck, then disappeared into the kitchen. I went with Nic and took a seat at the table. It’d been mostly travel, but it was still a long day and I started to feel it as I sunk into my seat. Jasper was dashing between the kitchen, dining room and cellar as he brought out a bottle and poured us all a glass. In the middle of proposing a toast, he excused himself for a moment to check the oven. When he came back, he raised his glass and said, “To new friendships and new beginnings.”
Final Notes: I have a small candle resting on the desk in my room, where I’m scribbling this down before going to bed. It feels like a slow start, with little to no new information coming out (beside the ruse I’m meant to carry on with) and I’m fine with that for the moment. It’ll take some getting used to, being out in the middle of nowhere. The constant sounds of the city have been replaced by the buzz of cicadas and chirp of crickets. I’m in a small room, previously belonging to James, with a twin bed set up with an itchy green blanket. Beside the oak armoire and a painting of a dancer hanging on the wall, the room is bare. Despite how late it is and how tired I feel, the prospect of settling in to a new bed feels draining in its own wicked way. It’s an intersection of the trust needed to fall asleep in a strange place, the adjustment to a new environment, and the threat of restlessness. My job demands that I keep daylight hours, but I’ve always been fond of late nights. Not doing anything, but staying up and feeling like the world is my own. One item of concern I brought up over dinner was the absence of the ‘kids’ (it’s an oft enough used colloquialism in this situation that I’ll be removing the apostrophes from here on out) as the pretense for me coming out was putting their minds at ease. It seems their concern was focused on the idea of an unsolved crime rather than their safety. One of the more troubling manifestations of this was their insistence on abducting locals to interview, undermining the separation between residence and feeding grounds. I haven’t looked into how it’s done in the industrialized setting of the city, but from the price I’m guessing there is an assumption that we’d handle it on the individual end. That’s not an option out here, and to compensate they cross county lines for donors in most cases. Thankfully, most of the abductees were taken from their homes and could simply be bitten and returned with no recollection. But this was a corrective course, and at least one was picked up while in transit. If we are dealing with a hunter, which I doubt, they’ve been tossing rocks at the hornets nest. Even if not, one might have been stirred up in this chaos. We’ll just have to see moving forward.
So that’s the start of the [unedited] second draft of my next novel, Summin Strange in Them There Hills. If you read any of the first draft, there’s been a significant shift in the voice which I’m really happy with! So I’ve been doing lots of D&D world-building lately and I’ve kind of been putting together lists of words to help inspire new fantasy place names. I figured I’d share. A lot of places are named after historical events, battles, and people, so keep that in mind. God/Goddess names tied to your world also work well. Places are also often named after things that the area is known for, like Georgia being known for its peaches.

favorite cheese and why?
I don't have a single favorite bc they're like my children! And I can't afford the therapy for them if I choose just one fave. BUUUUUUT I will tell you the cheese that I would conjure up to snack on right this minute if I could. So. Favorite at this exact moment for only this exact moment.
I'm gonna go with Landaff. It's made in Vermont and aged at the cellars at Jasper Hill, and its not a particularly loud cheese. It has a slightly loose curd structure, a bit like a cheddar but not so dense. At room temp it will squish between your fingertips. The closest European cheese is Wensleydale, though Landaff is, to me, a bit sharper (more acidic) with a crumblier paste.
I want it right now because of that squishy crumb, actually. I'm craving a cheese I could break apart with my fingers. Taste wise the idea of something bright and light, maybe with a slight mustard tang and just a hint of butteriness. Not super nutty. Not biting like an American cheddar or earthy like a British one. A session cheese; one you could snack on for a while very casually without your palate feeling like it's been wrung out BUT with new notes of flavor still coming up when you return to the cheese.
And after snacking I'd make a toastie, because Landaff is a superb melter, getting gooey and stretchy but not separating too badly like cheddar does. I have a single apricot that I'd eat along with it, because that dry, subtle sweetness is a great accompaniment to the cheese.
So. Favorite for this second, if I could have it: Landaff.

I have A LOT of main obsessions, because November ended so close to when I generally find my favorites for the week. So let's just get this over with and look at all those main obsessions.
Kim Petras - Turn Off the Light feat. Elvira, Mistress of the Dark
I learned about Kim through a guy I follow on Twitter. He kept going on about her, so I decided to check her out. Her music really isn't my thing, but I really liked this track. I love Elvira's cameo in the bridge and how spooky the choirs are after that cameo. It's just a really cute Halloween song. Can't really go wrong with it.
Haken - A Cell Divides
This is an amazing prog track. I love how djenty and proggy this track gets. The lyrics have a bit of a sci-fi feel to them, but it's more sciencey than sci-fi. The lyrics are cool is what I'm getting at. Definitely a great driving song and a wonderful song to just blast in general.
Exilia - Feel the Fire
This is their newest single and I love it. I've been a fan of these guys for many years now. I discovered them during my angsty edgelord days and have kept up with them and witnessed them evolve into the band they are today. I love the vibe of the track and you get a great feel for just how powerful their front woman's voice is.
Tillian - Black Holes
I found these guys through a Facebook ad one day. This is some really nice prog right here. I'm really digging their sound and am gonna have to check out more from them. They're on the softer side of progressive metal, but it's still some proggy goodness, and you can't turn that down.
Meg Myers - Jealous Sea
After finding and falling in love her song Numb, I had to check out more from her. So I decided to give this song a listen since it was a music video. Best decision ever. I love the play on words with the song title and the song over all. This song alone made me listen to her new album, which is amazing. There's something about this song that I just absolutely love and I just can't get enough of it.
Marcela Bovio - Roardin (No One is Born a Hero)
I'm really liking the direction Marcela's new album is going in. I love how it features both the strings and the piano. I also love how she describes her sound: chamber prog. Anyways, this song is so pretty. It packs a really empowering message that we all need to hear sometimes.
Blackbriar - I'd Rather Burn
I wasn't planning on listening to the We'd Rather Burn EP, but after hearing Cry of a Banshee, I had to. I fell in love with the EP as a whole, but this song was constantly in my head afterwards. The chorus is really catchy and I just love the lyrics so much. A witch being burned at the stake who reminds the people who are burning her that she'll be back to torment them. What isn't there to love?
Poppy - Am I A Girl?
After hearing that she experimented with metal on her new album, I had to check it out. Shockingly enough, I really dig the album. This song though is my favorite. The vibe is so fun and the message behind it (or at least how I interpret it) is a non-binary anthem. It's so much fun and I love the pre-chorus a lot.
Dimlight - Into the Thrice Unknown Darkness
This track really shows off just how beautiful Mora's voice is. She takes the lead here on the softest song on the album. I wouldn't call it a ballad track, so we're calling it a softer track. It's also great to be able hear just how powerful she is. This song gives off this overwhelming vibe of uncertainty and melancholy. I love it.
We, the Bones
Yes, I have two songs from Dimlight that I obsessed over. This song is definitely more on the aggressive side compared to Into the Thrice Unknown Darkness. I love the orchestrations on this track so much. It might be a rather simple track, but those orchestrations really sell it for me.
Piqaia - Parable
If you're into atmospheric progressive metal, check this track out. It's so pretty. I love their singer's voice so much. He's got a really pretty range and you can really tell just how beautiful it is here on this track when those harmonies kick it. This song stood out so much on the Artifact album. The vibe is just so different for some reason and I absolutely love it.
Amaranthe - Dream
This song really stood out to me on Helix. It's such a pretty track and really shows off the pretty side to Nils' voice. Not only that, but it shows off Elize's vocal range. Mariah Carey who? Homegirl can hit some really high whistle notes.
Sick N' Beautiful - New Witch 666 (The Rising)
This music video is absolutely everything. The visuals are so beautiful, but in a very spooky kind of vibe. The colors and the looks their front woman turns out in this video are to die for. The song is so catchy and fun. I'm so glad that their front woman liked a photo of mine on IG a while back, because if she didn't, I wouldn't have discovered this powerhouse of a band. Such a great jam.
Amazonica - Don't Fear the Reaper (Blue Oyster Cult cover)
I found this artist one day a while back when trying to see if the singer featured in Cradle of Filth's cover of Temptation had any other material out there. I completely forgot that Harry was the singer here. This is a pretty decent cover of this song. It's a very different take on it, like a new wave/synthwave kind of vibe. I'm really digging it.
Black Tongue - Second Death
I don't really keep up with these guys, but I might change that soon. This is the second or third track I've ever heard from them and I really dig it. It has a really meaty sound to it. Doomcore is such a strange way to describe your sound, but it really suits them.
Within Temptation - Firelight feat. Jasper Steverlinck
Holy shit. This song is literally a lovechild between Within Temptation and My Indigo (Sharon's solo project). Sharon said that this song was too dark for My Indigo and decided to release it under Within Temptation. This song is so gorgeous. It's so different and really stands out as a Within Temptation track. And Jasper. Dude. His voice is stunning.
Phildel - The Deep
I discovered Phildel many years ago through one of my og beauty gurus, Klaire de Lys. I've always really loved her voice, but back in those days I wasn't really into ambient music as much as I am now. It's like rediscovering her. This song is so gorgeous and pretty. And I adore the video. The animation is so pretty and cute. I'm definitely am gonna go through and listen to her music again and fully rediscover her.
Veil of Mist - The Flute and the Blade (The Archangel of Terror pt.1)
I don't remember subscribing to their YT channel, but I'm glad I did. This track is a powerhouse. If black metal, prog and power metal all had a baby, you'd have the sound and vibe of the instrumentals. The singer has such a strong and interesting voice. I don't know what it is about it here, but I really love her voice. This song has such a dark vibe to it that I absolutely love. I'm definitely am gonna check out more from them.
Soundgarden - 4th of July
I recently picked up a copy of Superunknown and while listening I was instantly drawn into this song. I'm not too familiar with them, so when I heard just how doomy and sludgy they got on this album, and especially on this song, I knew I made a good purchase. I love how doomy and sludgy this song is. Such a great track to chill to. I really need to listen to more grunge music.
Qveen Herby - Beverly Hills
This is my second favorite off EP 4 (Alone is my number 1). I love the trap beat and the overall vibe of the track. It's so chill, but also pops off. Definitely a great track to chill, drive, and jam to. I hope they do some touring soon, because I need to see Amy perform this shit live one day.
Levinia - The Fall
The Liberation EP is absolutely amazing with so many wonderful tracks, but this one really stood out to me. It's so beautiful, but is still really heavy. You get a really good feel for Court's range. My favorite parts are when she sings "and I remember" during the bridge and especially during the exit. It's so pretty and for some reason makes me feel slightly nostalgic of the 90's. Don't ask me why, it just does for some bizarre reason.

wine & cheese tasting

At the beginning of spring break, I hauled these bottles of wine up to Roxbury, CT to taste some wines with friends and to pair them with some cheeses. I chose 4 white wines for the tasting: Erbaluce di Caluso DOCG (Tenuta Roletto, Italy), Chablis (Domaine Vicoret & Fils, France), Macon-Villages Chardonnay (Louis Jadot, France) and Hondarrabi Zuri Getaraiko Txakolina (Hirutza, Spain). All of the wines were old-world style, and I organized the tasting from dry to sweet.

We began with the Erbaluce (front left) - it was crisp, dry, acidic and fruit-forward. This wine was immediately a hit - Erbaluce is really a special grape and this was something I had not tasted before. We then moved on to the Txakolina (back left). This wine was also quite unique. I love spanish wines, and the linearity and unique flavor profile here was a hit. This was so much more than a light, fruity wine - it packed an acidic punch. This is a must buy, especially for other lovers of Spanish wine. Next we moved on to the Chardonnays - the Macon-Villages from Louis Jadot left quite a lot to be desired. It had hints of vanilla and a subtlety that just didn’t stand up to the other wines in the tasting. If it tastes like almost nothing, it’s probably a mass-market Chardonnay. Finally, we moved on to a Chardonnay with character, the Chablis from Domaine Vicoret & Fils. This wine was fantastic. It was truly a deal at the Vintage Cellar - and I regret not buying more. It’s unusual to get a Chablis at this price point that has evolved so well with just a little age. This wine really came into its own, a pure expression of the Chardonnay grape with earthiness, acidity and minerality to bring out all of the smooth and supple fruit flavor in the wine. The star of the show!

And here were the cheeses, which were all purchased from the loal natural food store in Roxbury. To start, we had a manchego al tartufo (left). The salty and earthy flavors here were perfect as a foil to some of the lighter, fruitier wines and also went well with the chardonnays - this paired perfectly with the Erbaluce. Next was one of my favorite cheeses - Humboldt Fog from Cypress Grove. I love the bitter, funky rind of this cheese. It was always a favorite of mine growing up. In general, I really like goat’s milk cheeses, but this is quite the specialty. The texture of the center is reminiscent of the logs of spreadable goat cheese you find all over - but close to the rind the cheese takes on the most fantastic creamy, soft texture. I like to take a bit of both the center and outside together, as I find the flavors and mouthfeel perfectly compliment each other. The third cheese was another goat’s milk based cheese - but with a bitter, bloomy rind that almost reminded me of Jasper Hill’s Harbison. This was recommended at the market and had almost the texture of a harder brie. I really enjoyed this cheese and felt that its bitterness brought out a lot of the fruit character in the Chardonnay wines. The Txakolina was excellent with all of the cheeses, but especially with the Humboldt fog. As for crackers - we went with one sweet cracker (baked with dried stonefruit and seeded) and one salty (simple flatbread with rosemary & flake salt).

Here is a picture of some fantastic people enjoying the tasting in CT. Afterwards, we walked around the grounds of Alexander Calder’s studio (which is on the same property in CT!). It was a beautiful day, certainly enhanced by these wines and the beautiful lawns and outdoor sculptures.

Alpha Tolman comes out of hibernation

Inspired by Alpine cheeses such as Appenzeller, this Jasper Hill Creamery original is made using the same traditional techniques. Starting with unpasteurized cow’s milk, curds are formed, cooked, and pressed; essential for achieving that smooth, pliant texture. The wheels are aged for eight to twelve months and are turned and washed with cultured brine, transforming the rind to a warm burnt sienna color. Alpha Tolman has notes of sweet cream and toasted hazelnuts. As it matures it develops bolder flavors of beef broth and caramelized onions. It’s perfect for melting onto a plate of roasted fingerling potatoes, or on a cheese plate with onion jam and caramelized walnuts.

If you know anything about me, the one thing to remember is I don’t mess around when it comes to food. When I say it is good, it is damn good. I am not a critic, I cook, taste and explore. When I find something good I devour it! On today’s episode of the Coronavirus Cooking Diaries lets talk about cheese. Really muffuffin insanely good cheese! Allow me to introduce you to the Cellars at Jasper Hill Farms. Jasper Hill is a working dairy farm with an on-site creamery in the Northeast Vermont. An underground aging facility helps to age cheese made by the creamery, as well as those made by other local producers to perfection. Jasper hill feeds the leftover whey from the cheesemaking process to heritage breed pigs that roam the grounds. They strives to make the highest quality cheese while supporting Vermont's working landscape. They are driven, innovative and believers in quality and Terroir of cheese or their regional taste of place. Now let’s get to the cheese. (Excerpts taken from the Jasper Hill Cellars website) Pictured here is Harbison, a soft-ripened cheese with a rustic, bloomy rind. The cheese is wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. Harbison is woodsy and sweet, balanced with lemon, mustard and vegetal flavors. Landaff has a natural rind and a semi-firm cheese with subtle aromas of cave and grass. Its balanced complexity has a bright buttermilk tang and savory brown butter notes. Ginnimere is a take on Jura Mountain classics like Vacherin Mont d’Or or Försterkäse. This decadent cheese is made only during winter months when Jasper Hill’s Ayrshire cows are giving rich, hay-fed raw milk. It’s washed with Barr Hill Gin from Caledonia Spirits. Jasper Creek
Jasper creek paired down door wise. Smelled sweetly cellar rocks dustily keeping wine.
Barreled against the hillside under ‘neath the house.
Prose blocks stamping down the marble stairs, keeping an old bike for later.
Speckled freaks, sit on cells, spread out across the valley.
Thunder rolling in from the north-west like it always does. Predictable.
We were seventeen. Sling-shotting rocks across the road from up on the hill.
Banging out shingles, with big knocks.
Spritle slender and tall, staging through the breeze.
Over casting nibbled deer bones, up by the big white rock that marks the top of the hill
before the mountains claim the rest of your range of sight.
Stepping back and looking up against the sky. Keep going. Map out where this trail goes.
Takes you back into cool shade between the mountain arms.
Cut away with a sweet spring, creeking through the cracks, leaving a peaceful gurgle on your ears,
while wandering up the trail again.
It must never end, although the trail head is always familiar. There’s so much more to see. And I wonder where it goes.
Must be more after, above the oily black rocks sticking out dripping.
But lunch over cliffs, skiing rock slides in hiking boots and soccer shin guards. Keeps it real.
And sundown brings us home.
