Coconut Lavender Tartlets Recipe

Ingredients:

For the Tart Shells:

1 1/4 cups all-purpose flour

1/2 cup powdered sugar

1/4 teaspoon salt

1/2 cup (1 stick) unsalted butter, cold and cubed

1-2 tablespoons ice water

For the Coconut Custard:

1 cup coconut milk

1/4 cup granulated sugar

2 tablespoons cornstarch

1 teaspoon vanilla extract

1/2 teaspoon lavender extract (or a few fresh lavender buds, finely crushed)

For the Whipped Coconut Cream:

1 can (14 ounces) coconut cream, chilled overnight

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

For Garnish:

Toasted coconut flakes

Lavender buds

Powdered sugar for dusting

Instructions:

Make the Tart Shells:

In a food processor, combine flour, powdered sugar, and salt. Pulse to mix.

Add the cold butter and pulse until the mixture resembles coarse crumbs.

Add ice water 1 tablespoon at a time, pulsing until the dough starts to come together.

Press the dough into tartlet molds and prick the bottom with a fork.

Chill for 30 minutes, then bake at 350°F (175°C) for 20 minutes or until golden. Let cool completely.

Prepare the Coconut Custard:

Whisk together sugar and cornstarch in a saucepan.

Gradually whisk in coconut milk, ensuring no lumps form.

Cook over medium heat, whisking constantly until the mixture thickens and comes to a boil.

Remove from heat and stir in vanilla and lavender extracts. Allow to cool slightly before pouring into the cooled tart shells. Chill until set.

Make the Whipped Coconut Cream:

Scoop out the solidified coconut cream from the chilled can, leaving any liquid behind.

Whip the coconut cream with powdered sugar and vanilla extract until soft peaks form.

Assemble the Tartlets:

Once the custard is set, spoon or pipe the whipped coconut cream onto each tartlet.

Garnish with toasted coconut flakes, lavender buds, and a dusting of powdered sugar.

Serve:

Allow the tartlets to sit at room temperature for a few minutes before serving for the best flavor and texture.

I had to run some business errands today and decided to treat myself to ice cream. While there, I noticed the guy behind the counter—tall, tough looking guy with cool piercings and tattoos—was wearing what I thought looked like a Kingdom Hearts pendant. The only thing is that he didn't really look like the kind of guy who would be into the Mickey Mouse Anime game and the pendant was Roxas', which if you're not familiar with it, is really just a pointy X. It's basic enough that I could imagine it being a design in any sort of alternative fashion or even maybe a guy who just really thinks ninjas are cool (could be a shuriken). And I'm a timid person IRL, right? Like, too nervous to speak up when the Subway guy mishears me and gets my order wrong timid. But it's a really cool pendant, and I had the same one in high school, andddd at this point, while I'm standing in line, my curiosity is mounting and more than missing out on complimenting someone, I know the question will bug me if I don't ask.

Still debating when I get up to the counter, thinking how awkward it would be if I'm wrong or if the guy just is Not in the mood for chitchatting to customers... The guy ended up sounding really chipper and open and I figure oh, fine, why not. At best, I'm right and I can give someone a compliment over something I think is fun, and at worst, I'm wrong and maybe he gets a laugh anyway. So I tell him I like his pendant and ask if he's a Kingdom Hearts fan, and ohhh my stars LOL.

I have never seen a man jump so high or get so excited so fast. Like this dude went from Customer Service Friendly to jumping away from the counter yelling to his coworker "SHE KNOOOOWS, BRO!!! SHE KNEEEEEW!!!!!" and gjskgjdkfndk it was so delightful to see someone get so happy. Then when he gave me my ice cream he told me that I deserved the world and tbh that made my whole day.

Soooo moral of the story is it's nice to compliment people if you think they're cool or whatever. Just go for it. I think that people tend to appreciate it. That was a 11/10 ice cream experience. I hope that guy is living his best Simple and Clean life and has a good week. Highkey kinda sad we will probably never meet again bc I would have loved to talk to him about KH.

i popped into fulham's stream last night and saw you in fulham's chat at 1am...what da hell !!!!! again. too mf shy to say hi but uh. just know i badly wanted to. i woke up today absolutely hammered with sleep deprivation cause my parent woke me up too early so i guess i got slammed with consequences Sadge.

never worry about traumadumping about acads. im being compketely honest here when i say that if most SG students were to describe their experiences in school, it would 100% be met with disbelief at best and horror at worst from people overseas. compared to the rest of the world, believe me when i say our syllabus is insane. cheers for SG ... yay....MOE sleep with one eye open tonight. i hope you make some new friends soon! life would suck without em. talking to people is hard, but its unfortunately the first step in making friends. i wish you all the best :D

ill do my best for the BAC stream, but thibgs are just getting hectic again for me, help save me...... opened twitch (i dont have notifs on) yesterday and i was immediately stricken with grief as i found out fucking. 21mustard had ended stream JUST A FEW HOURS PRIOR. i wanted to bash my head into the nearest wall. it was fine though i just played it in the background as i did my workout. but i almost dropped my weights when i looked over and saw him buidling the most atrocious troll face i had ever seen in my life. that would have been bad, because i was holding 12.5kg dumbbells at the time. if i did drop them, i wouldnt have a foot anymore. on the bright side, i watched as he proceeded to lose the 2 matches he played against emerald. that was uh. yeah. gotta love white boy against white boy violence

alright. people in my asks may slaughter me. INTERNET HOT TAKES.. pineapple on pizza is good, I put milk before cereal, I prefer waffles over pancakes despite eating pancakes all my life. I like the saltiness of the pizza and the sweetness of the pineapple, I also eat my chips (CRISPS I DONT GAF) with ketchup sometimes. same as you, waffle irons are expensive, so I've eaten pancakes since I was little. but ohhh if I were rewarded with bacon and waffles if I got an A for math??
