cheapest bean soup!
i made a bean soup in my instant pot when i wasn't sure how i was gonna afford lunches for the next week, it was so cheap!
2 cups (1 lb) of 13 bean mix- ~$1.50 from the bulk section at my winco, probably around the same if you found it in a package, honestly any beans would probably do, they all get kinda samey in a soup like this.
1/2 jar pasta sauce- ~$1.25 for the entire jar
1 small diced onion- $0.50
around 6-7 cups water (i just filled my instant pot until i was worried it might overflow, your mileage may vary)
seasonings (i can't really tell you what i used because i just kinda intuitively added stuff. cumin and oregano and garlic were definitely in there, as well as a kimchi seasoning and a korean bbq seasoning so idk, whats in your cupboard?)
I've been eating on it for 3 days and so far I've had it for dinner alone once, lunch three times, and made lazy nachos with it last night to serve 2, and i still have 2 or three servings left.
granted, I had a little more than $3.25 in my bank account when I went shopping, so I was able to get crumbled bacon and greek yogurt to put on top, as well as a big bag of corn chips to have on the side, and that has much improved the whole experience, but if I was really struggling, I could live on this stuff with maybe just a bag of fritos every once in a while and some cereal and milk in the morning.
this could also be made without an instant pot, but i believe it might require some soaking and a much longer cook time. benefit: it made the house smell delicious.

If there's any advice I could give people on a smaller food budget, its where possible, invest in sauces and seasonings or make your own.
(There are tons of low-cost, high-output recipes for making your own sauces, dried powders, growing your own herbs in small pots indoors, ect.)
I've been in situations before where I've been eating cheap packets of instant ramen for dinner five days out of seven, and it was so, so much more tolerable when I was able to change the flavor instead of eating the same basic, pretty bland chicken one over and over.
I could made herby, garlicky ramen one night, sweet chili another, ect.
I'm pretty lucky in that where I live things like jars of sauces and pots of seasonings are very cheap, and I know its not like that for everyone, but if you are in a situation where you can spare a little for some pots or jars, it really can make a difference to being able to tolerate food repetition.

🥬 Celery Soup
Ingredients:
🫒 Olive Oil
🧄 As many Garlic Cloves as you want.
🥬 1 Bundle/Bunch of Celery, Chopped.
🥔 2-3 Large Potatoes, Diced.
🍲 5 cups/ 1 liter of Veggie Broth
🥛¼ cup/ 60 ml of milk
Equipment:
🍲 Large Pot
🔪 Knife and cutting board
🌪️ Hand Blender/ blender
Heat Olive Oil in a large pot. Add in the whole Garlic Cloves until golden brown.
Add chopped Celery and diced potatoes, adding in a bit of water to the bottom of the bot to avoid burning. Cover with a lid, stir occasionally, and add water as needed for 15 minutes or until ingredients are softened.
Add veggie broth to the pot, bring it up to a boil, and let simmer for a good 15-20 minutes to let the flavors get to know each other. This is the best time to add whatever seasonings you want.
Carefully use your hand blender and puree the soup. If using a regular blender, carefully pour contents of the pot into the blender and puree. Add milk or milk substitute* to the puree and blend again.
Serve hot with your choice of toasted Bread. (I tend to make Focaccia Rosemary bread to go with it.)
Notes and Substitute recommendations:
🥛: Milk is used to help thicken this soup. For a milk substitute, I'd recommend either coconut milk, a cornstarch/water mix or just simply adding another potato to either help thicken the soup, make it vegan, or to avoid allergies/intolerances.
🍲 This is one of those soups you can easily just eyeball the amounts rather than measuring, and you can easily make a lot of it. It stores pretty well too. Easily one of my favorite comfort foods.

Have you ever had those times when you just didn't know what to eat or cook, like you're drawing a mad blank on what you have a taste for, and then all of a sudden...you see something and it clicks! With my creative 🧠, I made smothered sweet potatoes, and the end results were perfection; it was so good, my picky eater 5 year old, helped me eat it.
Ingredients;
1 Lg Sweet potato, cleaned.
2 Tbs Minced garlic
1/2 purple onion, sliced.
Portobello mushrooms, sliced.
3 Kale leaves, roughly chopped.
Salt
Pepper
Chili powder
Onion powder
Garlic powder
3 Tbs Coconut aminosKale.
Vegan butter
1/3c Full fat, coconut milk
Vegan parmesan
Extra virgin olive oil
Directions:
Start by heating your cast iron skillet, then lower the heat to medium-low, and add a couple tablespoons of EVOO to your skillet. Now, clean, dry, and slice your sweet potato, long ways, down the middle; add your sliced sweet potato to the hot skillet, orange side down and cover for 55 minutes.
In a separate heated skillet on medium heat, add a few tablespoons of EVOO, and add your sliced onions. Cook onions until translucent, then add your garlic, sliced mushrooms, and chopped kale. Add 2 tableapoon of vegan butter. Slightly toss around, cover, turn heat to medium-low, and leave alone for 10-15 minutes.
Now, uncover your sweet potato, and flip it halfway through your time. Now, cook it skin side down the rest of the way. Add a pinch of pink salt to the potato and cover again. With your veggies, uncover,l and add your coconut aminos and seasonings, then stir them around until the aminos and seasonings are incorporated. Now, add your coconut milk and gently stir in.
Uncover your potatoes and double-check for tenderness. You can use your knife or toothpick; if it goes in easy and comes out clean, then they're tender and done. Plate your potatoes and add your creamy veggie sauce on top and sprinkle the vegan parm on top to your desire.
Grab you a plate, dig in, and enjoy!

A trifle consists of both soft and crunchy layers put on top of each other in a glass or ceramic cup for serving. For this recipe you can switch things up for dietry requirements/preferences. The traditional English food trifle is a layered which contains custard, sponge fingers, sherry soaked cake, fruit, jam and whipped cream.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 50g (2 oz) chocolate flavour Angel Delight
• 300ml (1/2 pt) semi-skimmed milk
• 200g (7 oz) brownies (you can make the brownies yourself or shop buy)
• 400g (2/3 pt) double cream
• 100g (4 oz) chocolate
𝙈𝙚𝙩𝙝𝙤𝙙
1) In a bowl, prepare the Angel Delight pudding according to package instructions using the milk.
2) Whip the cream in another bowl until soft peaks form.
3) Crush the chocolate into small pieces and place in another bowl. 
4) Crumble the brownies into a large bowl.
5) You are now ready to assemble the trifle. Ideally, you should use portion sized jars or containers. 
6) Start layering the pudding by placing the brownies in the base, followed by a layer of chocolate pudding, and cream. 
7) Repeat the process by adding as many layers as you can and top with chocolate when the container is full.
Just to note - Angel Delight is a well known brand for chocolate pudding but shops stock their own no name brand as well!
If you don’t have time to prepare your own brownies, you can also consider using cookies, sponge fingers, waffles, wafers etc. Whether it be chocolate or golden vanilla cookies, they’ll both taste great!
𝙎𝙪𝙗𝙨𝙩𝙞𝙩𝙪𝙩𝙚𝙨 𝙛𝙤𝙧 𝙬𝙝𝙞𝙥𝙥𝙚𝙙 𝙘𝙧𝙚𝙖𝙢 𝙞𝙛 𝙮𝙤𝙪 𝙙𝙤𝙣'𝙩 𝙡𝙞𝙠𝙚 𝙞𝙩:
• Mascarpone – this would almost make your dish tiramisu-like. Just need a bit of coffee
• Cream Cheese – your dish would be like a cheesecake in a cup. Simply delicious!
• Crème Fraiche – with acidity, it will cut through the richness of the chocolate. Great with fruit
•Vanilla, caramel or chocolate pudding – just reuse the pudding if you are fan of the Angel Delight
• Fruit coulis – can use these to make your dish lighter, less intense on the calorie count.
• Caramel – rich, intense flavour that will add an extra something
