I just popped this into my usual compact VapMod which only has 2.8, 3.2, 3.6, and 4.0V and that tasted Rough. But i switched it over to my UniPro turned it down to 2.6V and it's a lot better.

I think I'm just confusing myself reading the news out of order, so I want to make sure. Is the Pristine Cut coming to consoles digitally at the same time (ish) as PC? Or is the console release later? I know the PHYSICAL release is later, the digital is where I'm confused.

You're reading things right. The digital console release of Slay the Princess is going to simultaneously ship with the Pristine Cut update on PC. Both console players and PC players will get to play the new content at the same time, as will folks playing with localized subtitles. It's likely that PC will get get earlier/more aggressive patches for any bugfixes, but this is because consoles have a review period for patches while Steam lets us upload a fix at our own discretion. The physical versions of Slay the Princess — The Pristine Cut, will be shipping months after the digital release so we can make sure they contain any bug fixes AND so they can ship with localized subtitles on disc/cartridge, so that even if you don't have internet to download a patch, you'll still be able to play the game bug-free in your preferred language.
